2 ripe avocados, halved and pitted
½ small onion, minced
1 tablespoon fresh lime juice
1 jalapeno pepper, seeded and minced
2 tablespoons chopped fresh cilantro
1 clove garlic, minced
½ teaspoon kosher salt
freshly ground black pepper to taste
1 Roma tomato, finely chopped
4 slices Texas toast
4 slices Havarti cheese
2 teaspoons butter, or to taste

Steps:

  • Mash avocados in a large bowl. Add onion, lime juice, jalapeno, cilantro, garlic, salt, and pepper. Mix until well combined. Stir tomato into the guacamole.
  • Spread desired amount of guacamole over 2 bread slices; top each with 2 slices Havarti cheese. Cover with the remaining 2 slices bread; butter the outsides.
  • Heat a skillet to medium-high heat. Cook sandwiches until golden brown on the bottom, 2 to 3 minutes. Flip and cook until other side is browned, 2 to 3 minutes more.

2 sticks unsalted butter, at room temperature
8 cloves garlic, pureed
Salt and freshly ground pepper
2 loaves good white bread, cut into 1-inch thick slices

Steps:

  • Mix together the butter and garlic in a bowl and season with salt and pepper to taste. Brush both sides of the bread with the butter and place on the grill. Grill the bread for 1 to 2 minutes per side until lightly golden brown.

6 slices fresh thick-sliced Texas toast (BBQ sliced bread)
Kosher salt and freshly ground black pepper

Steps:

  • Warm a griddle or nonstick pan over medium-high heat. Then add 1 tablespoon butter until warmed. Next, add the bread in batches to the griddle and allow to brown or crisp on the first side, 1 to 2 minutes. After browning, flip the bread and repeat the process on the second side. Season with salt and pepper. Remove after browning and serve.

2 ounces extra-virgin olive oil
2 cloves garlic, minced
4 to 5 sprigs fresh cilantro
5 to 6 sprigs fresh thyme
2 to 3 sprigs fresh rosemary
2 to 3 sprigs fresh oregano
2 tablespoons Creole seasoning blend

Steps:

  • Marinate the quail in olive oil, garlic and fresh herbs in the refrigerator overnight.
  • Remove from the refrigerator and sprinkle Creole seasoning blend on both sides. Grill on high heat over mesquite wood until done (about 4 to 5 minutes per side).

2 tablespoons spicy brown mustard (recommended: Gulden's)
1/4 cup mesquite grilling sauce (recommended: McCormick's Grill Mates)
1/4 cup real bacon pieces (recommended: Hormel)
5 slices center cut bacon (recommended: Oscar Mayer)

Steps:

  • Set up grill for direct cooking over medium heat.
  • In a bowl, stir to combine beans, mustard, mesquite sauce and bacon pieces.
  • Pour bean mixture into 8-inch cast iron skillet. Cover beans with bacon slices. Cook on covered grill for 30 minutes.
  • INDOOR: Preheat oven to 350 degrees F. Prepare beans as directed and pour into a 2-quart oven proof casserole. Bake in oven 35 to 40 minutes or until beans have thickened and are bubbling.

SOUTH TEXAS BARBECUED DUCK



South Texas Barbecued Duck image

This is a remarkably straightforward way of cooking a duck and results in powerfully smoky and salty-sweet meat. The recipe came to The Times in 2015 via the San Antonio chef Quealy Watson, who cooked it in a smoker filled with small logs of mesquite. You could make do with a grill if you kept one side of it entirely free of coals and placed the duck away from the flames. Straight kosher salt and freshly ground black pepper can be used in place of the Lawry's.

1 teaspoon ground cinnamon
1 tablespoon ground coriander
2 tablespoons ground cumin
1 tablespoon ground black pepper
2 tablespoons Lawry's seasoned salt
1 4-to-6-pound duck

Steps:

  • Light a charcoal grill or smoker, or heat oven to 250.
  • Make a dry rub by combining the cinnamon, coriander, cumin, black pepper and seasoned salt in a small bowl. Season the duck aggressively with the rub, applying it all over the body, inside and out.
  • If smoking, place the duck on the smoker and cover, keeping the heat around 220 to 250. If grilling, move coals to one side of the grill and place duck on the other, away from the direct flame, then cover the grill. If oven-roasting, place duck in a roasting pan, and put in the oven.
  • Cook the duck for 2 hours or so, until it has taken on some color, then remove from the heat, and place on a large sheet of aluminum foil. Wrap the duck in the foil, using another sheet if necessary.
  • Place the wrapped duck in a clean roasting pan, and put in the oven to continue cooking for 2 or 3 more hours, until the meat is tender and pulls away from the bone. Serve with tortillas and salsas.
