1 large pineapple, (peeled, cored, and cut into wedges)
¾ cup tequila
½ cup chopped fresh cilantro
⅓ cup light brown sugar
¼ teaspoon paprika
¼ teaspoon chili powder

Steps:

  • Preheat the grill to medium heat.
  • Cut the pineapple wedges into about 2x2 cubes.
  • Thread the pineapple pieces onto the bamboo skewers; you'll need 6 to 8 skewers. Set aside.
  • In a mixing bowl combine tequila, cilantro, brown sugar, paprika, and chili powder; whisk until completely combined.
  • Brush the grill grates with a little bit of oil.
  • Put the pineapple skewers on the grill and start to brush and baste the pineapples all over with the tequila mixture.Cook for 10 minutes, turning and basting from time to time.
  • Remove skewers from grill.
  • Serve.

GRILLED PINEAPPLE RINGLETTE WITH TEQUILA LIME SAUCE

1 cup cubed pineapple
1 cup brown sugar
1 tablespoon lime juice
1 1/3 cups nonfat yogurt
1 teaspoon coconut, shredded and toasted
4 pineapple rings, in juice

Steps:

  • Place all of the ingredients, except coconut and pineapple rings, in blender and blend until smooth.
  • Freeze the bowl of an ice cream maker according to instructions. Or pour into a covered freezer proof container and place in the freezer. Stir to break-up ice with a fork after the first 30 minutes in the freezer.
  • Grill the pineapple rings until golden. Refrigerate until cold. Place a scoop of the sorbet centered on the ring and sprinkle with toasted coconut and put in the freezer for 15 minutes. Serve with Tequila Lime Sauce.

  • Tequila Lime Sauce:
  • 1 ounce tequila
  • 2 tablespoons lime juice
  • 2 tablespoons orange juice
  • 1 cup nonfat yogurt
  • 1 teaspoon lime zest
  • 1 teaspoon orange zest
  • 1 teaspoon brown sugar
  • Place all of the ingredients into a bowl and mix well. Place in a sealable container in the refrigerator until needed.

1/2 cup red wine vinegar
2 tablespoons sugar
1 tablespoon kosher salt
2 cups shredded red cabbage
1 cup fresh cilantro leaves, chopped
3 tablespoons tequila
3 teaspoons ground cumin
2 teaspoons minced garlic
Juice of 1 lime
Kosher salt and freshly cracked black pepper
Four 6- to 8-ounce boneless, skinless mahi mahi fillets (or other firm white fish)
Oil, for cooking
Sixteen 6- to 7-inch soft flour tortillas
1 cup Cilantro Lime Crema, recipe follows
2 cups crumbled Cotija cheese
Hot sauce, for garnish, if desired
2 limes, cut into wedges
8 ounces sour cream
1/4 cup milk
2 tablespoons finely chopped cilantro
1/2 teaspoon ground cumin
2 limes, juiced
Kosher salt and freshly cracked black pepper

Steps:

  • For the cabbage: In a large mixing bowl, combine the vinegar, sugar and salt and mix together well. Add the cabbage and stir to coat everything evenly. Allow to marinate for 15 minutes. Fold in the cilantro and set aside until ready to use.
  • For the fish marinade: In a large mixing bowl, combine the tequila, cumin, garlic, lime juice and some salt and pepper. Portion the fish into 1-inch cubes and add to the marinade. Set aside to marinate for 4 to 5 minutes.
  • To cook the fish: Heat a flat top grill to high and coat with a little oil. Skewer 4 to 5 pieces of fish on each skewer. Place the skewers on the grill and cook until the fish is white and cooked through, about 1 minute on each side and about 4 minutes total. Remove the skewers and allow to rest.
  • Warm the tortillas in batches on the grill for about 2 minutes on each side. Remove the tortillas to a towel-lined foil pouch and cover loosely to keep warm.
  • To build the tacos, drizzle a little Cilantro Lime Crema on a tortilla. Top with some strained red cabbage mixture and then place a skewer of fish on top. Slide out the skewer so the fish stays on the taco, and then finish with more lime crema. Garnish with some crumbled Cotija and hot sauce and serve with a wedge of lime on the side. Repeat with the remaining ingredients.
  • In a small bowl, combine the sour cream, milk, cilantro, garlic, cumin and lime juice and chill for 1 hour. Season with salt and pepper.

1 large pineapple, peeled, cored, cut into 2x1-inch pieces
6 bamboo skewers, soaked in water 30 minutes, drained

Steps:

  • Stir first 4 ingredients in small bowl until sugar dissolves. Thread pineapple pieces onto 6 skewers, dividing equally. (Tequila mixture and pineapple skewers can be made 8 hours ahead. Cover separately and chill.)
  • Prepare barbecue (medium heat). Grill pineapple until brown, basting with tequila mixture and turning occasionally, about 10 minutes total. Remove pineapple from skewers; serve hot or warm.
