1/3 cup chopped fresh tarragon
1/4 cup Dijon mustard
1/4 cup dry white wine
1 tablespoon olive oil
1 tablespoon honey
2 chickens (each about 3 1/4 pounds), each cut into 2 legs, thighs and wings and 4 breast pieces

Steps:

  • Combine first 5 ingredients in processor. Process until smooth. Place chicken pieces in 15x10x2-inch glass baking dish. Sprinkle chicken with salt and pepper. Pour tarragon-mustard mixture over chicken; toss to coat. Let stand at room temperature 1 hour or refrigerate 2 to 4 hours, turning occasionally.
  • Prepare barbecue (medium heat). Place chicken on barbecue. Cover and grill until chicken is almost cooked through, turning every 5 minutes and basting with marinade, about 30 minutes. Grill without basting until chicken is cooked through, about 7 minutes longer. Serve chicken hot, warm, or at room temperature.

These grilled chicken skewers are gently spiced with a ginger-and-cumin yogurt marinade, which makes the meat exceedingly tender and cooks to fragrant curds. As they grill, the skewers are gilded with a tarragon-mint baste that tastes distinctly Persian. Restraint and a very hot grill are both key to getting a good char: Don't move the skewers until the yogurt is burnished and the meat releases from the grates. Color is flavor. Catch any juices that run out of the cooked skewers with warm pita bread. Leftovers make excellent chicken salad.

2 1/2 pounds boneless, skinless chicken thighs
2 teaspoons kosher salt
8 scallions, trimmed
6 pita breads
2 1/2 cups full-fat Greek yogurt
1/4 cup fresh lime juice (from 2 limes)
1 tablespoon extra-virgin olive oil
2 1/2 teaspoons kosher salt
1 garlic clove, crushed
1 (2-inch) piece fresh ginger, peeled and finely grated
2 teaspoons roasted cumin seeds, bruised using a mortar and pestle
1/4 cup unsalted butter (1/2 stick)
1/4 teaspoon kosher salt
2 tablespoons fresh lime juice (from 1 lime), plus 4 lime wedges for serving
1/4 cup chopped fresh tarragon, mint or both, plus more torn herbs for serving

Steps:

  • Prepare the chicken: Cut each thigh in half against the grain. Rub with salt and set aside.
  • Prepare the marinade: In a small bowl, mix the yogurt, lime juice, olive oil, salt and garlic. Reserve and refrigerate 1 cup marinade for serving. Put remaining marinade into a large resealable plastic bag and add the ginger, cumin and chicken; squelch around to coat thoroughly then refrigerate for 1 hour, or up to 48 hours.
  • Remove the chicken from the refrigerator 1 hour before you plan to grill. If using wooden skewers, immerse them in water to soak for 15 minutes. Alternatively, use metal skewers or none at all.
  • Prepare the grill: Clean the grate thoroughly and build a hot fire. The skewers will cook over intense, direct heat. The coals are ready when they glow red and the grate hisses when you drop water on it.
  • Thread the chicken lengthwise onto skewers (if using), then smear with the marinade from the bag.
  • Prepare the baste: Place the butter and salt in a small saucepan to melt on the cooler side of the grill (or use the stovetop). Once butter is melted, add the lime juice and chopped herbs; keep warm but do not boil.
  • Grilling in batches if necessary, place the chicken on the grill a few inches apart. When you see a good char forming underneath, about 3 to 5 minutes, gently tug a skewer or the chicken: If it feels very stuck, leave it a few more minutes before turning. When the chicken releases easily and looks nicely charred in places, flip it using a fish spatula to gently pry any stuck bits off the grate.
  • Baste the chicken with the herb butter and arrange the scallions in a single layer on the cooler edges of the grill. Let the chicken cook on the second side until firm and cooked through and turn the scallions occasionally until grill-marked and tender, about 8 minutes.
  • Grill the pitas until marked, about 1 minute, turning halfway through. Lay them on the serving platter and place the scallions and chicken on top. Drizzle the bread, scallions and chicken with any remaining warm herb butter. Dollop chicken with reserved marinade, squeeze with lime and top with extra tarragon or mint.

2 boneless chicken breast halves with skin
1 3/4 cups chopped tomato with seeds (about 1 large tomato)
2 teaspoons balsamic vinegar
Fresh tarragon sprigs (optional)

Steps:

  • Prepare barbecue (medium-high heat). Whisk 2 tablespoons tarragon, 1 1/2 tablespoons oil and 1 teaspoon garlic in shallow dish to blend. Using rolling pin, lightly pound chicken between sheets of waxed paper to uniform 1/2-inch thickness. Sprinkle chicken with salt and pepper. Add chicken to tarragon mixture and turn to coat. Let stand 10 minutes.
  • Meanwhile, blend tomato and remaining 1 tablespoon oil in processor until smooth. Add vinegar, remaining 1 tablespoon tarragon and remaining 1/4 teaspoon garlic and just mix in, using on/off turns. Season sauce to taste with salt and pepper.
  • Grill chicken until brown and cooked through, about 4 minutes per side. Transfer chicken to plates. Spoon sauce around chicken. Garnish with tarragon sprigs, if desired, and serve.

½ cup lemon juice
¼ cup olive oil
4 cloves garlic, minced
1 tablespoon crushed red pepper flakes, or to taste
3 (6 ounce) skinless boneless chicken breasts
½ cup sour cream
½ cup reduced-fat mayonnaise
¼ cup rice vinegar or cider vinegar
¼ cup fresh lemon juice
1 cup seedless red grapes, halved
1 large Granny Smith apple, cored and chopped
½ cup celery, diced
½ onion, finely chopped
½ cup fresh tarragon, finely chopped
2 teaspoons finely chopped fresh dill
salt and pepper to taste

Steps:

  • To make the marinade, mix 1/2 cup lemon juice, olive oil, garlic, and red pepper flakes together in a bowl.
  • Place the chicken breasts on a flat surface, and cut from one side through the middle of the breasts to within one half inch of the other side. Open the two sides and spread them out flat like an open book. Place in a shallow dish, and pour the olive oil mixture over the chicken, turning once to coat evenly with marinade. Refrigerate for at least 30 minutes.
  • To make the dressing, mix the sour cream, mayonnaise, vinegar, and 1/4 cup lemon juice together in a bowl, and blend thoroughly. Set aside.
  • Preheat an outdoor grill for medium-high heat. Lightly oil grill grate, and place about 4 inches from heat source.
  • Remove chicken from marinade, and discard marinade. Cook chicken on preheated grill, turning once, until meat is firm, and juices run clear, about 4 to 5 minutes per side. Remove chicken from grill, and cool. Finely chop chicken, and place in a large bowl.
  • Add the grapes, apples, celery, tarragon, and dill to the bowl with the chicken. Stir in the mayonnaise dressing, and toss until ingredients are evenly coated. Season to taste with salt and pepper. Serve immediately, or refrigerate overnight to let flavors blend further.

  • Blend first 3 ingredients in bowl; season mayonnaise with salt and pepper.
  • Using meat mallet, flatten chicken breast halves in plastic bag to 1/2-inch thickness; cut chicken crosswise in half. Place on sheet of foil. Brush chicken with 1 tablespoon oil; sprinkle with half of garlic, then salt and pepper.
  • Place zucchini and onion slices on sheet of foil and brush with remaining 2 tablespoons oil; sprinkle with remaining garlic, then salt and pepper.
  • Prepare barbecue (medium-high heat). Grill chicken pieces until cooked through, about 5 minutes per side; transfer to work surface. Grill vegetables until softened slightly and charred, about 7 minutes per side for onion and 5 minutes per side for zucchini. Transfer to work surface.

1 tsp. Dijon mustard
1¾ tsp., salt
fresh ground pepper
⅔ cup olive oil
2 shallots, minced
3 Tbs. chopped fresh tarragon
1½ lb. boneless, skinless chicken breasts
¾ lb. bow ties
1 lb. tomatoes, about 2, seeded and diced, or 1 lb. cherry tomatoes, halved

Steps:

  • In a large bowl, whisk the vinegar with the mustard, 1 1/2 tsp. salt and 1/4 tsp. pepper. Add the oil slowly, whisking. Add the shallots and 2 Tbs. of the tarragon. Light the grill. Season the chicken breasts with the remaining 1/4 tsp. salt and a pinch of pepper. Grill 3 to 6 inches from the heat until just done, about 5 minutes per side. (Or you can broil the chicken.) Cut into thin slices across the grain. Add the warm chicken to the dressing. Cook the pasta in boiling, salted water until just done, about 15 minutes. Drain, rinse with cold water and drain thoroughly. Toss with the chicken. Just before serving, add the tomatoes and the remaining 1 Tbs. tarragon.

I prepare this dish inside on my stovetop gas grill in winter and outdoors on my gas orcharcoal grill in summer. Make sure your grill is very clean, or the chicken will stick. The bird is grilled long enough so that most of the fat in the skin drains away, and it is then transferred to a warm oven to finish cooking in its own juices. A delicious tarragon butter, dotted on the chicken at serving time, replicates the flavor of a bearnaise sauce.

1 Tbs. Ground New Mexico chiles
1 tsp. Ground cumin
1 Tbs. Black pepper

1 ea. Lemon, sliced
7 or 8 sprigs Fresh Tarragon

  • 1) Lay the chicken flat in a non-reactive pan. Season well with the spices on both sides. Brush with oil. Lightly mash the citrus slices and lay them on the chicken. Cover and let set for a few hours or overnight. 2) Pre heat grill. Cook wings, thighs, and drumsticks with low heat until tender. Good slow cooking off the heat can last an hour or more for these parts of a bird. If using charcoal, you'll get a little of a smoked flavor. 3) Grill breasts. Serve.

4 chicken breasts
1/4 cup tarragon, chopped
2 garlic, gloves minced
1 tablespoon lemon juice
1 bunch medium asparagus, trimmed
1 lb green beans, picked
1 cup sweet peas
1 large fennel bulb, julienned
2 pints cherry tomatoes, halved
2 lemons, zested and quartered
1/2 cup olive oil
4 tablespoons sherry vinaigrette
1/4 teaspoon salt and pepper, to taste
1/2 cup dried edamame seeds

Steps:

  • Take tarragon, garlic, lemon, juice and 1/4 cup extra virgin olive oil and blend in a food processor.
  • Trim chicken and place in a pan and cover with tarragon marinade, cover and chill for 20 minutes.
  • Grill chicken. Set aside to cool while making salad.
  • In a large pot, boil 3 quarts of water. When boiling add the lemon (reserve zest) then add fennel. Cook for 4 minutes or until tender. Remove fennel with a hand strainer into an ice water bath, leaving lemon behind.
  • Follow the same method with green beans and asparagus. They all cook at different temperatures and you need to cook at least 4 minutes. After each minute check crispness until finished. Refresh ice bath each time.
  • Reserve poached vegetables on a paper towel to dry while making warm vinaigrette.
  • In a large sauté pan add rest of oil and sherry vinegar. Cook on medium high till hot then add tomatoes and peas. Sauté till tomatoes start to break down then immediately remove.
  • Place vegetables in a large bowl then pour vinaigrette over and toss. Place on 4 plates or bowls.
  • Slice chicken on the bias and place each sliced breast on salads and garnish with dried edamame seeds.

1/4 cup (packed) fresh Italian parsley leaves
4 tablespoons pine nuts, divided
5 teaspoons fresh lemon juice, divided
2 teaspoons chopped shallot
6 tablespoons (or more) olive oil, divided, plus additional for brushing
4 boneless chicken breast halves
4 1/2-inch-thick slices country-style French or sourdough bread
1 5-ounce package mixed baby greens
1 cup thinly sliced radishes (from 1 large bunch)
1 cup thinly sliced Japanese cucumbers (about 1 1/2)
