1/4 cup rice wine vinegar
1/4 cup chopped fresh basil leaves
1 teaspoon sugar
Salt
Freshly ground black pepper
1/2 cup extra-virgin olive oil
8 ears corn, grilled in the husk, kernels removed
1 sweet onion (such as Vidalia or Walla Walla), halved and thinly sliced
1 pint Sweet 100 tomatoes or cherry tomatoes, halved
8 ounces blue cheese, crumbled
Fresh basil sprigs, for garnish

Steps:

  • Combine the vinegar, basil, sugar, 1/2 teaspoon of salt, 1/4 teaspoon of pepper and oil in a blender and blend until smooth. Can be made 2 hours in advance and refrigerated. Bring to room temperature before using.
  • Combine the corn kernels, onion and tomato in a large bowl. Add the dressing and toss to coat, season with salt and pepper. Let sit at room temperature 30 minutes before serving. Top with crumbled blue cheese and garnish with basil sprigs just before serving. Salad can be made 1 day in advance and served cold or at room temperature.

Steps:

  • Gently peel husks back to within 2 inches of the base.
  • Remove silk and smooth husks back into place, completely covering kernels.
  • Fill a sink with ice water and soak corn for 30 minutes.
  • Drain and shake off excess water.
  • The cold water stop the sugars in the corn from turning to starch.
  • Preheat grill.
  • Generously oil the grill to prevent sticking.
  • Grill directly over medium to medium-hot coals 5 inches from the heat, turning occasionally, until tender-- 15 minutes.

12 ears of corn, husks and silk removed and blanched
1/2 cup olive oil, plus extra for brushing the corn
1/4 cup aged sherry vinegar
1 tablespoon Dijon mustard
1 garlic clove, minced
2 large red bell peppers, diced
1 large Vidalia onion, thinly sliced
4 ripe plum tomatoes, finely chopped
1 jalapeno pepper, finely chopped
1/4 cup finely chopped chives
Salt and pepper

Steps:

  • Preheat grill. Brush the blanched corn with oil and season with salt and pepper to taste. Grill until slightly charred on all sides, about 2 minutes. Remove from the grill and with a sharp knife, scrape the kernels into a medium bowl.
  • Combine the vinegar, mustard, and garlic in a large bowl and slowly whisk in the remaining 1/2 cup of olive oil until emulsified. Add the corn kernels, bell peppers, onion, tomatoes, jalapeno, and chives, and toss to coat with the dressing. Season with salt and pepper.

1/4 cup brown sugar
2 tablespoons ground cinnamon
1 whole smoked ham, sliced
1 (12-ounce) can pineapple chunks
Lettuce, for garnish
Sauteed Sweet Potatoes and Corn, recipe follows
Caramelized Apples, recipe follows
1 sweet potato
2 tablespoons olive oil
2 tablespoons fresh rosemary leaves, minced
2 ears corn
1 green bell pepper
1 red bell pepper
4 red apples, sliced into wedges
2 tablespoons butter
1/4 cup brown sugar

Steps:

  • Combine the brown sugar and cinnamon in a small bowl. Sprinkle the sugar mixture over the ham slices to coat all of the pieces. Heat a large grill pan over medium-high heat. Drain the pineapple chunks from the juice in the can. Add the ham and the pineapple chunks to the hot pan, and cook for approximately 20 minutes, or until the slices are golden brown. Reserve the liquid in the pan for the Sauteed Sweet Potatoes and Corn.
  • Serve over lettuce with the Sauteed Sweet Potatoes, Corn, and Caramelized Apples.
  • Bring a medium-sized pot of water to a boil. Peel and cut the sweet potato into small chunks. Add the sweet potato to the boiling water, and boil until tender. Drain the sweet potato into a colander. In the same pot, heat the olive oil over medium heat. Return the sweet potato to the pot, and add the rosemary. Saute until the sweet potato has developed nicely browned crusts on the cut sides, and then remove it to a large serving bowl.
  • In another medium-sized pot, place 2 ears of corn in just enough water to cover, and bring to a boil. Continue boiling until kernels are soft and tender. Meanwhile, slice the green and red peppers into 1/4-inch strips. Add the peppers to the pan with the liquid from the sauteed ham, and cook over medium-high heat. Slice the corn off the cob, and add it to the pan with the peppers. Continue sauteing until vegetables are crisp yet tender. Add the corn and pepper mixture to the bowl with the sweet potato, and toss gently until combined.
  • In a large pot, add the apples and enough water to cover. Bring to a boil and cook until apples are tender. Drain in a colander. To the same pot, add the butter and brown sugar, and return the apples. Over low heat, stir with a wooden spoon until the apples absorb the sugar and the butter has melted.

1 ½ tablespoons macadamia nut oil
½ cup melted butter
2 tablespoons minced garlic
1 teaspoon crushed rosemary
1 teaspoon rubbed sage
1 teaspoon dried basil
1 teaspoon dried thyme leaves
1 ½ teaspoons salt
1 ½ teaspoons pepper
½ cup grated Parmesan cheese

Steps:

  • Soak corn in cold water for 1 to 3 hours.
  • Stir together macadamia nut oil and melted butter in a bowl. Season with garlic, rosemary, sage, basil, thyme, salt, and pepper; stir in Parmesan cheese.
  • Drain corn and pat dry. Spread butter mixture evenly over each ear of corn, and place each piece on a square of aluminum foil. Tightly wrap each ear and puncture to allow excess steam to escape while grilling.
  • Preheat an outdoor grill for medium heat.

1 lemon
7 tablespoons extra virgin olive oil, divided

1 yellow bell pepper, diced
1/2 cup red onion, diced
2 garlic cloves, diced
3 tablespoons fresh parsley, chopped
4 tablespoons red wine vinegar
1 teaspoon salt, divided
1 teaspoon black pepper, divided

Steps:

  • Using vegetable peeler, peel lemon. In large shallow glass baking dish, place lemon peel strips and 2 tablespoons olive oil. Add chicken breast halves and marinate in refrigerator for at least two hours or up to overnight.
  • Bring a small saucepan of salted water to boil. Add corn kernels and simmer 1 minute. Drain and set aside.
  • Make relish by combining in large bowl the corn, red pepper dice, green pepper dice, yellow pepper dice, onion, garlic and parsley. Stir well to combine.
  • Add remaining 5 tablespoons olive oil and red wine vinegar. Season with 1/2 teaspoon salt and 1/2 teaspoon pepper.
  • Prepare grill.Place chicken breasts on grill and cook until golden brown on one side, about 5 minutes. Turn chicken breasts, season with remaining salt and pepper and return to grill.
  • Continue cooking until golden and cooked throughout, about 4 to 5 minutes more.

I toss zoodles (spiralized zucchini noodles) with sweet corn, grilled chicken, basil and sun-dried tomatoes for the perfect summer dish.

2 boneless skinless chicken breasts (about 1 1/2 pounds)
Grapeseed oil, for drizzling
Kosher salt and freshly ground black pepper
4 ears sweet corn, shucked
8 cups zucchini noodles (about 1 1/2 pounds)
3/4 cup thinly sliced oil-packed sun-dried tomatoes, drained
1/2 cup pitted kalamata olives, halved lengthwise
1/2 cup packed basil leaves, finely chopped, plus whole leaves for garnish
1/4 cup red wine vinegar
1/4 cup extra-virgin olive oil
1 tablespoon Dijon mustard
1 tablespoon honey
1/2 cup whole-milk ricotta

Steps:

  • Preheat a grill to about 400 degrees F and clean the grates or preheat a large grill pan over medium-high heat.
  • While the grill or grill pan preheats, place 1 of the chicken breasts in a resealable plastic bag and pound out to about 1/2 inch thick with a rolling pin or the flat side of a meat tenderizer. Remove and place on a rimmed baking sheet and repeat with the remaining chicken breast. Drizzle both sides of the chicken with grapeseed oil and liberally season with salt and pepper.
  • Grill the chicken until you see grill marks and the chicken bounces back when you press on it, 4 to 5 minutes per side. Grill the corn at the same time, turning occasionally, until charred and bright yellow, 8 to 10 minutes.
  • Meanwhile, combine the zoodles with the tomatoes, olives and chopped basil in a large bowl. Once the corn is cool enough to handle, cut off the kernels and add them to the bowl.
  • In a small bowl, whisk together the vinegar, olive oil, Dijon, honey, 1/2 teaspoon salt and 1/2 teaspoon pepper. Pour over the salad and toss. Taste for seasoning, adding more salt or pepper, if needed.
  • Thinly slice the chicken. Using tongs, pile the zoodle salad into a large shallow serving bowl, leaving behind any liquid in the bowl. Dollop with spoonfuls of ricotta, then top with the sliced chicken and a few basil leaves. Serve warm or at room temperature.

6 ears fresh corn, husked, silks removed (4-6 cups)
1/4 cup olive oil, divided (or veg. oil)
1/2 red bell pepper, seeds and ribs removed, finely chopped
3 tablespoons scallions, sliced thin
3 tablespoons fresh cilantro, chopped (or parsley)
3 tablespoons fresh lime juice
2 tablespoons maple syrup (or honey)
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon neely's barbeque seasoning (The Neely's Barbeque Seasoning)

Steps:

  • Heat the grill to medium high, or turn on the broiler. Brush the cobs evenly with 2 tbls. oil.
  • When grill is hot, grill corn for 7 minutes, using tongs to turn the cobs as needed for even cooking, until nicely charred on all sides.
  • Or you can broil the corn, turning as needed for even browning.
  • When the corn is cool enough to handle, use a sharp knife to strip the kernels from the cob and move them to a large bowl. Add the bell pepper, scallions, and cilantro(or parsley).
  • In a small bowl, whisk the remaining 2 tbls. oil with the lime juice, maple syrup, salt and pepper, and Neely's Barbecue Seasoning.
  • Pour the dressing over the corn mixture, tossing well to mix thoroughly and taste to adjust seasonings(adding more salt, pepper, or lime juice as desired).
  • Serve at room temperature. Enjoy!
  • Note:.
  • For an extra smoky flavor, grill the scallions until charred and soft, 3-4 minutes total, then finely chop.

10 ounces goat cheese, softened
1 lemon, zested

2 eggs 2 cups panko crumbs Salt
10 ounces baby greens 1/2 lemon, juiced

Steps:

  • Freshly ground black pepper Preheat grill to medium-high. Brush corn with 1 tablespoon olive oil and grill, turning often, until charred and tender, about 4 minutes. Set aside. In a medium bowl combine goat cheese, zest and parsley. Roll into 16 (1-inch) sized balls and put on a parchment-lined baking sheet. Freeze until firm, about 20 minutes.
  • In a large heavy-bottomed pot, add enough oil to reach 1/3 of the way up the sides. Heat oil to 360 degrees F. Whisk eggs in a small bowl and place panko crumbs on a plate. Dip cheese balls in the egg wash, then roll in the panko crumbs. In batches, carefully transfer balls into the hot oil and fry until golden, about 1 minute. Transfer to a paper-towel lined plate and season with salt immediately. Slice corn from cob and add to a serving bowl along with the baby greens. 1 tablespoon thinly sliced green onions, white part only (from about 3)

Steps:

  • Stir first 4 ingredients in small bowl until sugar dissolves. Melt butter with 2 tablespoons oil in small saucepan over medium heat. Add fish sauce mixture and green onions and simmer until sauce begins to thicken, about 2 minutes.
  • Do ahead: Butter sauce can be made 2 hours ahead. Let stand at room temperature.

1 fresh jalapeno pepper
3 Tbsp unsalted butter
1 tsp grated lime zest (green part of the rind)
1 Tbsp honey
1/4 tsp sea salt
6 ears fresh sweet corn, shucked

Steps:

  • 1. Preheat grill to medium-high heat. Place jalapeno on grill rack coated with cooking spray. Cover and grill for 10 minutes or until pepper is beginning to be blackened and charred, turning occasionally. Remove from grill. Place jalapeno in a small paper bag, and fold tightly to seal. Let stand for 5 minutes. Peel and discard skin. Cut jalapeno in half lengthwise. Discard stem, seeds, and membranes. Finely chop jalapeno. Combine jalapeno, butter, lime zest, honey, and salt and pepper in a small bowl. Stir well to mix all.

I stumbled across this recipe last summer when I needed something to make for my sister's wedding reception. The family loved it, so I took it to a pot luck at work and they loved it too.

12 ears corn, husks and silk removed and blanched
1/2 cup olive oil, plus extra for brushing the corn
1/4 cup aged sherry wine vinegar
1 tablespoon Dijon mustard
1 clove garlic, minced
2 large red bell peppers, diced
1 large vidalia onion, thinly sliced
4 ripe plum tomatoes
1 jalapeno pepper, finely chopped
1/4 cup finely chopped chives
salt and pepper

Steps:

  • Preheat grill.
  • Brush the blanched corn with oil and season with salt and pepper to taste.
  • Grill until slightly charred on all sides, about 2 minutes.
  • With a sharp knife, scrape the kernels into a medium bowl.
  • Combine the vinegar, mustard, and garlic in a large bowl and slowly whisk in the remaining 1/2 cup of olive oil until emulsified.
  • Add the corn kernels, bell peppers, onion, tomatoes, jalapeno, and chives.
  • Toss to coat with the dressing.
  • Season with salt and pepper.

4 ears fresh sweet corn
Extra light olive oil, plus1 tablesspon, divided
1/2 orange bell pepper, diced small
1/2 red bell pepper, diced small
1/4 cup red onion, diced small
1/4 cup fresh cilantro, chopped
1 tablespoon pickled jalapeño, chopped
1 lime, juiced
1/2 teaspoon kosher salt, plus more to taste

Steps:

  • Heat a grill to high. Brush the corn with light olive oil. Grill until cooked and slightly charred. Turn often and watch carefully. While the corn is cooling; combine the chopped peppers, onion, cilantro, jalapeños, the juice of a 1 lime, cilantro and season with kosher salt. Slice corn off cob and combine kernels into salad. Give it a good toss, cover and refrigerate for at least 30 minutes. Stir once before serving. Enjoy!

4 medium ears of corn
1/3 c olive oil mayonnaise
1/4 c parsley
1 juice only.. of 1 lime
2 limes, cut into wedges...to serve with cooked corn
- cayenne pepper & back pepper...your amount

Steps:

  • 1. Clean and grill corn. Turning often ,till done. In the meantime, mix together mayonnaise, olive oil,and lime juice, parmesan cheese, and parsley. Spread this on cooked corn.
  • 2. When corn is done. Spread mixture on the cooked corn... and serve,with lime wedges. and sprinkle with cayenne. You may never go back to plain ole butter!!!!
