RIB-EYE STEAK WITH MUSHROOM SAUCE

A beefy steak with a savory and creamy mushroom sauce.

2 tablespoons butter
4 (4oz) packages gourmet blend mushrooms, sliced
1 shallot, minced
4 cloves garlic, minced
1 cup beef broth
1/2 cup heavy whipping cream
1/2 teaspoon dried thyme
salt
ground black pepper
6 1-inch thick New York strip steaks
2 tablespoons olive oil

Steps:

  • In a large skillet, melt butter over medium heat. Add mushrooms, shallot, and garlic; cook, stirring frequently, for about 10 minutes or until mushrooms are tender. Add broth and bring to a boil; reduce heat and simmer for 12 minutes or until liquid is reduced to about 1/2 cup. Stir in cream, and simmer for 6 to 8 minutes or until sauce is thickened. Stir in thyme, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Set aside, and keep warm.
  • Sprinkle steaks evenly with salt and pepper.
  • In a large skillet, heat oil over medium-high heat. Add steaks, in batches if necessary, and cook for 4 to 5 minutes per side or until desired degree of doneness. Remove from pan, and let stand for 10 minutes. Serve steaks with mushroom sauce. Garnish with thyme leaves, if desired.
  • Note: You can make this sauce ahead and rewarm just before serving. For the steaks, let stand at room temperature for 30 minutes before cooking. And don't be tempted to cut into them right away after they're cooked. Let them stand for 10 minutes before serving.

NEW YORK STRIP STEAK WITH RED WINE MUSHROOM SAUCE



New York Strip Steak with Red Wine Mushroom Sauce image

2 tablespoons olive oil
2 (10 to 12-ounce) New York strip steaks, about 3/4-inch thick
Kosher salt and freshly ground pepper
8 ounces cremini mushrooms, sliced
1 shallot, finely chopped
2 teaspoons chopped fresh thyme leaves
1 cup dry red wine
3 tablespoons butter

Steps:

  • Add the oil to a large cast-iron skillet over medium-high heat. Heat until the oil is very hot.
  • Season the steaks with salt and pepper. Add the steaks to the skillet and sear the steaks on each side for 4 minutes for medium. Remove the steaks to a plate and loosely cover with foil.
  • Lower the heat to medium and add the mushrooms, shallot, and thyme to the pan and saute until the mushrooms begin to brown and soften, about 5 minutes. You may need to add a bit more oil to the pan. Add the red wine and scrap the bottom of the pan to get the browned bits.
  • Let the liquid reduce by half, 7 to 8 minutes. Remove from the heat and swirl in 3 tablespoons butter to finish the sauce. Serve the steak with mushroom red wine sauce drizzled over the top.

Grilled Hanger Steak with Mushroom Demi-Glace image

4 pounds trimmed hanger steak, cut into 8-ounce portions (hanger steak is a very tender cut of which there is only 1 per animal, aka hanging tender or bistro steak)
Salt and pepper
1/8 cup vegetable oil
2 onions, finely diced
2 cloves garlic, finely chopped
1 1/2 pounds mushrooms, cleaned and sliced
2 cups Merlot wine
3 cups demi-glace

Steps:

  • Heat grill and season meat on both sides with salt and pepper. In a 2-quart saucepan, heat oil and add onions, garlic and mushrooms, sauteing until translucent. Add wine and cook until reduced by half. Meanwhile sear meat on both sides, and grill to about 128 degrees F internal temperature on an instant-read thermometer for medium-rare. Remove meat from grill and let rest. Whisk demi-glace into wine reduction and adjust seasoning of sauce with salt and pepper, as needed. Spoon the sauce over the grilled steaks and serve.

1-1/2 cups sliced mushrooms
1/2 cup sliced onions
1/4 cup A.1. Roasted Garlic Steak Sauce
1/3 cup sour cream
2 boneless beef rib eye steaks (8 oz. each)

Steps:

  • Preheat grill to medium heat. Heat oil in large skillet on medium-high heat. Add mushrooms and onions; cook and stir 5 to 7 minutes or until tender. Reduce heat to low.
  • Stir in steak sauce and sour cream; cook 1 minute or until heated through. (Do not boil.) Remove from heat; cover to keep warm.
  • Grill steaks 5 minutes on each side or until cooked through. Cut each steak in half. Serve topped with the mushroom sauce.

1 cup dry red wine
2 tablespoons soy sauce
1 tablespoon red wine vinegar
1 teaspoon thyme
1/4 teaspoon black pepper
4 garlic cloves, minced
4 small sirloin steaks
2 tablespoons unsalted butter
4 scallions, coarsely chopped
3/4 lb mushroom, thinly sliced
2 tablespoons flour

Steps:

  • In a shallow dish large enough to hold the steaks in a single layer, combine the wine, soy sauce, vinegar, thyme, pepper and half of the garlic. Place the steaks in the marinade and turn them over to thoroughly coat. Set them aside to marinate while you prepare the remaining ingredients.
  • Preheat the broiler or prepare the grill. If broiling, line a broiler pan with foil.
  • In a medium skillet, melt the butter over medium-high heat. Add the remaining garlic, the scallions and mushrooms and saute until the scallions are limp and the mushrooms are beginning to release their liquid, two to three minutes. Stir in the flour and cook, stirring, until it is no longer visible, about 30 seconds.
  • Remove the steaks from the marinade, reserving the marinade. Stir the reserved marinade into the skillet and cook, stirring, until the mixture has come to a boil and thickened slightly, one to two minutes. Reduce the heat to low and simmer while you cook the steaks.
  • Grill or broil the steaks four inches from the heat; 7 minutes per side for rare, 8 minutes per side for medium-rare, 9 minutes per side for well-done. Let the steaks rest for five minutes before serving.
  • Serve the steaks topped with the red wine mushroom sauce.
