Grilled Shrimp Spring Rolls with a Sweet Melon, Avocado and Spinach Salad image

1 (20-oz) package of SeaPak Shrimp Spring Rolls
1 tbsp vegetable oil
¼ cup rice wine vinegar or apple cider vinegar
Juice from one lime
6 cups fresh baby spinach, cleaned and dried
½ cantaloupe, cut into bite size pieces
2 avocados, sliced

Steps:

  • Heat outdoor grill or indoor grill pan to medium high heat.
  • Remove the spring rolls from the package and brush liberally with oil. Place directly on the grill or grill pan. Close the grill lid and cook for 5 to 6 minutes per side.
  • In a small mixing bowl, whisk together the packet of enclosed Sweet Thai Chili dipping sauce, vinegar and lime juice.
  • Set aside.
  • Assemble the salad by tossing the spinach with the cantaloupe and avocados.
  • Drizzle with as much of the dressing mixture as you like and serve alongside the grilled spring rolls. Have remaining dressing on the side for dipping spring rolls in, if desired.

1 1/2 pounds large shrimp, peeled, deveined and well rinsed
2 tablespoons olive oil
Finely grated zest of 1 lemon
2 tablespoons fresh lemon juice
Salt and pepper, to taste
1/2 cup mayonnaise
3/4 cup diced (1/4 inch) celery
4 scallions (with 3 inches of green left on), thinly sliced
3 tablespoons chopped cornichons
1 tablespoon chopped fresh tarragon leaves
8 split-top hot dog rolls, toasted and lightly buttered
Radish, cress or other baby sprouts, for garnish

Steps:

  • 1. Toss the shrimp in a bowl with the olive oil, lemon zest and juice, salt and pepper. Let rest at room temperature for 15 minutes. 2. Thread the shrimp on metal skewers crosswise, leaving space between each shrimp for even cooking.Cook over high heat on an oiled grill until cooked through, about 2 minutes per side. Cool. 3. Toss the shrimp, mayonnaise, celery, scallions, cornichons and tarragon in a bowl. 4. Fill the rolls with the shrimp mixture (about 1/2 cup per roll). Garnish the top of each roll with some sprouts. Serves 8. Per serving: 300 calories, 23g carbohydrate, 18g protein, 14g fat, 130mg cholesterol.

1 1/2 lbs large shrimp, peeled and deveined
2 tablespoons olive oil
1 lemon, juice and zest of, grated
salt
pepper
1/2 cup mayonnaise
3/4 cup celery, diced
4 scallions, sliced
3 tablespoons green peppers, chopped (or pimentos)
1 tablespoon tarragon leaf, chopped
8 hot dog buns, toasted and buttered
mixed sprouts (garnish)

Steps:

  • Soak skewers in water for at least 30 minutes or use metal skewers.
  • In a small bowl toss shrimp wth olive oil, lemon zest, lemon juice, salt and pepper. Let stand for 15 minutes while preparing grill.
  • Thread shimp on skewers, crosswise.
  • Cook over high heat on prepared oiled grill until cooked through (2-4 minutes per side). Let cool.
  • In a bowl, toss shrimp with mayonnaise, celery, scallions, peppers and taragon.
  • Fill hot dog rolls with shrimp mixture (1/2 cup per roll) and garnish with sprouts, if desired.
