18 oz Sam's Choice® potato gnocchi
24 oz Sam's Choice® Italia Tomato Basil Pasta Sauce
1 pt cherry tomato, quartered
1 lb sausage, grilled, sliced
grated parmesan cheese, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add the gnocchi and cook until they begin to float, about 3 minutes.
  • In a small pot, bring the sauce to a simmer over medium heat. Add the tomatoes to the sauce and gently heat through, about 5 minutes.
  • Top the gnocchi with the sauce, grilled sausage and freshly grated Parmesan.
  • Enjoy!

2 medium tomatoes, finely chopped (1 1/2 cups)
2 medium yellow pear tomatoes, finely chopped (1/2 cup)
1 tablespoon red wine vinegar
1 teaspoon chopped fresh or 1/4 teaspoon dried oregano leaves
1/4 cup Dijon mustard
2 teaspoons chopped fresh or 1/2 teaspoon dried oregano leaves
6 fresh sweet Italian sausages or turkey Italian sausages (about 1 1/4 lb)
6 bratwurst buns, split

Steps:

  • Heat gas or charcoal grill. In small bowl, mix relish ingredients; cover and refrigerate until serving.
  • In another small bowl, mix mustard and oregano; set aside.
  • Place sausages on grill over medium heat. Cover grill; cook 10 minutes, turning occasionally. Continue grilling 8 to 10 minutes longer, turning and brushing occasionally with mustard mixture, until no longer pink in center. Discard any remaining mustard mixture.
  • Serve sausages on buns with relish.

These delicious grilled sausage sandwiches are my attempt to duplicate the ones I ate when I was growing up and attended Italian street festivals in the North End of Boston. They come together really quickly, and make a great summer lunch. Choose hot or mild sausages as you prefer.

4 (4 ounce) links hot Italian sausage
1 red bell pepper, halved and seeded
1 small onion, peeled and cut in half crosswise
2 teaspoons olive oil
salt and pepper to taste
1 tablespoon olive oil
4 (6 inch) sandwich rolls, split and toasted

Steps:

  • Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.
  • Pierce the sausages in a few places with a fork, and set aside. Slice off the bottoms of the onion halves so they will sit flat on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil.
  • Place the sausages, onions, and peppers on the preheated grill. Cook and turn the sausages until well browned and juices run clear. Cook vegetables until tender and peppers are slightly charred. Remove vegetables and sausages from the grill.
  • Place the peppers in a paper bag, close, and cool slightly. Remove and discard the charred skin from the peppers; slice peppers into strips. Slice the onion halves. Place salt and pepper to taste, and 1 tablespoon olive oil in a bowl. Add the peppers and onions, and toss until evenly coated. To serve, place sausages in sandwich rolls, and top with the pepper and onion mixture.

1/2 cup balsamic vinegar
2 tablespoons canola oil
2 large Spanish onions, halved and thinly sliced
Kosher salt and freshly ground black pepper
1 teaspoon ancho chile powder
1/2 teaspoon ground cinnamon
1/4 cup ketchup
1 teaspoon hot sauce
1 pint cherry tomatoes, cored
1 tablespoon canola oil
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh basil
4 hot Italian sausage links
4 sweet Italian sausage links
1 loaf seeded semolina bread, cut into thick slices

Steps:

  • For the onions: Put the vinegar, oil, onions and some salt and pepper in a medium skillet over medium heat. Cook, stirring frequently, until the onions are very soft and soupy, about 15 minutes.
  • Stir in the chile powder and cinnamon and cook for 1 minute. Add the ketchup, 1/2 cup water, the hot sauce, 1/2 teaspoon salt and 1/4 teaspoon black pepper, and bring to a simmer. Simmer, stirring occasionally, until thickened, about 10 minutes. Transfer to a bowl and cool to room temperature before serving.
  • For the tomatoes: Heat the grill for high direct and indirect heat. Put the tomatoes in a bowl and toss with the canola oil and some salt and pepper. Transfer to a grill basket and grill over direct heat, tossing occasionally, until slightly charred all over and softened, about 5 minutes. Transfer to a bowl, drizzle with the olive oil, and crush lightly with a fork. Toss with the basil, then set aside.
  • For the sausage: Put the sausages over the direct heat and cook until slightly charred on all sides, about 2 minutes per side. Move to the indirect heat, cover, and cook until just cooked through, about 10 minutes.
  • Transfer the sausage to a cutting board. Grill the bread over direct heat until lightly charred, about 15 seconds, then transfer to a platter.
  • Slice the sausages about 1-inch thick. Top each slice of bread with some of the grilled tomatoes, a few slices of sausage and a dollop of the onion sauce. Serve immediately.

1 ounce dried porcini mushrooms
1 1/2 cups hot water
3 tablespoons olive oil
1 large onion, chopped
3 large garlic cloves, chopped
1 1/2 tablespoons chopped fresh rosemary or 2 teaspoons dried
1/4 teaspoon dried crushed red pepper
2 28-ounce cans Italian plum tomatoes, drained, chopped
2 tablespoons tomato paste
3 1/2 pounds assorted uncooked sausages (such as Italian, turkey and chicken)

Steps:

  • Place mushrooms in small bowl. Add 1 1/2 cups hot water; let stand 30 minutes to soften. Remove mushrooms from soaking liquid, squeezing mushrooms to release liquid into same bowl. Reserve liquid. Chop mushrooms.
  • Heat oil in heavy large Dutch oven over medium heat. Add onion and garlic; sauté until tender, about 8 minutes. Add rosemary and red pepper and sauté 1 minute. Add tomatoes, tomato paste and mushrooms. Pour in mushroom soaking liquid, leaving any sediment in bottom of bowl. Bring sauce to boil, stirring often. Reduce heat; simmer until thick, stirring occasionally, about 1 hour. Season with salt and pepper. (Can be made 2 days ahead. Cover; chill. Before using, rewarm over medium heat, stirring occasionally.)
  • Prepare barbecue (medium-high heat) or preheat broiler. Grill sausages until just cooked through, turning occasionally, about 12 minutes.
