HOISIN MARINATED GRILLED SALMON

This minimalist marinated salmon recipe is perfect as a quick weeknight dinner or party dish. Takes minutes to cook on the grill, perfect to serve with rice and vegetables.

1½ pounds salmon (boneless, with skin, cut widthways into 2-inches wide pieces)
3 tablespoons hoisin sauce
2 tablespoons olive oil
Zest of 1 large lemon (plus 1⅓ tbsp lemon juice)
Pepper to taste
Cooking spray (for greasing the pan)
Scallions/spring onions (for serving, finely chopped)

Steps:

  • Place your salmon strips skin side down on top of a large plate or in a large shallow dish.Combine 3 tablespoons of hoisin sauce with 2 tablespoons of oil, zest of 1 large lemon and black pepper to taste. Give the mixture a good stir and transfer 3 teaspoons of the marinade into a separate dish (refrigerate it to use later). Spread the rest of the marinade over the top and sides of the salmon, cover and refrigerate overnight (6-8 hours).
  • When you are ready to make the recipe add 1.3 tablespoons of lemon juice into the small amount of marinade mixture you've set aside and stir thoroughly. This is your sauce to serve with the grilled salmon.
  • Gently scrape excess marinade off the salmon (leave some on) and heat up the griddle pan. Grease the pan with a little oil or oil spray and cook the salmon over a fairly high heat on the top and sides (about 2 minutes on each side).
  • Remove from the pan as soon as the salmon is cooked through, scatter over some chopped spring onions/scallions, drizzle the hoisin lemon sauce and enjoy with rice and vegetables.

2 tablespoons canola oil, plus more for brushing on salmon
2 shallots, sliced
2 cloves garlic, chopped
1/4 cup hoisin sauce
1/4 cup ketchup
2 tablespoons honey
1 tablespoon sambal oelek
2 tablespoons sesame seeds, toasted
1 teaspoon soy sauce
1 teaspoon fish sauce
1 tablespoon rice vinegar
Salt and freshly ground black pepper
4 (8-ounce) salmon steaks
Cilantro leaves, for garnish

Steps:

  • Heat the oil in a small saucepan over medium heat. Add the shallots and garlic and cook until soft. Stir in the hoisin, ketchup, honey, sambal oelek, sesame seeds, soy sauce and fish sauce and cook for 5 minutes. Remove from the heat, stir in the vinegar and season with salt and pepper, to taste.
  • Heat the grill to high. Brush the salmon on both sides with oil and season with salt and pepper, to taste. Grill until golden brown and slightly charred on both sides. Cook to medium-well doneness, brushing with the sauce every minute or so. Remove the salmon from grill to a plate and brush with more sauce. Transfer the fish to a serving platter and let rest for 5 minutes. Garnish with cilantro and serve.

2 salmon, skinless fillet (wild caught Alaskan salmon if possible; it is the best for you)
1/4 c hoisin sauce
1 1/2 Tbsp Worcestershire sauce
1 tsp onion salt
1 tsp pepper
GARNISH
1 drizzle of balsamic glaze
4 - 6 slice lime

Steps:

  • 1. Mix together all the seasonings except for the balsamic glaze. Stir together and then brush it on both sides of the salmon.
  • 2. Grill salmon, at 350 degrees, 5 to 7 minutes on each side. Depending upon thickness.
  • 3. After you plate the salmon, drizzle the balsamic glaze over the top for an even more yummy taste or a squeeze of lime.
  • 4. 6/2/14: Just had to make this on my husband's new smoker/grill. Learning what temp. to get it at for the fish. It took a little longer than usual.

4 ripe plums, unpeeled, pitted and finely diced
2 tablespoons fresh ginger, peeled and minced
1/4 cup unseasoned rice wine vinegar
6 (8-ounce) salmon fillets with skin
3 tablespoons olive oil
1 tablespoon kosher salt
2 tablespoons freshly coarse-ground black pepper
1/2 cup hoisin sauce
1/4 cup scallions, white and green parts, thinly sliced
3 tablespoons sesame seeds, toasted

Steps:

  • In medium bowl, stir together plums, ginger, and vinegar. Refrigerate until ready to serve.
  • Prepare grill for cooking: If using charcoal grill, open vents on bottom, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 4 to 5 seconds. If using gas grill, preheat burners on high with hood closed 10 minutes, then turn down to moderately high.
  • Rub salmon fillets on both sides with oil and sprinkle with salt and pepper. Arrange fillets on grill, skin sides down. Grill, turning once, until just cooked through, about 6 to 8 minutes per side, brushing with hoisin sauce during last 30 seconds of cooking on each side.
  • Transfer fillets to platter and sprinkle with scallions and sesame seeds. Serve, passing plum relish on side.

1 side fresh salmon, boned but skin on (about 3 pounds)
2 tablespoons Dijon mustard
3 tablespoons good soy sauce
6 tablespoons good olive oil
1/2 teaspoon minced garlic

Steps:

  • Light charcoal briquettes in a grill and brush the grilling rack with oil to keep the salmon from sticking.
  • While the grill is heating, lay the salmon skin side down on a cutting board and cut it crosswise into 4 equal pieces. Whisk together the mustard, soy sauce, olive oil, and garlic in a small bowl. Drizzle half of the marinade onto the salmon and allow it to sit for 10 minutes.
  • Place the salmon skin side down on the hot grill; discard the marinade the fish was sitting in. Grill for 4 to 5 minutes, depending on the thickness of the fish. Turn carefully with a wide spatula and grill for another 4 to 5 minutes. The salmon will be slightly raw in the center, but don't worry; it will keep cooking as it sits.
  • Transfer the fish to a flat plate, skin side down, and spoon the reserved marinade on top. Allow the fish to rest for 10 minutes. Remove the skin and serve warm, at room temperature, or chilled.

1/2 cup creamy peanut butter
1/2 cup hoisin sauce
1/2 cup finely chopped onion
1/4 cup rice wine vinegar
1/2 cup water
2 -3 cloves minced garlic
4 salmon fillets (6 oz. each)
salt and pepper
1/2 cup chopped scallion

Steps:

  • Combine all sauce ingredients in a saucepan.
  • Bring to a boil then reduce the heat and simmer for about 5 minutes, stirring often.
  • Sauce can be made several days ahead of time and refrigerated.
  • If it is too thick, just add a little water when heating it before serving.
  • Season the salmon filets with salt and pepper.
  • Grill until done to your liking.
  • Top each grilled salmon filet with warm Peanut Hoisin Sauce and sprinkle with chopped scallions, just before serving.
