GRILLED SALMON WITH CHIPOTLE-HERB BUTTER
You will have more than enough of the herb butter, but it can be refrigerated for up to 2 weeks or frozen up to 6 months. You can also use it on grilled steaks or as a spread for bread. I also highly recommend using it to make Recipe #105861--replace butter seasoning mix listed and top with shredded cheese.

Steps:
- In medium bowl, combine butter, chives, parsley, chervil, lemon juice, chilies, and adobo sauce.
- Season with salt and pepper to taste.
- With electric mixer, beat together until well incorporated.
- Adjust the seasoning if necessary.
- Shape butter into a long log and cover with plastic wrap.
- Refrigerate until ready to use.
- Season salmon with salt and pepper.
- Lay skin side up over a solid bed of coals or high heat on a gas grill; Close lid on gas grill.
- Cook fish, turning once, until opaque but still moist-looking in center of thickest part (cut to test), 7 to 10 minutes.
- Place a 1/8-inch thick slice of chipotle butter on top of each fillet.

- Heat gas or charcoal grill. In small saucepan, combine shallots, wine and 3 tablespoons lemon juice. Bring to a boil over medium-high heat. Reduce heat to medium; cook 5 to 7 minutes or until mixture is reduced to about 2 to 3 tablespoons, stirring occasionally.
- Remove from heat. Stir in cold butter 1 tablespoon at a time until each is well blended. Stir in dill, chives and 1/8 teaspoon pepper. Cover to keep warm.
- In small bowl, combine oil and 1 tablespoon lemon juice; mix well. Brush over salmon fillets. Sprinkle with salt and 1/4 teaspoon pepper.
- When grill is heated, place salmon, skin side up, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 8 to 10 minutes or until fish flakes easily with fork, turning once and brushing occasionally with any remaining oil mixture. If necessary, reheat butter sauce over very low heat, stirring constantly. Serve salmon with butter sauce.

- Preheat grill to high (450 degrees). Meanwhile allow salmon to come to room temperature
- Place salmon skin side down on a foil covered baking sheet. (For extra ease you can also place fish on a grilling mesh or cooling rack sprayed with cooking spray and then put the rack directly on the grill when ready to cook. Use the foil covered baking sheet to carry the fish to and from grill).
- Brush olive oil on both sides of fish and grind fresh black pepper over the fleshy side. Place fish back on pan skin side down.
- When grill is preheated place the mesh or rack or just the fish on the grill. CLOSE the lid and grill for 5-10 minutes depending on how done you want your salmon- we like it on the rare side.
- Open grill and brush with the marinade and grill 3 more minutes with the grill open.
- Remove and devour!
- Grill.

- In food processor, place chipotle pepper, adobo sauce and cilantro. Cover; process, using quick on-and-off motions, until cilantro is roughly chopped.
- Add mayonnaise and lime juice. Process, using quick on-and-off motions until blended. Salt and pepper to taste. Serve immediately or refrigerate until ready to serve.

SALMON IN HERB BUTTER
Steps:
- Melt the butter and squeeze in lemon juice and add crushed garlic, cilantro and green onions and mix well. Place salmon fillet on a piece of aluminum foil that is large enough to completely wrap and seal the fillet. After placing the salmon on the foil, brush or pour the butter mixture on the salmon. Seal the salmon in foil. Place on the barbecue grill and cook for 10 to 12 minutes per side. Any longer will dry out the salmon. Cut in portions and serve immediately.
- Fish can also be cooked in a preheated 350-degree F oven for 35 to 40 minutes.
