This Garlic Lime Grilled Greek Shrimp with Tzatziki Sauce combines big bold flavors with cool, refreshing flavors. 1 pound Shrimp, 31-36 per lb Cleaned
2 Tablespoons Olive Oil
2 cloves Garlic, minced
1 Lime
1/2 teaspoon Salt
1/2 teaspoon Ground Pepper
1 Medium English Cucumber
1 cup Plain Greek Yogurt
1 Tablespoon Finely Chopped Scallion
1 clove Garlic, minced
Zest from Lime (same Lime used for the shrimp)
1/2 teaspoon Salt
1/2 teaspoon Ground Pepper

Steps:

  • In a medium bowl, add the yogurt
  • Zest the Lime and add it to the yogurt. Store the remaining zested lime in a sealed container in the fridge.
  • Mince the 3 cloves garlic and store 2 for the shrimp in the fridge in a storage container until ready to use. Add the third 1 minced clove to the yogurt.
  • Also finely chop the scallion and add that plus salt and pepper to the yogurt. Then mix the ingredients into the yogurt. Cover and store in the fridge.
  • Using a grater on the medium grate size, grate the cucumber with the skin on. I like to grate right over a paper towel or clean towel so that you can squeeze the water out of the cucumber and can strain it out.
  • Wrap the cucumber up in the towel and squeeze all of the water out. You can mix it with the yogurt mixture now if you are eating now, but if not, then I store the cucumber in a separate bowl lined with more towel to soak up any additional water.
  • Preheat a large skillet. To a large mixing bowl, add the 2 cloves of minced garlic, olive oil, salt, and pepper.
  • Take the shrimp out and make sure they are all cleaned. Add the shrimp to the Garlic mixture, the lightly mix to coat the shrimp completely. Right before you are ready to sear the shrimp, squeeze half of the lime over the shrimp and mix it around.
  • To a preheated skillet, add the shrimp and spread them out into a single layer. Cook them for 3-5 minutes until the shrimp start to curl and turn pink around the edges.
  • Then flip the shrimp over and cook the other side for another 3 minutes. To finish, squeeze the remaining half of lime over the shrimp, give them a stir, then turn off the heat.
  • Finish the Tzatziki sauce by mixing the shredded cucumber to the yogurt and mix to combine. Serve with the shrimp and ENJOY!

Extra-virgin olive oil, for the grill and for brushing
2 1/2 pounds large head-on, shell-on shrimp
Fine sea salt
Lemon wedges, for serving

Steps:

  • Preheat a grill to medium high and oil the grates. Devein the shrimp: Cut through the shell along the back of the shrimp with kitchen shears to expose the vein. Use the edge of the shears or the tip of a paring knife to remove the vein, leaving the shell intact.
  • Brush the shrimp with olive oil. Grill until the shells are pink and lightly charred, 2 to 3 minutes per side (any exposed meat should be opaque). Remove the shrimp to a platter and sprinkle with sea salt. Serve with lemon wedges.

Bacon Prawns with Cheese Dip image

8 thin slices bacon
8 roasted jalapenos, split in 1/2 and seeded
16 large prawns, peeled and deveined
Freshly ground black pepper
1 1/2 cups shredded Monterey jack cheese (Chihuahua cheese is great here too!)
3/4 cup cream

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut each piece of bacon in half and put them on a baking sheet. Bake until just half cooked, about 4 to 5 minutes. Remove and set aside until cool enough to handle.
  • Hold 1 strip the roasted jalapeno in the belly of each prawn and wrap it with half a piece of bacon. Secure with a toothpick and season with pepper, to taste. Arrange the prawns on parchment lined baking sheet and bake until the prawns are just cooked, about 10 minutes.
  • Meanwhile make the cheese sauce by adding the cheese and cream to a glass bowl. Put the bowl over a pot of simmering water, being sure that the bottom of the bowl is not touching the water. Slowly stir until the cheese is melted into the cream and is fully blended.
  • Transfer the prawns to a serving platter and serve the cheese sauce alongside. Enjoy!

1 grilled yellow bell pepper, peeled, seeded and finely diced
1 grilled poblano chile, peeled, seeded and finely diced
1 grilled serrano chile, peeled, seeded and finely diced, optional
1/4 teaspoon red pepper flakes
2 cloves garlic, finely chopped
1/4 teaspoon kosher salt
Freshly ground black pepper
Splash red wine vinegar, optional
2 tablespoons finely chopped fresh cilantro leaves
24 prawns, in the shell, preferably with heads
1 tablespoon olive oil
1 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Mix together all of the sauce ingredients in a medium bowl, cover, and let sit at room temperature for at least 1 hour and up to 2 hours before serving.
  • Heat your grill to high.
  • Toss the prawns with the oil in a bowl and season with the salt and pepper. Grill the prawns for 2 to 3 minutes per side, or until just cooked through. Remove to a platter and immediately spoon the sauce over shrimp with a slotted spoon. Serve hot.
