A light vegetarian sandwich with great flavor that is perfect for summer. You can use just about any type of bread but Kaiser rolls or burger buns are best. I like to serve this with grilled squash and a glass of white wine!

⅓ cup balsamic vinegar
¼ cup olive oil
1 tablespoon minced garlic
6 portobello mushroom caps
½ cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon lemon juice
2 tablespoons chopped fresh basil
6 kaiser rolls, split, toasted
1 tablespoon butter
6 leaves lettuce
6 tomato slices

Steps:

  • Preheat an outdoor grill for medium heat, and lightly oil the grate. Whisk together the balsamic vinegar, olive oil, and garlic in a small bowl.
  • Arrange the portobello mushrooms gill-side up on a tray or baking sheet. Brush the mushrooms with some of the vinegar mixture, and allow to marinate for 3 to 5 minutes.
  • Place the marinated mushrooms on the preheated grill, gill-side down. Grill mushrooms until tender, brushing both sides of the mushrooms with the remaining marinade, about 4 minutes on each side.
  • Mix the mayonnaise, dijon mustard, lemon juice, and basil in a small bowl. Butter the toasted kaiser rolls, then spread with the mayonnaise mixture. Divide the mushrooms, lettuce, and tomato slices evenly to make 6 sandwiches.

2 cloves garlic, minced
6 tablespoons olive oil
½ teaspoon dried thyme
2 tablespoons balsamic vinegar
salt and pepper to taste
4 large portobello mushroom caps
4 hamburger buns
1 tablespoon capers
¼ cup mayonnaise
1 tablespoon capers, drained
1 large tomato, sliced
4 leaves lettuce

Steps:

  • Turn on broiler, and adjust rack so it is as close to heat source as possible.
  • In a medium-size mixing bowl, mix together garlic, olive oil, thyme, vinegar, salt and pepper.
  • Put the mushroom caps, bottom side up, in a shallow baking pan. Brush the caps with 1/2 the dressing. Put the caps under the broiler, and cook for 5 minutes.
  • Turn the caps, and brush with the remaining dressing. Broil 4 minutes. Toast the buns lightly .
  • In a small bowl, mix capers and mayonnaise. Spread mayonnaise mixture on the buns, top with mushroom caps, tomato and lettuce.

1/4 cup fresh basil, chopped
3 tablespoons reduced-calorie mayonnaise
1 teaspoon apple cider vinegar
1 lb portabella mushroom, caps (about 4 mushrooms)
olive oil flavored cooking spray, enough to coat mushroom
1/8 teaspoon table salt
1/8 teaspoon black pepper
4 medium mixed-grain hamburger buns
4 pieces jarred roasted red peppers, drained (water-packed)
4 slices red onions
4 pieces lettuce

Steps:

  • Heat grill.
  • In a small bowl, combine basil, mayonnaise and vinegar; set aside.
  • Lightly coat both sides of mushroom caps with cooking spray; season with salt and pepper.
  • Grill mushrooms over medium-hot coals, about 6 minutes each side or until just soft to the touch.
  • To serve, split rolls and toast on grill. Spread a heaping teaspoon of basil mixture on top and bottom halves of rolls. Layer each bottom half with one red pepper, mushroom, onion slice and lettuce leaf; top with remaining half of roll and serve.

1 tablespoon olive oil
1 medium shallot, minced
1/4 cup Dijon mustard
1/4 cup whole berry cranberry sauce
2 tablespoons balsamic vinegar
1/4 cup olive oil
2 tablespoons balsamic vinegar or 2 tablespoons red wine vinegar
2 teaspoons dried marjoram or 2 teaspoons dried basil
1 garlic clove, crushed
sugar, a pinch
4 large portabella mushrooms, stems and gills removed
4 fresh round sandwich buns
sea salt
fresh ground black pepper

Steps:

  • Mustard---heat the oil in a small skillet; saute the shallot until soft, about 3 minutes.
  • Combine the mustard, cranberry sauce, cooked shallots, and vinegar in a food processor; pulse until pureed.
  • Use immediately or store in the refrigerator for up to 1 week.
  • To marinate the mushrooms, whisk together the oil, vinegar, marjoram, garlic, and sugar in a bowl; set the clean mushrooms, stem side down, in a glass baking dish; pour the marinade over the mushrooms; cover with plastic wrap and refrigerate for 15 minutes.
  • Preheat the broiler or prepare a hot fire in a charcoal or gas grill.

2 large portobello mushrooms (4 ounces each), stems removed
1/4 cup olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon dried basil
4 tomato slices
2 slices mozzarella cheese
2 slices Italian bread (1 inch thick)
Chopped fresh basil

Steps:

  • Preheat broiler. Place mushrooms in a shallow bowl. Mix oil, vinegar, salt and dried basil; brush onto both sides of mushrooms. Let stand 5 minutes. Reserve remaining marinade., Place mushrooms on a greased rack of a broiler pan, stem side down. Broil mushrooms 4 in. from heat until tender, 3-4 minutes per side. 4 mushrooms, large portobello, wiped clean with dampened paper towels
3 cloves garlic, cut into thin slivers
leaves from 1 sprig fresh rosemary (optional)
3 tablespoons olive oil, extra-virgin
3 tablespoons balsamic vinegar
1 tomato, large, fresh, ripe, cut crosswise into 1/2-inch slices
salt and freshly ground black pepper, to taste
4 onions rolls, hamburger buns, or 5-inch sections of baguette, split
Basil Aioli (see recipe) or mayonnaise
1 bunch arugula, rinsed, dry

Steps:

  • 1. Preheat the grill to high.2. Cut the stems off the mushrooms flush with the caps. Using the tip of a paring knife, make tiny holes in the caps, and insert the garlic slivers and rosemary leaves (if using). Combine the oil and vinegar in a small bowl and whisk to mix. Generously brush the portobello caps and tomato slices with this mixture and season with salt and pepper.3. When almost ready to cook, preheat a vegetable grate for 5 minutes. This sounds sooooo good. I found it in the bon appetit magazine and can't wait to try it. If you get to it first, let me know what you think. The preparation time has not been added because I've yet to make this, and I've guesstimated the time needed to cook.

2 garlic cloves, unpeeled
olive oil (for drizzling)
1 cup mayonnaise
1/3 cup basil leaves, fresh minced
1 teaspoon balsamic vinegar
3 tablespoons balsamic vinegar
6 tablespoons butter, divided (3/4 stick)
1 lb portabella mushroom, stems trimmed and cut into 1/4-inch slices (about 5 large)
1 lb bread, halved horizontally (pain rustique, ciabatta or facaccia)
1/3 cup parmesan cheese, freshly grated
1 large tomatoes, thinly sliced

Steps:

  • Preheat oven to 400 degrees.
  • Place garlic in small ovenproof dish and drizzle with olive oil and sprinkle with salt and pepper.
  • Cover tightly with foil and roast until tender, about 30 minutes.
  • Cool, peel and mash garlic.
  • Mix mayonnaise, basil, 1 teaspoon balsamic vinegar and mashed roasted garlic in small bowl. Do ahead Can be made1 day ahead. Cover and chill.
  • Melt 4 tablespoons butter in large skillet over medium-high heat.
  • Add mushrooms and toss to coat.
  • Drizzle remaining 3 tablespoons balsamic vinegar over and cook until tender, stirring often, about 5 minutes.
  • Season with salt and pepper. This step can be made 2 hours ahead of time. Let stand at room temperature.
  • Rewarm over low heat before continuing.
  • Preheat broiler.
  • Spread remaining 2 tablespoons butter over cut sides of bread.
  • Broil bread, buttered side up, until golden brown, about 2 minutes. Watch closelyto prevent burning.
  • Spread desired amount of garlic-basil mayonnaise over toasted sides of bread.
  • Arrange mushrooms in even layer over bottom half of bread.
  • Springles Parmesan cheese over.
  • Arrange tomato slices in single layer over cheese.
  • Cover with top half of bread.
  • Cut into 6 sandwiches and serve.
