6 tablespoons extra virgin olive oil
5 tablespoons red wine vinegar
2 garlic cloves, minced
1 teaspoon ground cumin
table salt
ground black pepper
1 (9 ounce) package frozen corn, thawed
1 (15 1/2 ounce) can pinto beans, drained
1/4 cup fresh cilantro leaves, chopped
4 scallions, thinly sliced
2 pork tenderloin (1 1/2 lb to 2 lb. each)

Steps:

  • Whisk oil, vinegar, garlic, and cumin in large bowl and season with salt and pepper. Reserve 1/4 cup vinaigrette. Stir corn, beans, cilantro, and scallions together with remaining vinaigrette. Cover and let sit while grilling pork.
  • Season pork with salt and pepper and grill over hot fire until browned on all 4 sides and internal temperature reaches 145 degrees, about 12 minutes. Transfer to cutting board, tent with foil, and let rest for 5 minutes. Slice pork into 1-inch pieces and drizzle with reserved vinaigrette. Spoon corn salad onto individual plates and top with pork. Serve.

1 cup olive oil
1 cup orange juice
1/4 cup green onion, chopped
2 teaspoons white pepper
2 teaspoons salt
3 (1 lb) pork tenderloin, trimmed

Steps:

  • Combine 1st 4 ingredients in a large zip-top bag.
  • Add 1 tsp salt and pork to bag.
  • Seal and shake well.
  • Marinate in fridge for 2 hours, turning bag occasionally.
  • Preheat grill.
  • Remove pork from bag and discard marinade.
  • Sprinkle pork evenly w/remaining salt.
  • Place pork on grill rack for 20 minutes.
  • Let stand 10 minutes.
  • Cut into thin slices.

1 gallon cold water
½ cup white sugar
½ cup salt
8 ears corn on the cob, husks and silk removed
½ cup softened butter, or to taste
salt and pepper to taste

Steps:

  • Pour the water into a large pot, and stir the sugar and 1/2 cup salt together until dissolved. Place the ears of corn into the pot, and allow to soak at least 30 minutes but no longer than 8 hours.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Remove the corn from the soak and grill the ears, turning every 2 to 3 minutes to cook the kernels on all sides. Brush the grilled corn with butter, and season to taste with salt and pepper.
