2 tablespoons kosher salt
1 tablespoon sugar
6 fresh sage leaves, torn
3 cloves garlic, smashed
2 bay leaves
Two 18-ounce pork porterhouse steaks
Pinch crushed red pepper
Extra-virgin olive oil
1 cup saba
8 ounces dried Black Mission figs, stemmed and cut into quarters
4 ounces pancetta, cut into 1/4-inch dice
Extra-virgin olive oil
2 cloves garlic, smashed and finely chopped
2 sprigs fresh rosemary, finely chopped
2 tablespoons red wine vinegar
1 cup chicken stock
Kosher salt

Steps:

  • For the pork: Combine the salt, sugar, sage, garlic, bay leaves and 2 quarts water. Submerge the pork in the brine and refrigerate for 24 hours before cooking.
  • When ready to cook, remove the pork from the brine and discard the brine. Let the pork come to room temperature for 15 to 20 minutes before cooking. Pat dry.
  • Meanwhile, for the sauce: Combine the saba and figs and let sit for 1 hour.
  • Toss the pancetta into a small saute pan, give a little drizzle of oil and bring the pan to a medium heat. When the pancetta starts to brown and crisp, toss in the garlic and rosemary and stir to combine.
  • Add the saba, figs and vinegar. Stir to combine and bring the mixture to a boil. Add the chicken stock and bring the mixture back to a boil (BTB) and then reduce it to a simmer (RTS). Simmer the sauce until it becomes a chunky, saucy consistency. Season with salt.
  • Preheat the grill to medium-high heat.
  • Sprinkle the pork with crushed red pepper and a drizzle of oil. Grill the pork for 8 to 9 minutes on each side and 1 to 2 minutes standing it up on the fat edge to crisp that up. If the pork starts to burn, move it to a cooler spot on the grill.
  • Let the pork rest for 10 to 15 minutes after grilling. Cut each steak off the bone and slice. Be sure to serve the bone along with the steaks.
  • Serve garnished with the sauce.

6 tablespoons maple syrup
6 tablespoons balsamic vinegar
3/4 teaspoon salt
3/4 teaspoon coarsely ground pepper
4 boneless pork loin chops (1-1/2 inch thick and 12 ounces each)

Steps:

  • In a small bowl, whisk syrup, vinegar, salt and pepper until blended. Pour 1/2 cup marinade into a shallow bowl. Add pork chops; turn to coat. Cover and refrigerate 1 hour. Reserve remaining marinade for basting., Drain pork chops, discarding marinade. 1 cup orange juice
1/4 cup cider vinegar
1 tablespoon finely grated fresh ginger
2 tablespoons grated orange zest
3 pork tenderloin (about 3 pounds total)
1 cup orange marmalade
1 tablespoon finely grated fresh ginger
2 tablespoons light soy sauce
2 tablespoons cider vinegar
1 tablespoon Dijon mustard
salt & freshly ground black pepper

Steps:

  • To make the marinade: Combine the orange juice, vinegar, ginger, and orange zest in a small bowl.
  • Put the pork tenderloins in a shallow pan and pour the marinade over them. Refrigerate for 4 to 6 hours.
  • To make the Orange-Ginger Sauce: Melt the marmalade in a small pan. Add the ginger, soy sauce, cider vinegar, and mustard, stirring to combine; keep warm.
  • Prepare the grill with a medium-hot fire.To gauge the heat, hold your hand palm down about 4 inches above the grill. If you can hold it there for only 5-6 seconds it means you have a medium hot fire.
  • Remove the meat from the marinade and season it with salt and pepper. Grill, turning at least once, until an instant-read thermometer inserted in the center of the meat reads 150F, 15 to 20 minutes. Brush with some of the Orange-Ginger Sauce during the last 5 minutes of cooking. Allow the meat to rest on a cutting board tented with aluminum foil for a few minutes before slicing. Slice the meat 1/2 inch thick on the diagonal. Pass the remaining sauce at the table.

4 pork chops, double cut, center cut, bone in
1/4 cup apple cider vinegar
2 tablespoons extra-virgin olive oil
2 teaspoons minced ginger
1 teaspoon minced garlic
2 tablespoons fresh lemon juice
1 teaspoon salt
1 teaspoon pepper
1/4 cup white wine
1 cup sliced (1/4-inch) yellow onions
2 cups cored and sliced (1/4-inch) Granny Smith apples
1/2 cup raisins
2 tablespoons butter

Steps:

  • In a resealable plastic bag, add the chops, apple cider vinegar, 1 tablespoon extra-virgin olive oil, ginger, garlic, lemon juice, salt and pepper. Marinate for 30 minutes
  • Preheat oven to 350 degrees F.
  • In a large saute pan heat 1 tablespoon extra-virgin olive oil to almost smoking, then add pork chops, shaking off excess marinade. Brown on both sides, then place on a sheet pan and put in the oven for 20 minutes or until internal temperature reaches 135 degrees F.
  • In the same saute pan deglaze with wine then add onions, apples and raisins and cook until apples are soft and onions are translucent. Add butter salt and pepper, to taste, and keep warm.
  • Remove chops from oven and add to the apple mixture. Serve hot.

6 bone-in pork chops (loin or shoulder), cut 3/4 inch thick
Coarse salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil or vegetable oil
2 tablespoons unsalted butter
1 large white onion, sliced
2 to 3 apples, cored and sliced (about 3 cups)
1 cup beer, white wine, cider, or chicken broth

Steps:

  • Trim the chops of excess fat. Sprinkle generously with salt and pepper on both sides. Heat a 14-inch cast-iron skillet (if you have a smaller one, you'll need to work in batches) over high heat, and then swirl in the olive oil. Lay in the pork chops and don't move them for a few minutes, to assure a good golden sear forms. Turn and brown well on the second side for a total of about 10 minutes. Transfer the chops to a warm plate.
  • Swirl the butter into the pan. Add the onion and apples. Saute until the onion slices are lightly caramelized and the apples have begun to soften, about 8 minutes. Stir in the beer or other liquid. Return chops to the pan.
  • Cook until the pork is tender, about 15 more minutes (depending on the size of the chops), turning halfway through and covering the chops with the apple mixture. If the apple mixture needs a little thickening, transfer the chops to the warm plate again and simmer the mixture on high for a few minutes to reduce. Serve the chops over rice or mashed potatoes with a large spoonful of the apple-onion mixture over the top.

PORK PORTERHOUSE WITH SAUTéED QUINCE, APPLES, AND POTATOES



Pork Porterhouse with Sautéed Quince, Apples, and Potatoes image

This is not your mild-mannered pork chop! The pork porterhouse is two cuts of meat in one-just like its better-known cousin the beef porterhouse. From the short loin of the pig, the pork porterhouse (porkerhouse?) consists of the soft, luscious tenderloin on one side of the bone and the meatier loin on the other. The classic American accompaniment to pork is, of course, apples. But in place of the traditional applesauce, I like to serve these hefty chops with the time-honored duo of apples and potatoes. Called deux pommes, or two apples-one from a tree and one from the earth-the two are sautéed together until crispy and golden brown. To show off more of fall's cornucopia, I've added quince, "Eve's apple," to the mix. Slathering the chops with quince jam (membrillo in Spanish cuisine, cotognata in Italian) is a sophisticated nod back to that applesauce. Be sure to cut the quince, apples, and potatoes into similar-sized pieces, so when they're cooked they all look the same. The mystery is part of the fun; there's no telling which bite will be which pomme.

6 pork porterhouse, 8 to 10 ounces each, about 1 1/4 inches thick
1 recipe brine (page 214)
4 ounces quince paste (membrillo or cotognata) (see Sources)
2 tablespoons extra-virgin olive oil
Sautéed quince, apples, and potatoes (recipe follows)
1 bunch small dandelion greens, cleaned
1 pound medium Yukon Gold potatoes, ideally the size of the apples
6 tablespoons extra-virgin olive oil
3 cloves garlic, unpeeled, smashed
4 sprigs thyme, plus 1 tablespoon fresh thyme leaves
1 bay leaf
3 apples, peeled, cored, and cut into 8 wedges each
4 tablespoons unsalted butter
2 quince, peeled, cored, and cut into 12 wedges each
1/4 cup chopped flat-leaf parsley
Kosher salt and freshly ground black pepper

Steps:

  • Submerge the pork chops in the brine and refrigerate for 24 hours.
  • Light the grill 30 to 40 minutes before cooking, and remove the pork chops from the refrigerator. If they're still wet from the brine, pat them dry with paper towels. Take the quince paste out of the refrigerator and put in a warm spot to soften to a spreadable consistency.
  • When the coals are broken down, red, and glowing, brush the pork chops with the olive oil and place them on the grill. Cook them on the first side about 5 minutes, rotating them a couple of times. When they have nice color, turn them over and cook another 4 to 5 minutes, rotating them once or twice. The pork chops should be cooked to just under medium. Peek inside at the bone; they should still be a little pink, and when you press them with your thumb, they should be springy.
  • Arrange the hot sautéed quince, apples, and potatoes on a large warm platter. Scatter the dandelion greens over them. Slather the chops with the quince paste, and place them on top.
  • Preheat the oven to 400°F.
  • Toss the potatoes with 1 tablespoon olive oil, the garlic, thyme sprigs, bay leaf, and 1 teaspoon salt. Place in a roasting pan, cover with aluminum foil, and cook about 45 minutes, until tender when pierced. (Depending on the size, age, and variety of potatoes, cooking time will vary.)
  • When the potatoes have cooled, peel them. Cut the potatoes in half lengthwise, and then place them, cut side down, on a cutting board. Cut each half crosswise into four or five wedges.
  • While the potatoes are cooking, heat a large sauté pan over high heat for 2 minutes. Swirl in 1 tablespoon olive oil and wait 1 minute. Carefully place the apples in the pan, flat side down. Add 2 tablespoons butter, and season with 1 teaspoon thyme leaves, 1 teaspoon salt, and a pinch of black pepper. Turn the heat down to medium, and cook about 5 minutes, until the apples are a beautiful deep golden brown. Turn the apples over, and continue cooking until they're golden on the second side. They should be tender and cooked through. Transfer them to a plate to cool.
  • Repeat this process with the quince. (They will take a little longer to cook.)
  • Heat a large sauté pan over high heat for 2 minutes. Swirl in 2 tablespoons olive oil and wait 1 minute. Place the potato wedges carefully in the pan, and season with the remaining teaspoon thyme leaves, 1/4 teaspoon salt, and some freshly ground black pepper. Cook the potatoes about 8 minutes, until they are crispy on one side. (Don't try to move them or turn them if they are stuck to the pan; they will eventually release themselves if you're patient.)
  • Turn the potatoes over, add another tablespoon olive oil to the pan, and season the second side with 1/4 teaspoon salt. Cook another 3 to 4 minutes, and then add the apples and quince. Cook a few more minutes, tossing well to combine. Taste for seasoning, and add the parsley.
  • Brine the pork chops a day or two before serving. You can roast the potatoes and sauté the apples and quince in advance. Sauté the potatoes right before you grill the pork; you can keep them warm in the oven.

8 cups chicken stock
6 ounces frozen concentrated Granny Smith apple juice
1/4 cup tightly packed dark brown sugar
8 whole black peppercorns
Salt
1 1/2 cups maple syrup
1/4 cup prepared horseradish, drained
2 tablespoons ancho chile powder
1/2 cup ancho chile powder
1/2 cup pasilla chile powder
1/2 cup chopped garlic
1 center cut pork loin (9 bones)
2 tablespoons unsalted butter
1/2 cup coarsely chopped red onion
1 tablespoon minced jalapeno
2 tablespoons finely diced ginger
2 medium oranges, zest removed and finely sliced, flesh cut into segments
2 cups fresh orange juice
1/2 cup red wine vinegar
1/2 cup light brown sugar
2 tablespoons honey
6 medium Granny Smith apples, peeled, cored, halved and thinly sliced
2 tablespoons chopped cilantro
2 tablespoons finely diced red pepper
Salt and freshly ground pepper

Steps:

  • Combine the stock, apple juice, sugar and peppercorns in a medium saucepan over high heat and reduce to 3 cups. Season to taste with salt and strain through a fine strainer.Mix all ingredients until well combined.
  • Preheat oven to 400 degrees F. In a small bowl, combine the chile powders and garlic.
  • Season the pork loin to taste with salt and pepper and rub all surfaces with the chile mixture. In a large roasting pan, roast the loin until medium rare, about 40 minutes.
  • When cool enough to handle, cut between the bones into 8 chops. In a heavy ridged grill pan, sear the chops 3 minutes on each side until grill marked. Place on a serving platter and brush with maple glaze. Serve with sauce and chutney on the side.
  • In a large saucepan over medium heat, melt the butter and saute the onion and jalapeno until the onion is translucent.
  • Add the ginger, orange zest, orange juice, vinegar, brown sugar and honey and cook until the sauce is reduced by half and has a glazed appearance. Reduce the heat to low, add two thirds of the apple slices, and cook until the fruit is just tender.
  • Turn off the heat and gently fold in the remaining apples and the orange segments. Pour the chutney into a bowl and allow to cool to room temperature.
  • Mix in the cilantro, red bell pepper and salt and pepper to taste.
