Balsamic Glazed Grilled Plums with Vanilla Ice Cream image

4 ripe plums, California red or dark skinned, halved and pitted
Extra-virgin olive oi , for drizzling
1/2 cup balsamic vinegar
1 tablespoon brown sugar
1 teaspoon vanilla extract
1 tablespoon lemon juice
1/4 teaspoon ground black pepper
1 pint vanilla bean ice cream

Steps:

  • Preheat a grill pan to high heat. Drizzle fruit with oil to keep it from sticking and grill plums 3 minutes on each side.
  • While fruit is grilling, pour balsamic vinegar into a small pot and place pot over medium high heat. When vinegar heats to a boil, reduce vinegar by half, 1 to 2 minutes.
  • Combine sugar, vanilla and lemon juice and pepper in a small bowl. Whisk in warm balsamic vinegar.
  • Place hot, grilled fruit on dessert plates. Drizzle the balsamic glaze over fruit and serve.

4 ripe plums, halved and pitted
1/2 cup crumbled cookies
Vanilla ice cream, for serving

Steps:

  • Heat a grill to medium. Clean and lightly oil hot grill. Grill plums, cut side up, until charred, 2 minutes. Flip and cook until fruit is soft, about 5 minutes. Transfer plums to a platter, sprinkle with cookies, and serve with ice cream.

This is a slightly tweaked Rachael Ray recipe. I'm planning on trying it with raspberry balsamic vinegar. I also plan on spraying the plums with non-stick spray and grilling them on a regular gas grill, since I don't have a grill pan.

6 tablespoons honey
3 cups vanilla frozen yogurt

Steps:

  • Heat a grill to medium.
  • Toss plums and 2 tablespoons honey in a large bowl.
  • Liberally brush a grill rack with oil.
  • Grill the plums, flesh side down, on the rack until lightly browned.
  • Turn and grill on skin side until plums soften and are warmed through
  • Serve 2 plum halves with 3/4 cup yogurt immediately.
