BACON AND CHEESE STUFFED PLANTAINS RECIPE BY TASTY
Here's what you need: ripe plantains, butter, bacon, mozzarella cheese

Steps:
- Pre-heat the oven to 200°C (400°F).
- Remove the peel from the plantains.
- Cover in melted butter.
- Bake for around 20 minutes then flip the plantains, cooking for another 20 minutes until golden brown on both sides.
- Chop the bacon into bits and fry until crispy.
- Cut the cooked plantains down the middle.
- Stuff with the mozzarella, bacon and extra mozzarella.
- Bake for another 5 minutes until the cheese has melted.
- Enjoy!

Steps:
- 1. Brush grill with vegetable oil. 2. Place plantain, sliced side down on the grill. Cover grill and cook on medium-high heat for 15 minutes. 3. While the plantain is grilling, combine the honey, oil and zest and juice of the lime. Uncover grill, flip plantains over and brush honey-lime mixture over grilled plantain. 4. GRILLED RIPE PLANTAINS (PLáTANOS MADUROS A LA PARRILLA)

- Prepare the butter glaze
- Place the butter and sugar in a small saucepan over medium heat and cook until the butter is melted and the sugar is dissolved in it. Add the vinegar and stir well. Remove from the heat and set aside.
- Prepare, grill, and serve the plantains
- Heat your grill to high (550°F) and close the lid. Wait at least 15 minutes before lowering the heat to medium-high (450°F) and continuing. Oil the grill grates with a vegetable oil-soaked paper towel held with a long pair of tongs.
- Slice the unpeeled plantains in half lengthwise and place them cut side down on the grill. Close the lid and cook for 15 minutes. Turn the plantains over and baste the cut sides of the plantains with the butter glaze. Close the lid and continue cooking for another 15 minutes. Brush a bit more glaze on the plantains before removing them from the grill.
- Serve the plantains in their skins while hot from the grill.
PLANTAIN MASH WITH BACON

Steps:
- Heat a Dutch oven over medium-high heat and add the onion, garlic and bacon. Cook until the bacon is crisp, about 12 to 15 minutes. Stir in the stock and 1 cup of the heavy cream. Reduce the heat to medium-low and add the plantains. Simmer the mixture until the plantains are tender, about 5 to 8 minutes. Add the remaining 1/4 cup of heavy cream and the salt and pepper. Mash together until well combined. Transfer to a serving bowl and serve.
- *Cook's Note: Add a little more stock if the mash is too dry.
GRILLED PLANTAINS WITH RUM-BROWN SUGAR GLAZE
Steps:
- Heat grill to high. Place rum, brown sugar, and salt in a small saucepan and cook until the sugar has melted and the mixture reduces and thickens slightly. Stir in butter until melted. Remove from the heat.
- Brush plantains with oil on both sides and grill until golden brown and caramelized, about 3 to 4 minutes per side. Brush with the glaze during the last few minutes of grilling. Remove from the grill and brush with more of the glaze before serving.

- Spread 3 tablespoons butter on one side of each slice of bread. Place bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with sliced brie. Sprinkle cheddar cheese mixture evenly over brie; add bacon. Top with remaining bread slices, toasted side facing inwards. Spread the butter-mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.
