- pesto for spread
2 cup(s) fresh basil
2 cup(s) fresh arugula leaves
1/4 cup(s) fresh flat-leaf parsley leaves
3/4 cup(s) walnuts
4 tablespoon(s) olive oil
4 clove(s) garlic cloves, peeled
3/4 cup(s) parmigiano-reggiano cheesefresh grated

Steps:

  • Put first 6 ingredients in a food processor. Pulse 7-8 times until chunky/smooth, add cheese and pulse a couple more times.
  • (If it seems a bit dry for spreading, add a bit more oil) (Any leftovers can be stored in refrigerator, or it is yummy stirred into cooked pasta)
  • Fry 6 slices of bacon and drain Slice one avocado Slice one tomato Spread 4 slices sour dough bread or nutty whole wheat bread with butter
  • Spread opposite sides of bread with pesto, place sliced avocado over pesto on 2, and top with 3 pieces of bacon and tomato slices, and top with other 2 pieces of bread. Grill on both sides until golden browned...ENJOY!!

2 cups shredded Cheddar cheese (8 oz)
8 slices white or whole wheat bread
1 small onion, chopped (1/3 cup)
8 slices bacon, crisply cooked
1 medium tomato, thinly sliced
1 medium avocado, pitted, peeled and thinly sliced
1/3 cup butter, softened

Steps:

  • Place 1/4 cup cheese on each of 4 bread slices. Divide onion, bacon, tomato and avocado evenly onto bread slices. Top with remaining cheese and bread slices. Spread 2 teaspoons butter over each top slice of bread.
  • Place sandwiches, buttered side down, in 12-inch skillet over medium heat. Spread remaining butter over top slices of bread. Cook uncovered about 5 minutes or until bottoms are golden brown. Turn; cook 2 to 3 minutes longer or until bottoms are golden brown and cheese is melted.

4 slices lightly toasted bread, divided
2 tablespoons basil pesto
1 tomato, sliced

1 tomatoes, sliced

8 slices monterey jack pepper cheese
