These healthy, gluten free Grilled Mini Meat Loaves are the answer to your "quick dinners for busy weeknight meals" prayers. The meat loaves only have 5 simple ingredients and the sauce takes all of 5 minutes to stir together.

Number Of Ingredients 12

1/3 cup gluten-free quick-cooking rolled oats
1/3 cup finely chopped red onion
¼ cup coconut aminos
¼ to ½ teaspoon ground black pepper or crushed red pepper
2 pounds ground beef
¼ cup tomato paste*
1 tablespoon coconut aminos
1 tablespoon honey
2 teaspoons rice vinegar
2 teaspoons water
½ teaspoon finely chopped ginger (optional)
Chopped fresh chives (optional)

Steps:

  • For the meat loaves, in a large bowl combine oats, onion, coconut aminos, and pepper. Add beef; mix well. Shape meat mixture into 8 patties, each about ¾-inch-thick. For the sauce, stir together tomato paste, coconut aminos, honey, vinegar, water, and, if desired, ginger. If desired, transfer 1 to 2 tablespoons of the sauce to a separate bowl for brushing on the meat loaves after they are finished grilling.
  • For a charcoal or gas grill, grill patties directly over medium coals or heat for 16 to 20 minutes or until an instant-read thermometer inserted into sides of patties registers 160°F, flipping** patties once halfway through grilling and brushing tops with sauce for the last 5 to 7 minutes of grilling.
  • If desired, brush meat loaves with any sauce you had set aside before grilling. Garnish tops of meat loaves with chives if desired.

4 ounces cheddar cheese
2 pounds extra lean ground beef
1/4 cup plain breadcrumbs
1 egg
2 teaspoons seasoned salt
1 teaspoon garlic powder
2 teaspoons Worcestershire sauce
2 tablespoons Stubb's Original Bar-B-Q Sauce (plus more for topping)

Steps:

  • Preheat the grill to medium-high heat. Take an 8-ounce block of cheddar cheese and cut it in half. Take one of the halves and cut it into 6 equal slices. Set aside.
  • In a large bowl, combine the ground beef, bread crumbs, egg, seasoned salt, garlic powder, Worcestershire sauce, and 2 tablespoons of Stubb's Bar-B-Q Sauce. Use a fork to get everything stirred together well. Divide the meat mixture into 6 equal amounts. One at a time, take the portion of meat and form it into an elongated patty. Place one slice of cheese in the middle and form the meat around it, being sure to seal the cheese in completely. Reshape the meat into an elongated patty.
  • Place a large piece of aluminum foil over one side of the grill and reduce the heat on that side to low. Place the mini loaves on the foil and cook for about 15 minutes. Baste each of the mini loaves with more bar-b-q sauce and cook for 10 to 15 minutes more or until the juices run clear and the meat is cooked through.

1/2 cup quick-cooking oats
1/4 cup chopped green pepper
1 egg
1 teaspoon dried parsley flakes

2 pounds lean ground beef

Steps:

  • In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. Shape into two loaves. Place a sheet of heavy-duty foil in center of grill. Place meat loaves on foil (do not seal foil)., Prepare grill for indirect heat; grill meat, covered, over indirect medium heat for 50 minutes or until meat is no longer pink and a thermometer reads 160°. Brush tops with additional ketchup if desired. Let stand for 10 minutes before slicing.

1 lb lean (at least 80%) ground beef
1/2 lb ground pork
1/2 cup Original Bisquick™ mix
1/4 teaspoon pepper
1 small onion, finely chopped (1/4 cup)
1 egg

Steps:

  • Heat oven to 450°F. In small bowl, stir ketchup and brown sugar until mixed; reserve 1/4 cup for topping. In large bowl, stir remaining ingredients and remaining ketchup mixture until well mixed.
  • Spray 13x9-inch pan with cooking spray. Place meat mixture in pan; pat into 12x4-inch rectangle. Cut lengthwise down center and then crosswise into sixths to form 12 loaves. Separate loaves, using spatula, so no edges are touching. Brush loaves with reserved 1/4 cup ketchup mixture.
  • Bake 18 to 20 minutes or until loaves are no longer pink in center and meat thermometer inserted in center of loaves reads 160°F.

1 ½ pounds ground pork
2 cups dry bread crumbs
1 cup finely chopped sweet onion (such as Vidalia®)
1 egg, beaten
1 teaspoon Worcestershire sauce
1 teaspoon minced garlic
1 teaspoon dried tarragon
1 teaspoon sea salt
1 teaspoon ground black pepper
½ cup barbeque sauce
½ cup ketchup

Steps:

  • Preheat an outdoor grill for medium heat, and scrape the grates clean. Spray grates with nonstick cooking spray.
  • In a bowl, mix together the ground beef, ground pork, bread crumbs, onion, egg, Worcestershire sauce, garlic, tarragon, sea salt, and black pepper. 1 small onion, finely diced
1/3 cup Italian seasoned breadcrumbs
2 tablespoons chopped fresh parsley
1 teaspoon chili powder

1/3 cup chopped fresh parsley
1 large egg
3 tablespoons Worcestershire sauce
1 small onion, finely minced

1 1/2 pounds meatloaf mix (ground beef, pork and/or veal)

Steps:

We don't eat beef so we use ground pork and ground turkey for this, but you could use any ground meat you'd like. This is a fun way to cook a meatloaf that is great for a hot summer day when you don't want to turn on the oven. We use a charcoal grill. I usually don't measure the seasoning, so go by your own tastes.

  • Preheat an outdoor grill for medium heat.

1 package (1 oz) onion recipe and dip soup mix (from 2-oz box)
1 egg
3/4 cup milk
1/2 cup Progresso™ plain bread crumbs
1/3 cup ketchup
1 bag (1 lb 4 oz) refrigerated new potato wedges
3 cups ready-to-eat baby-cut carrots
Fresh parsley, if desired

Steps:

  • Heat gas or charcoal grill. Cut 6 (18x10-inch) sheets of heavy-duty foil; spray with cooking spray. In medium bowl, mix beef, dry soup mix, egg, milk and bread crumbs. Shape into 6 loaves, 4x2 1/2x1 inch. Place 1 loaf on each foil sheet; top each with about 1 tablespoon of the ketchup. Place about 1/2 cup potatoes and 1/2 cup carrots around each loaf.
  • Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packets on grill.
