Vegetable oil

Chipotle Hot Sauce, recipe follows
Blue Cheese-Yogurt Dip, recipe follows
1 1/2 cups red wine vinegar
3 tablespoons Dijon mustard
2 to 3 tablespoons chipotle pepper puree (depending on how spicy you like it)
3 tablespoons honey
3 tablespoons vegetable oil
Salt and freshly ground pepper
1 stick unsalted butter, cut into pieces
2 tablespoons ancho chile powder
1 pint thick Greek yogurt
3/4 cup crumbled domestic blue cheese
2 tablespoons finely chopped red onion
3 tablespoons finely sliced scallions
Salt and freshly ground pepper

Steps:

  • Heat grill to high. Toss wings in a few tablespoons of oil and season with salt and pepper. Place on the grill in single layers and grill until golden brown on both sides and just cooked through, about 4 to 5 minutes per side.
  • Whisk together the vinegar, Dijon mustard, chipotle puree, honey, and oil in a medium bowl. Season with salt and pepper, to taste.
  • Melt butter in a large skillet or a large pot on the grates of the grill. Add the hot sauce mixture and bring to a boil. Whisk in the ancho chile powder and season with salt, to taste. Add the wings and cook, stirring, for 2 to 3 minutes. Serve with Blue Cheese-Yogurt Dip.
  • Combine all ingredients in a bowl and season with salt and pepper, to taste. Cover and refrigerate for at least 30 minutes before serving.

5 pounds chicken wings
¼ teaspoon poultry seasoning salt, or to taste
1 dash garlic salt
freshly ground black pepper to taste
1 (8 ounce) bottle Buffalo wing sauce (such as Frank's RedHot®)
¼ cup butter

Steps:

  • Cut wings into sections and discard tips. Season with poultry seasoning salt, garlic salt, and black pepper.
  • Preheat grill for medium heat and lightly oil the grate.
  • Cook wings on the grill, turning occasionally, until skin is golden brown, about 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Remove wings from grill; keep grill hot.
  • Pour hot sauce into a deep, microwave-safe serving dish; add butter. Heat in a microwave oven until butter is melted, about 1 minute. Stir to combine.

1/2 cup ketchup
1/4 cup balsamic vinegar
2 tablespoons brown sugar
4 teaspoons garlic granules (PLEASE don't use garlic powder or garlic salt!)
4 teaspoons Worcestershire sauce
3 teaspoons Tabasco sauce (yes, THREE teaspoons)
2 teaspoons Dijon mustard
2 teaspoons paprika
2 teaspoons chili powder
20 chicken wings, wing tips removed
extra virgin olive oil

Steps:

  • In a medium bowl whisk together the first 9 ingredients (ketchup through chili powder).
  • Rinse the chicken wings under cold water and pat dry with paper towels.
  • Place in a large, resealable plastic bag and pour in the marinade.
  • Press the air out of the bag and seal tightly.
  • Turn the bag to distribute the marinade.
  • Place in a bowl and refrigerate for 4 to 6 hours, turning occasionally.
  • Remove the wings from the bag and discard the marinade.
  • Lightly brush or spray the wings with olive oil.
  • Sear over direct, medium heat on the grill until well marked, 4-6 minutes, turning once halfway through searing time.
  • Continue grilling over INDIRECT medium heat until the meat is no longer pink near the bone, 10-12 minutes.

  • Heat grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 400ºF.

1 cup hot sauce (more or less to taste)
5 lbs chicken wings (tips removed)

Steps:

  • Whisk the dressing and the one cup Frank's hot sauce together in a small bowl.
  • Add to chicken wings and marinate about 30 minutes to an hour while grill is heating up.
  • Spray cooking area on grill with cooking spray.
  • Add wings to hot grill. Watch closely as they do tend to burn quickly.
  • Grill for about 25-30 minutes.

I got this recipe years ago from my Aunt and Uncle. These are the BEST grilled hot wings I EVER had!

1 (5 lb) bag of frozen chicken wings (they are called wingettes, wings cut in 2 pieces tips discarded)
1 (23 ounce) bottle of frank's original hot sauce
3/4 cup unsalted butter, melted
2 (8 ounce) packages Good Seasonings Italian salad dressing mix

Steps:

  • Wash wingettes, pat dry.
  • Add all ingredients in large bowl (I use a large pot). Mix to combine.
  • Refrigerate overnight.
  • Take wings out of refrigerator 1/2 hour before grilling. Do not discard marinade.
  • Preheat grill to high, add wingettes cook for about 3 minutes flip and baste with remaining marinade (Do this again after 2nd flip). Total cook time should be approximately 7 minutes per side.

30 chicken wings (Costco sells these 6 pack plastic bags carrying about 5 wings in each)
2 -3 tablespoons canola oil (or Vegetable oil)
salt and fresh ground pepper
1 1/2 cups red wine vinegar
1/2 cup orange juice
3 tablespoons Dijon mustard
2 -3 tablespoons chipotle pepper puree (depends on how spicy you like it)
3 tablespoons honey
3 tablespoons canola oil (or Vegetable oil)
2 tablespoons peanut butter
salt and fresh ground pepper (To taste)
8 tablespoons unsalted butter (1 stick cut into pieces)

Steps:

  • Heat grill to high with cover closed till you hit about 400 degrees. Toss wings in a few tablespoons of oil and season with salt and pepper on both sides. Place on the grill in single layers and grill until golden brown on both sides about 10 to 12 minutes per side.
  • (For those that are not too familiar with grilling, preheating your grill to 400 degrees is a great way to clean your grill before cooking a new item. Simply wait till your covered grill hits 400 degrees and then using a grill cleaning brush, scrub off the chard left overs. Heating your grill up to 400 degrees also creates in my opinion the best heat to start off your grilling as you'll for the most part not want to cover your grill again through out the cooking process. It's also equally as important to watch your wings to make sure your wings aren't being overly chard on the outside, this just comes with practice!).
  • Puree the Chipotle peppers in a processor with the adobe sauce that they usually come with. You can buy these Chipotle peppers with adobe sauce in almost any large market. For this recipe you'll only need to buy the smallest can, since this recipe only calls for about 2 to 3 tablespoons worth.
  • On a medium heat setting on your stove, combine together the vinegar, orange juice, Dijon mustard, chipotle puree, honey, oil, and peanut butter in a medium sauce pan. Season with salt and pepper, to taste. After cooking the mixture on medium for 5 mins, reduce (allow sauce to thicken) this mixture on a low to medium heat setting for about 10 mins, stirring occasionally. (meaning you'll need to have the sauce pan uncovered during the whole processes to allow the moisture to escape).
  • Pour the hot sauce mixture into a large wok or a large pot and bring to a boil(About medium to high stove setting should do the trick). Add the wings in batches (about ten wings depending on how large your wok or pot is) and coat for about 2 minutes making sure that the wings are well coated. Once done, plate them and enjoy!

½ (17 ounce) bottle sriracha sauce
1 ½ tablespoons grated habanero peppers, or to taste
1 tablespoon butter, melted
1 dash ground paprika
1 dash ground black pepper

  • Combine chicken, sriracha sauce, habanero peppers, butter, paprika, and black pepper together in a resealable container. Marinate in the refrigerator, 4 to 5 hours.
  • Preheat grill for high heat and lightly oil the grate. Lay a sheet of aluminum foil over the grill and cut slits into it.
