Steps:
- Spread bread slices with mayo.
- Top 1 of the bread slices with ham, tomatoes, cheese and remaining bread slice.
- Cook, over med heat, in skillet or on griddle that has been sprayed with no stick cooking spray, for 5 minutes on each side or until lightly browned.

GRILLED HAM AND ASPARAGUS PANINI
Grilled Ham and Asparagus Panini Recipe from Festival Foods. This is by far my most favorite sandwich of the month. I like mine with roasted asparagus and sourdough bread. Another great option is using some melty Fontina or farmers cheese. I have also made this with thick pita bread and it adds another dimension. I love to make this sandwich for those days when you want something from those expensive Bistros, but also want to make it your own. Steps:
- In a small bowl mix garlic salt and butter together. Brush one side of each of the pieces of bread. In another bowl mix mayo and pesto sauce.
- Spread mayo/pesto on other side of each slice of bread. Top 1/2 of slices of bread with ham, asparagus spears, red pepper and Asiago.
- Top with remaining bread slices and cook in a panini grill or in a large skillet with a little extra butter (like you would a grill cheese, pressing down with a heavy pan on top.).
- Cook until bread is toasted and sandwich is heated through.
- Serve with fresh fruits.

MERTZIE'S GRILLED APPLES, HAM & SWISS PANINI
My obsession with my panini press continues! This is a nice little sandwich, especially for the fall. The dijon balances the sweet apples & cinnamon nicely. My friend just told me about using mayonnaise to coat the outer slices of bread for panini, and it is wonderful!

- 1. Ingredients listed above are for each sandwich. Heat the panini press. Toss the apple slices with cinnamon & grill these for a few on the panini press.
- 2. Spread one side of each bread slice with mayonnaise. (This will be the outer side to cook. Makes a lovely crust).
- 3. Spread inside of bread (one slice) with dijon. Lay slices of ham on top. Then, layer with Swiss, and grilled apples. Add some fresh spinach leaves, if you like. Put other slice of bread on top & grill on panini press until nice & golden. Enjoy!
