Steps:
- Preheat grill. Combine the garlic and butter in a small bowl and season with salt and pepper to taste. Spread 1 tablespoon of butter on one side of each slice of bread. Grill butterside down until lightly golden. Turn each slice over, sprinkle with parsley and grill an additional 20 seconds.
GRILLED ANDOUILLE SAUSAGE WITH SHRIMP, CLAMS, MUSSELS AND GARLIC WITH GRILLED COUNTRY BREAD WITH ANCHOVY BUTTER
Steps:
- For the Country Bread: Combine the butter and anchovies in a food processor and process until smooth; season with salt and pepper.
- Grill the bread until lightly golden brown on both sides, about 20 seconds per side. Remove from the grill and slather some of the anchovy butter on 1 side. Cut each slice in half, while still hot.
- For the sausage and shrimp: Heat the grill to high.
- Brush the sausage with oil and grill until golden brown on both sides and just cooked through. Remove to a platter.
- In a large bowl, toss the shrimp with oil, anchovy butter, and season with salt and pepper, to taste. Grill until slightly charred on both sides and just cooked through, about 1 1/2 minutes per side. Remove to the platter with the sausage.
- Heat a few tablespoons of oil in a large stockpot on the grates of the grill or the side burner of the grill. Add the garlic and cook until lightly golden brown. Stir in the wine, clam juice and thyme, bring to a boil and cook until reduced by half. Add the clams and mussels, cover the pot and cook until all have opened, discarding any that have not opened. Remove with a slotted spoon to a large bowl. Add the sausage and shrimp to the broth and cook for 1 minute. Stir in the butter and parsley and cook for another minute. Season with salt and pepper, to taste. Return the clams and mussels to the pot and cook until just warmed through, about 1 minute. Serve in large bowls with the grilled bread. Garnish with more parsley.
GRILLED CHEESY GARLIC BREAD
This takes only minutes to make and is perfect to throw on the grill just before serving dinner. I like to make this with different cheeses, such as Parmesan or Gruyere, or whatever I happen to have on hand. Keep an eye on it constantly, as it tends to burn easily!

- Preheat an outdoor grill for high heat and lightly oil the grate.

- Put the garlic, rosemary, and olive oil in a small skillet and heat slowly until the oil just begins to simmer. Turn the cloves over in the oil and saute for 10 minutes longer. Remove from the flame and let cool for 15 minutes.
- Remove the garlic cloves from the oil (reserve the oil) and mash them to a paste with a knife or mortar and pestle. Take the leaves off the rosemary sprig and finely mince them. In a bowl, combine the garlic paste, minced rosemary, and butter and stir until smooth. Season with salt and pepper.
- Cut the baguettes in half lengthwise. Spread the cut sides with the seasoned butter and drizzle with a little of the oil used to bake the garlic. Sprinkle with the Parmesan, close the baguettes back up and wrap each in aluminum foil. Cook over medium heat on the grill or in a bed of slow coals for 10 to 15 minutes. Cut into 2-inch-wide slices and serve immediately.

- Finely mince garlic; season with salt. Place the flat side of a knife blade on top of garlic and press down firmly to mash into a paste. In a small bowl, combine garlic paste, butter, and parsley. Season with salt and pepper.

COD AND CHORIZO STEW WITH GRILLED GARLIC BREAD

- Heat the 1/4 cup olive oil in a large saute pan or deep skillet over medium heat until shimmering. Add the onions and chopped garlic and season with salt and pepper. Cook, stirring occasionally, until softened and just starting to brown, 6 to 8 minutes. Add the chorizo and cook, stirring occasionally, until slightly rendered, 3 to 5 minutes.

- Cut bread in half lengthwise, and cut in half crosswise if very long. Brush cut surfaces of bread lightly with olive oil. Under a broiler or on a grill, toast bread, turning a few times, until cut surfaces are golden brown. (If using a broiler, you can place bread directly on the oven rack.)

GRILLED HERB GARLIC BREAD

- Prepare grill for cooking.

GRILLED GARLIC BREAD
I was first inspired by my brother putting basic garlic bread in foil on the grill - I got a bit carried away in going beyond basic - and decided the foil just gets in the way! This has become a favorite of family and friends and I make it all summer long. When the weather turns cold you can cook it under the broiler. This recipe is very flexible, adapt the seasonings and add-ins to your family's preferences. Don't use the rustic artisan breads for this - head to the grocery and buy the inexpensive store bakery loaves.

- Slice bread all the way through top to bottom, make slices about 1- 1 1/2 inches thick, set aside.
- Put all ingredients in Food processor, blender or use an immersion blender with everything in a bowl or 2 cup glass measuring cup (this is my favorite method, the blender is my last choice). Zizz everything up until there are no more chunks of anything. Taste the mix and adjust - some garlic is mild some have more bite - you want a good strong garlic taste. The mix will be kind of soupy, it firms after chilling if you have leftovers - when you go to use it again let it soften a few minutes until spreadable.
- If you add cheese you might not want to add the salt, especially if you use the kind in a can - I usually add fresh and like it with a little salt. Though the cheese can cause a little sticking on the grill, it tastes great and worth a little clean up.( If doing this in the broiler - don't add the cheese to the mix - but sprinkle it on the bread after you turn it over and broil till toasty. ).
- Spread a nice thin coat of butter mix on both sides of you bread. I usually stack them on a cookie sheet if I'm using the whole loaf - for just the two of us I use 4 slices and save the rest for another day.
- I usually grill the bread when everything else is almost done, cooking time varies with your grill and whether you're using gas or charcoal.
- Put the bread on the grill, check it often you want it kind of golden toasty or a little darker - sometimes the edges get over cooked in spots it's ok . Move the bread around as needed to keep from burning, My gas grill is hotter in the center so I have to spin the bread on the edges to keep it even - grill both sides of the bread, it usually takes a couple of minutes per side, serve ASAP Great with wine or a cold beer - I like to dip it in barbecue sauce.
- Remember - this is flexible - you can leave out all the extras except for the garlic - or add other seasonings like oregeno. Enjoy!
- Important - Use the butter mix within a week or freeze the leftovers.

- Preheat the oven to 400 degrees F.
- Mash the garlic powder, parsley, sugar, seafood seasoning, garlic and salt into the softened butter and blend very well.
- Spread the garlic butter on one side of each slice of bread. Arrange the bread, buttered-side down, on a work surface. Layer four of the slices with a slice each of the American cheese, mozzarella and Gouda; be sure that the mozzarella is in the middle. Top with the remaining 4 bread slices, buttered-side up.
- Heat a grill pan over medium heat until hot; brush with the oil.
- Add the sandwiches to the pan. Cook until grill marked, 30 seconds per side, then transfer to a baking sheet. Bake until the cheese is melted through, 10 minutes. Serve immediately.
