4 ears corn
4 tablespoons olive oil, divided
1 tablespoon salt, plus more to taste
1 teaspoon black pepper, plus more to taste
2 lb flank steak
1 tablespoon smoked paprika
2 tablespoons brown sugar
2 teaspoons chili powder
2 teaspoons onion powder
2 teaspoons ground cumin
2 teaspoons chipotle powder
2 teaspoons garlic powder
canola oil, for greasing
3 red fresno chilies, seeded and sliced
1 avocado, chopped
½ red onion, chopped
1 cup cherry tomato, halved
2 jalapeñoes, sliced
1 tablespoon honey
½ cup lime juice

Steps:

  • In a medium bowl, drizzle the corn with 2 tablespoons of olive oil and season with salt and pepper to taste. Massage the corn until fully coated. Set aside.
  • In a small bowl, combine the paprika, salt, brown sugar, chili powder, onion powder, cumin, garlic powder, chipotle powder, and black pepper and mix together.
  • Sprinkle the dry rub all over both sides of the flank steak. Rub in the spices.
  • On a heated grill or grill pan greased with canola oil, add the seasoned flank steak and cook until it begins to char slightly, about 3 minutes each side. Remove from the grill and let rest for at least 15 minutes to cool and keep the juices inside.
  • Add the seasoned corn to the grill pan. Cook until charred slightly, 3-5 minutes per side. Remove the corn from the grill and set aside to cool.
  • Set a small bowl upside-down inside a large bowl. Stand the corn cobs on the small bowl and cut off the kernels. Remove the small bowl.
  • Add the chiles, avocado, red onion, cherry tomatoes, jalapeños, lime juice, honey, salt, pepper, and the remaining 2 tablespoons of olive oil. Mix to combine.
  • Cut the meat into ½ inch (1 cm) slices.
  • Top with the corn salad and serve.

6 tablespoons olive oil
1 teaspoon Dijon mustard
1 clove garlic, minced

1 ½ pounds flank steak (about 1-inch thick)
3 teaspoons balsamic vinegar
½ pound quality white cheddar cheese (such as Beecher's Flagship)
1 pint cherry tomatoes
1 (5 ounce) package arugula
1 drizzle extra-virgin olive oil
Kosher salt and freshly cracked black pepper

Steps:

  • Whisk together the 3 tablespoons balsamic vinegar, 6 tablespoons olive oil, Dijon, garlic, shallot, salt, and pepper. Place steak in a zip-top bag, pour balsamic mixture over, seal tightly, and refrigerate, 8 hours or overnight.
  • Heat grill and add marinated steak. Grill each side of the steak for 5 minutes, turning 90 degrees after 2 1/2 minutes to create a diamond mark on the steak. Remove from grill once internal temperature reaches 140 degrees F (60 degrees C). Brush with 3 teaspoons balsamic vinegar, season with salt, then cover and let rest for 10 minutes.
  • While steak is resting, grate cheese and slice cherry tomatoes in half. Cut the steak into thin slices and serve over a bed of arugula. Garnish with cherry tomatoes, cheese, a drizzle of extra-virgin olive oil, and freshly cracked pepper.

1/4 cup olive oil
1/3 cup balsamic vinegar
2 tablespoons orange juice
1 tablespoon minced garlic
1/2 teaspoon chili flakes
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 1/4 pound flank steak, trimmed of all visible fat
4 large portobello mushroom caps (about 3/4 to 1 pound), wiped clean with a paper towel
1 tablespoon water
2 teaspoons Dijon mustard
3/4 pound green beans, trimmed
1 (5-ounce) bag baby spinach leaves (5 cups baby spinach, lightly packed)
4 vine-ripened tomatoes (1 pound), each sliced into 8 wedges
1/2 small red onion, thinly sliced

Steps:

  • Make marinade:
  • Combine 2 tablespoons olive oil, 3 tablespoons balsamic vinegar, orange juice, 2 teaspoons minced garlic, chili flakes, and 1/4 teaspoon each salt and pepper in a bowl and whisk. Place steak and mushrooms in a glass baking dish or sealable plastic bag and pour marinade on top. Marinate in the refrigerator for at least 1 or up to 4 hours.
  • Make dressing:
  • Combine remaining 2 tablespoons olive oil, 3 tablespoons vinegar, 1 teaspoon minced garlic, water, mustard, and remaining 1/4 teaspoon each salt and pepper. Whisk until incorporated.
  • Place green beans in a steamer basket over a few inches of boiling water and steam until tender-crisp, about 3 minutes. Allow to cool in the refrigerator, or to cool quickly, drain and plunge in a bowl of ice water for 2 minutes. Drain and reserve.
  • Spray a grill or grill pan with nonstick cooking spray and heat over medium-high heat. Remove steak and mushrooms from marinade, and discard marinade. Grill steak until medium-rare and mushrooms until cooked through but still juicy, about 4 to 5 minutes per side for both steak and mushrooms. Remove to a cutting board and let rest about 10 minutes. Cut steak across the grain into 1/4-inch slices; cut mushrooms into 1/4-inch slices.
  • To assemble salad, toss steak slices, mushroom slices, spinach leaves, tomatoes, green beans and onions with dressing. Divide among 4 plates.

1/3 cup balsamic vinegar

1 plum tomato, cut into wedges

1 tablespoon grapeseed oil or olive oil

1/2 teaspoon honey
1 1 1/2-pound flank steak
Pepper and watermelon salad:
1/4 cup hot chili sauce (such as sriracha)*
1/4 cup grapeseed oil or olive oil
3 tablespoons seasoned rice vinegar
1 1/4 teaspoons honey
4 large bell peppers, preferably assorted colors, cut into 1/2-inch squares
2 tablespoons minced red jalapeño chiles
2 cups 1/2-inch cubes seedless watermelon

  • For steak: Whisk all ingredients except flank steak in 13 x 9 x 2-inch baking dish. Add steak; turn to coat. Cover and let marinate at room temperature 2 hours, turning occasionally. Alternatively, cover and chill at least 4 hours and up to 1 day. Bring to room temperature before grilling.
  • For pepper and watermelon salad:
  • Whisk hot chili sauce, oil, vinegar, and honey in small bowl; season dressing with salt and pepper. Place peppers and chiles in large bowl. Toss with 6 tablespoons dressing. 1 tablespoon Dijon mustard
Kosher salt and freshly cracked black pepper

1 medium shallot, grated
1/4 cup vegetable oil, plus 1 tablespoon, divided
2 pounds flank steak
1/4 cup sherry vinegar
2 tablespoons minced shallots
2 teaspoons Dijon mustard
1 clove garlic, grated
1/2 cup extra-virgin olive oil
Kosher salt and freshly cracked black pepper
2 small bunches champagne grapes, broken into clusters, about 1 pound
1/2 pound bitter greens mix (radicchio, arugula, romaine, watercress, endive)
3/4 cups crumbled blue cheese
1/4 cup toasted pecans, chopped

Steps:

  • For the steak: In a small bowl, mix together the Worcestershire sauce, brown sugar, mustard, 2 teaspoons salt, 1 teaspoon pepper, garlic and shallots. Gradually whisk in 1/4 cup vegetable oil until emulsified. Place the steak in a plastic zip-top bag. Pour the marinade over the steak and seal the bag. Marinate for at least 1 hour at room temperature or refrigerate overnight. Allow the steak to come to room temperature before cooking.
  • When ready to cook, preheat the broiler and set the oven rack at the highest point, as close to the flame as it can get and still fit the steak below. Fit a wire rack onto a baking sheet.
  • Place the marinated steak on the prepared baking sheet (or a broiler pan), sprinkle with salt and pepper and place it under the broiler. Cook for 3 minutes on the first side. Flip and cook for another 3 minutes for medium-rare. Remove from the oven and allow to rest 10 minutes. Slice thin strips of steak against the grain.
  • For the vinaigrette: While the steak is resting, in a small mixing bowl, make the vinaigrette. Combine the vinegar, shallots, mustard and garlic and whisk in the oil. Season with salt and pepper
  • For the salad: Preheat a cast-iron grill pan over medium-high heat. Place the grape bunches on the grill to char, just until blistered, 3 to 4 minutes.
  • In a large bowl, add the greens and lightly dress the salad with the vinaigrette. Toss to combine.
  • For serving, pile the salad onto a plate and top with crumbled blue cheese and toasted pecans. Surround the salad with the sliced steak and grilled grapes.

1/2 yellow onion, minced
3 tablespoons brown sugar
1/2 teaspoon grated fresh ginger
1/2 cup Worcestershire sauce
1/2 cup soy sauce
1 tablespoon freshly ground pepper
3 tablespoons lemon juice
3 tablespoons olive oil
2 bay leaves
1 (12-ounce) bottle dark ale or stout
1 pound fresh prawns, peeled and deveined
3 tablespoons olive oil
3 tablespoons lime juice
2 cloves garlic, minced
1 teaspoon sea salt
2 pinches hot paprika (or chili powder)
2 tablespoons lemon juice
1/4 cup olive oil
1 tablespoon mayonnaise
1 teaspoon red wine vinegar
1 teaspoon Dijon mustard
2 heads romaine lettuce
1 sliced tomato, optional
1 slice red onion, optional

Steps:

  • Score the top and bottom of the flank steak. Mix all ingredients in a gallon zip lock bag. Release as much air as possible from the bag and let marinate overnight. Remove steak from marinade and season with salt and pepper. On a preheated grill, grill over high heat 3 minutes per side for medium rare. Remove and let rest for 5 minutes.
  • For the prawns, combine all ingredients in a zip lock bag and shake to coat. It can marinate for up to 1 hour but no longer. Remove the prawns from the marinade and place on preheated grill, turning only once, until curled and pink. Serve with the steak and salad.
  • For the salad:
  • Combine all ingredients, except the lettuce, tomato, and onion, in a bowl and whisk well to incorporate. Season with salt and pepper. Slice the heads of romaine lengthwise and brush with a little olive oil. Place on a preheated grill and grill the lettuce, moving it around carefully, until charred and nice grill marks form. Remove the lettuce and tear into pieces. Place in a bowl with the onion and tomato and drizzle with the dressing. Serve with the steak and prawns.
  • Presentation:
  • Using a plate with a wide lip, place the grilled salad in the center. Then plate slices of steak and prawns alternating around the lip.

  • Rinse the pasta in cold water and drain.

2T. dry oregano
1T. lime juice
1T. olive oil

Salad Dressing
1/2c. mayonnaise
1T. Worcestershire sauce
1T. fresh lemon juice
1 garlic glove
1 1/2t. minced canned chipotle chilies
2t. brown sugar
Salad
1 large head romaine lettuce, cut into bite-size pieces
1/4 c. julienne red onion
1/2 c. julienne jicama
2 medium, diced vine ripened salad tomatoes
1 c. roasted corn (I use Trader Joes)
1 lb. thinly sliced flank steak
Tortilla strips

Steps:

  • Chipotle Rub In a food processor or blender, combine all ingredients and blend to a smooth paste. Spread the chopotle rub evenly over flank steak and let stand a room temperature for 30 minutes. Preheat the grill to meidium high and oil the grill. Place the steak over direct heat of the grill for 2 minutes per side. Move to indirect heat and close the lid of the grill. Continue for 8 to 10 minutes more or until desired doneness is achieved. Salad Dressing In a blender, combine all ingredients and blend until smooth. Salad In a large bowl, combine the lettuce, onion, jicama, tomatoes, and corn. Arrange the salad on chilled salad plates and place slices fo the beef and tortilla strips over the top. Serve with dressing.

Grilled Flank Steak with Spicy Watermelon Salad image

This is so good! The marinade gets a boost of heat from sambal oelek, an Indonesian chili paste, and it's flavored with honey, ginger and assorted spices that meld together and flavor the flank steak quite nicely. Don't pass on the watermelon salad, as it's meant to be a refreshing introduction after indulging in the spicy flank steak. Just be sure to keep the watermelon chilled until just before adding it to the salad, so it's as refreshing as possible. Sambal Oelek can be found online, but it's also available in most Asian markets or the Asian aisle of larger chain-type grocery stores.

Steps:

  • Flank Steak Marinade: Whisk all ingredients except flank steak in 13x9-inch baking dish. Add steak; turn to coat. Cover and let marinate at room temperature 2 hours, turning occasionally. Alternatively, cover and chill in refrigerator at least 4 hours or up to 1 day. Bring steak to room temperature, and season with sea salt and pepper before grilling.
  • For Pepper-Watermelon Salad: Whisk hot chili sauce, oil, vinegar, and honey in small bowl; season dressing with salt and pepper. Place peppers and chiles in large bowl. Toss with 6 tablespoons dressing. Let marinate 2 hours at room temperature. DO AHEAD: Can be made 8 hours ahead. Cover dressing and salad separately and chill. Bring to room temperature before serving.
  • To Grill: Prepare barbecue grill (high heat). Grill flank steak with some marinade still clinging until cooked to desired doneness, about 4 minutes per side for rare. Transfer to work surface; let rest 10 minutes. Thinly slice steak against grain; transfer to platter. Drizzle with some of remaining dressing from salad.
  • To Serve: Toss chilled watermelon into pepper salad. Serve flank steak and salad with remaining dressing alongside.

1/2 cup A.1. Original Sauce
3/4 tsp. ground red pepper (cayenne), divided
2 English cucumbers, halved, sliced
1 onion, thinly sliced
1/4 cup chopped fresh cilantro
1/4 cup KRAFT Zesty Italian Dressing
1/4 cup fresh lime juice

Steps:

  • Score steak on both sides with shallow cross-cuts; place in shallow dish. Mix A.1. and 1/2 tsp. red pepper until blended. Pour 1/4 cup over steak; turn to evenly coat both sides of steak. Refrigerate 30 min. to marinate, turning after 15 min. Meanwhile, refrigerate remaining A.1. mixture until ready to use.
  • Heat grill to medium heat. Remove steak from marinade; discard marinade. Grill steak 17 to 21 min. or until medium doneness, turning and brushing occasionally with remaining A.1. mixture. Meanwhile, combine remaining ingredients.
  • Transfer steak from grill to cutting board. Let stand 5 min. before cutting across the grain into thin slices. Serve topped with cucumber salad.

1/2 C chopped fresh herbs, such as parsley, mint, rosemary, thyme and/or tarragon
4 medium garlic cloves, peeled
Juice of 1 lemon
2 TABs soy sauce
1/2 tsp each salt and pepper
1/4 C EVOO
1 flank steak, about 1.5 lbs
Beans & Mushrooms
2 TABs EVOO
4 C thinly sliced red onions
Salt and pepper
1 lb shiitake mushrooms, stemmed and sliced (about 6 C)
1 15-oz can white beans, drained and rinsed
1 1/2 TABs sherry vinegar
1 TAB finely chopped fresh thyme
Vinaigrette
1/4 C sherry vinegar
2 TABs finely chopped shallots
1 TAB Dijon mustard
1/2 C EVOO
Salad
1/2 lb (10 C) baby arugula

Steps:

  • Marinate the steak: Combine herbs and garlic in food processor and pulse until finely chopped. Add lemon juice, soy sauce, salt and pepper and process until smooth. With motor running, add the olive oil in fine stream. Place steak in glass or ceramic baking dish. Pour marinade over and turn to coat. Cover and refrigerate at least 4 hours or overnight, turning occasionally. Remove steak from fridge 1 hour before cooking and preheat grill to medium-high. Prepare beans and mushrooms: Heat EVOO in a large skillet over medium high heat. Add the onions, a pinch each of salt and pepper, and cook, stirring occasionally, until tender and caramel-colored, 10-12 min. Add the mushrooms and cook, stirring occasionally, until wilted and soft, about 5 min. Off the heat, stir in beans, vinegar and thyme. Season to taste and set aside. Make the vinaigrette: In a small bowl, combine vinegar, shallots and mustard. Whisk in EVOO. Season to taste. Cook the steaks: Remove steaks from marinade and grill to desired doneness (about 4-5 min per side for medium-rare). Allow steak to rest 10 min before slicing thinly against the grain. Serve: Toss arugula with enough vinaigrette to lightly coat. Season to taste. Arrange leves on platter and top with beans and steak. Toss lightly. Drizzle light with some remaining vinaigrette and serve.

One 1 1/2-pound flank steak
2 tablespoons cider vinegar
1 tablespoon honey
6 ounces cherry tomatoes, preferably Sweet 100 tomatoes, quartered (about 1 1/2 cups)
1/4 small sweet onion, such as Walla Walla, thinly sliced
6 ounces thin asparagus
2 ears of corn, shucked
1 tablespoon extra-virgin olive oil
6 basil leaves, finely shredded
1 tablespoon unsalted butter
6 ounces fresh morel mushrooms, cleaned and halved if large, or a scant 1/2 ounce dried morels, reconstituted in boiling water for 10 minutes

  • DIRECTIONS In a large glass baking dish, whisk the red wine, mustard, brown sugar, garlic, shallots, parsley, thyme, 1 tablespoon of salt and 1 teaspoon of pepper. Add the steak and turn to coat. Let stand at room temperature for 2 hours or refrigerate for up to 8 hours. Meanwhile, in a medium bowl, whisk the cider vinegar and honey. Add the tomatoes and onion and toss. Let stand for 1 hour. Light a grill. Coat the asparagus and corn with olive oil and season with salt and pepper. 1 teaspoon dried thyme, 1/3 palmful
2 pounds flank steak
5 thick slices of crunchy peasant-style bread such as ciabatta
Salt and black pepper
1 rounded tablespoon prepared horseradish
Juice of 1 lemon
3 tablespoons sour cream (eyeball it)
1 tablespoon Dijon mustard
1 pint grape or cherry tomatoes, halved
1 12-ounce sack triple-washed baby spinach
1 bunch arugula, thoroughly washed and dried

Steps:

  • Preheat an outdoor grill, grill pan, or a large skillet (if you are using a large skillet for the steak, you might have to cut the steak in half in order to make it fit in the pan).
  • In a large shallow dish, combine the chopped garlic, about 2 tablespoons of the EVOO, the Worcestershire sauce, hot sauce, and thyme. Add the flank steak and coat it completely in the mixture; marinate it for 5 to 10 minutes, depending on how much of a rush you are in.
  • Brush or drizzle the bread slices with a little EVOO and sprinkle them with a little salt and pepper. Place the seasoned bread on the grill and grill on both sides until well marked, 1 to 2 minutes on each side. Remove the bread from the grill and rub it with the smashed garlic clove while still hot. Chop the grilled bread into 1-inch pieces and reserve it. (If you are not grilling, then simply toast the bread until it is golden brown and follow the same procedure.)
  • Season the flank steak with salt and pepper, then cook it for 5 to 6 minutes per side. Remove it from the grill and let it rest for 5 minutes. Thinly slice the flank steak on an angle and against the grain.
  • While the steak is grilling, in a small bowl combine the horseradish, lemon juice, sour cream, mustard, salt, and pepper. In a slow, steady stream, whisk in about 1/3 cup of EVOO.
  • In a large shallow platter or bowl, arrange the tomatoes, spinach, and arugula and top with croutons. Dress with about two thirds of the dressing. Toss the salad, then adjust the salt and pepper. Top the salad with the sliced steak and drizzle the remaining dressing over the meat.

1/2 cup balsamic vinaigrette dressing or Italian dressing
1/4 teaspoon cracked black pepper
1 lb fresh asparagus spears, trimmed
1/4 teaspoon salt
1/8 teaspoon pepper
6 cups torn romaine lettuce
1/2 cup thinly sliced radishes
Additional 1/4 cup dressing
6 tablespoons finely shredded Parmesan cheese

Steps:

  • In large nonmetal dish or resealable food-storage plastic bag, place steak and 1/2 cup dressing; turn to coat. Cover dish or seal bag; refrigerate at least 2 hours or overnight to marinate.
  • Heat oven to 350°F. Spray large cookie sheet with cooking spray.
  • To make Parmesan Crisps, spoon heaping teaspoonfuls Parmesan cheese in 12 mounds on cookie sheet. Spread each mound into 2-inch circle. Bake 6 to 8 minutes or until light brown. Carefully remove from pan to cooling rack. (Crisps may be made up to 2 days ahead and kept between layers of waxed paper in airtight container at room temperature.)
  • Heat gas or charcoal grill. Remove steak from marinade; reserve marinade. Sprinkle steak with cracked black pepper. Place steak on grill over medium heat. Cover grill; cook 15 to 18 minutes or until desired doneness, turning halfway through grilling. Let stand 5 minutes.
  • Meanwhile, toss asparagus with reserved marinade. Place asparagus in grill basket (grill "wok"); discard any remaining marinade. Place asparagus on grill. Cover grill; cook 6 to 8 minutes, turning occasionally, until tender. Season asparagus with salt and pepper.
  • In large bowl, toss lettuce, radishes and the additional 1/4 cup dressing. Divide lettuce mixture among 4 dinner plates. Cut steak across grain into thin slices. Divide steak slices and asparagus evenly among plates. Serve with Crisps.

2 lb flank steak
1 tablespoon smoked paprika

2 teaspoons onion powder
2 teaspoons ground cumin
2 teaspoons chipotle powder

canola oil, for greasing
3 red fresno chilies, seeded and sliced
1 avocado, chopped

1 cup cherry tomato, halved

Steps:

  • In a medium bowl, drizzle the corn with 2 tablespoons of olive oil and season with salt and pepper to taste. Massage the corn until fully coated. Set aside.
