GREEK OLIVE BREAD



Greek Olive Bread image

Nuggets of feta cheese and olives stud this delicious loaf, perfect with grilled or barbecued lamb or chicken.

Number Of Ingredients 9

3 -3 1/2 cups bread or 3 -3 1/2 cups unbleached all-purpose flour
1 (2 3/4 teaspoon) package active dry yeast or 1 (2 3/4 teaspoon) package fast rising yeast
1 tablespoon sugar
1 teaspoon salt
2 tablespoons extra virgin olive oil
1 cup very warm water
1 cup coarsely chopped pitted oil-cured olives or 1 cup black olives
1/2 cup crumbled feta cheese
2 teaspoons extra virgin olive oil, for brushing

Steps:

  • In a large mixing bowl stir 3 cups of the flour, the yeast, sugar, and salt together.
  • Make a hole in the center of the dry ingredients and pour in the 2 tablespoons olive oil and the water.
  • Stir until all the dry ingredients are moistened.
  • Cover and let stand for 15 minutes.
  • Sprinkle a work surface with flour.
  • Scrape dough out onto the floured surface.
  • Dust the top of the dough with flour.
  • Knead until the dough is smooth and develops small bubbles just under the surface, about 5 minutes, adding more flour if the dough gets sticky.
  • Place in a clean, greased bowl, turning to grease all over.
  • Cover and let rise in a warm place until doubled, 1 to 1 1/2 hours.
  • Punch down the dough and pat it into a ½ inch thick circle.
  • Sprinkle with the olives and cheese.
  • Knead the dough lightly to incorporate the ingredients, then shape into a ball.
  • Pat out to make a circle 8 inches in diameter.
  • Place on a greased baking sheet.
  • With a 3-inch round cutter, cut a circle in the center but leave the round of dough in place.
  • (You can bake the removed center alongside the bread; it will probably cook faster than the circular loaf.) Brush the dough with the 2 teaspoons of oil.
  • Cover and let rise until puffy, 30 to 45 minutes.
  • Preheat the oven to 375 F.
  • Bake for 25 minutes or until the crust is a rich golden brown and the loaf sounds hollow when tapped.
  • Cool the bread on a wire rack before slicing.
  • Makes 1 round loaf.

3 tablespoons butter or margarine, softened
3 tablespoons crumbled feta cheese
12 thin slices French bread
3 tablespoons chopped Greek olives

Steps:

  • Heat gas or charcoal grill. In small bowl, mix butter and cheese; set aside.
  • Place bread on grill rack over medium heat. Cover grill; cook 3 to 5 minutes or until lightly toasted.
  • Spread butter mixture over toasted sides of bread; sprinkle with olives. Cover grill; cook with olive sides up 3 to 5 minutes or until cheese is melted.

1 cup buttermilk
1/3 cup feta cheese, crumbled
2 teaspoons olive oil or 2 teaspoons vegetable oil (I use olive oil)
1 tablespoon sugar
1 1/4 teaspoons salt
3 cups bread flour, unsifted
2 teaspoons bread machine yeast
1/2 cup halved pitted Greek olive

Steps:

  • Heat buttermilk for 30 seconds in the microwave on HIGH.
  • Add ingredients to the bread machine according to your manufacturer's directions, except the olives.
  • Cycle: Basic or Nut, Loaf Size: 1.5 lb.
  • After 5 minutes of kneading, check the dough; add a tablespoon of water at a time if too dry, or a tablesoon of flour at a time if too wet.
  • Add the olives at the add-in beep.

3 vine-ripe tomatoes, cut into chunks
1 medium red onion, sliced thinly
1/2 seedless cucumber, cut into chunks
1 red bell pepper, seeded and cut into chunks
1 green bell pepper, seeded and cut into chunks
1 cup kalamata olive (I like to buy the already pitted version)
1/4 cup fresh flat-leaf parsley, chopped
1/2 lb feta cheese (Greek imported feta cheese is best)
1/4 cup extra virgin olive oil
3 tablespoons red wine vinegar
1 teaspoon dried oregano
kosher salt & freshly ground black pepper, to taste
pita bread (amount is up to you)

Steps:

  • Mix all the veggies, olives and parsley into a large bowl. Crumble or slice the feta cheese over the salad. Combine the oil, vinegar and oregano - either shake it together in a jar or whisk. Pour the dressing over the salad - don't pour it all in at once, instead pour the amount to taste. Season your salad with salt and pepper and let it marinate until you're ready to serve.
  • Meanwhile, you can quickly grill your pita bread (or use a hot griddle or grill pan). Grill until the pita gets blistered and warm on both sides.
  • Serve the grilled pita alongside the salad and enjoy!

4 slices crusty bread, from a dense loaf (like sourdough)
4 tablespoons olive oil, approximately
8 ounces feta (approximately)
1 large tomatoes
2 teaspoons finely chopped fresh oregano leaves (or 1 tsp dried)
fresh ground black pepper

Steps:

  • Brush both sides of each bread slice with some oil. Cut enough 1/4-inch-thick slices from feta to cover 2 slices of bread and cut tomato into 1/4-inch-thick slices. Assemble 2 sandwiches with feta and tomato slices, seasoning filling with oregano and LOTS of pepper.
  • In a 12-inch nonstick skillet heat 1 tablespoon oil over moderate heat until hot but not smoking and cook sandwiches until golden, about 2 minutes on each side.
  • Variation: Adding sliced or chopped Kalamata olives is a delicious addition.
  • Note: This is a grilled sandwich that is delicious served at room temperature too.
