1 bunch cilantro leaves, chopped
2 cloves garlic, chopped
2 cups honey
juice from one lime
4 salmon steaks
salt and pepper to taste

Steps:

  • In a small saucepan over medium-low heat, stir together cilantro, garlic, honey, and lime juice. Heat until the honey is easily stirred, about 5 minutes. Remove from heat, and let cool slightly.
  • Place salmon steaks in a baking dish, and season with salt and pepper. Pour marinade over salmon, cover, and refrigerate 10 minutes.
  • Preheat an outdoor grill for high heat.
  • Lightly oil grill grate. Place salmon steaks on grill, cook 5 minutes on each side, or until fish is easily flaked with a fork.

Vegetable oil (for grill)
2 serrano chiles
2 garlic cloves
1 cup cilantro leaves with tender stems
1/2 cup plain whole-milk Greek yogurt
1 Tbsp. extra-virgin olive oil
1 tsp. honey
2 (12-oz.) bone-in salmon steaks
Kosher salt

Steps:

  • Prepare a grill for medium-high heat; oil grate. Remove and discard seeds from 1 chile. Purée both chiles, garlic, cilantro, yogurt, oil, honey, and 1/4 cup water in a blender until smooth; season well with salt. Transfer half of sauce to a small bowl and set aside for serving.
  • Season salmon steaks lightly with salt. Grill, turning once or twice, until flesh is starting to turn opaque, about 4 minutes. Continue to grill, turning often and basting with remaining sauce, until opaque all the way through, about 4 minutes longer. Serve with reserved sauce alongside.

CEDAR PLANK-GRILLED SALMON WITH CILANTRO PESTO

4 (6 to 8-ounce) portions salmon preferably local wild King salmon -skin on or off
Olive oil, to taste
Salt
Fresh cracked pepper
Cilantro Pesto, recipe follows
1 cup extra-virgin olive oil
1 cup roughly chopped cilantro leaves
1 clove garlic
1/4 cup pepitas (pumpkin seeds) lightly toasted
1/2 lime, juiced
Jalapeno, to taste
Salt and pepper

Steps:

  • This recipe is for OUTSIDE gas or charcoal plank-grilling.
  • For the Cedar Planks: I use UNTREATED 1 by 8 construction grade cedar cut to the length of the amount of salmon you wish to cook. (I cut mine in 10-inch lengths for 2 (8- ounce fillets)
  • Soaking the planks: Pre-soak cedar planks for at least 1 hour, preferably longer or overnight. Weigh down planks with heavy cans or stones to completely submerge the wood in water.
  • Lightly coat the salmon with olive oil and season with salt and pepper. Place salmon on cedar plank skin-side down.
  • Turn on your gas grill to high heat. Place planks (loaded up with salmon) on the grill and close lid. Your grill will now turn into an oven/smoker. Cooking time required will vary depending on the size of the salmon. Be careful when you are lifting the grill lid because the burning plank will produce a lot of smoke. Try to keep the lid closed as much as possible as not to lower the temperature inside the grill. When salmon is cooked, remove fish from plank and plunge wood into a bucket of cold water. Serve the salmon immediately with the Cilantro Pesto.
  • Place first 4 ingredients in blender or small food processor and completely puree. Add lime juice, jalapeno, and salt and pepper, to taste.

1 tablespoon olive oil
1/4-1/2 cup butter
1 bunch fresh cilantro
2 limes
1 teaspoon chili powder
1/2 teaspoon cumin
salt

Steps:

  • For Salmon: Whisk together olive oil, cumin, chili powder and several chopped cilantro leaves, salt and pepper to taste.
  • Coat flesh side of fish heavily with oil mixture and allow to marinate in refrigerator for 2 hours.
  • Grill well marinated fish on high- skin side down- until just after fat begins to seep from salmon flesh.
  • Fish should be cooked through, but still very moist.
  • Before serving mix melted butter with juice from both limes and crushed and chopped cilantro leaves.
  • Pour over salmon and serve immediately.
  • This dish goes well with oven roasted asparagus or a tossed salad.

3 pounds salmon
¼ cup butter
1 cup chopped cilantro
1 fresh jalapeno pepper, seeded and chopped
Old Bay Seasoning TM to taste

Steps:

  • Preheat grill for high heat.
  • Lightly grease one side of a large sheet of aluminum foil. Place salmon on the greased side of foil. Melt the butter in a saucepan over medium heat. Remove from heat, and mix in cilantro and jalapeno. When cilantro is wilted, drizzle butter mixture over the salmon.
  • Place foil with salmon on the grill. Season with Old Bay. Cook 15 minutes, or until fish is easily flaked with a fork.

I am a big fan of salmon. It is full of omega 3 and generally tasty and good for you. I am always looking for new salmon recipes to add to our rotation. I found this one in the August 2008 copy of BBC Good Food Magazine.

2 (5 ounce) boneless skinless salmon fillets
1 red chili pepper, deseeded and finely chopped
3/4 cup fresh cilantro, chopped
1 lime, halved, for serving
2 tablespoons olive oil
10 1/2 ounces water
1 onion, chopped
1 teaspoon fresh ginger, finely chopped
1 garlic clove, thinly sliced
4 ounces basmati rice

Steps:

  • Heat 1 tablespoon oil in a pan and at the same time put the water in another pot and bring to a boil.
  • Fry the onion for a few minutes until lightly browned.
  • Stir in the ginger and garlic for 1 minute, then stir in the rice.
  • Add boiling water and a little salt, then bring to the boil.
  • Cover and cook for 10-12 minutes until the rice is tender.
  • Heat grill/broiler to medium.
  • Brush a baking tray lightly with a little oil.
  • Put the salmon on top and grill/broil for 4-5 minutes.
  • Scatter with chilli, cilantro, remaining olive oil and seasoning.
  • Grill/broil again for just 4-5 minutes until the salmon is cooked through.
  • Serve with the rice and line halves for squeezing over.

I found this in my mom's newspaper in Canada. It turned out fabulous and we all thought it was something you'd order in a restaurant. Wonderful presentation, but very easy. Enjoy.

3 (2 ounce) packages rice vermicelli
4 (6 ounce) salmon fillets (I used one big piece)
olive oil
sea salt
ground black pepper
5 tablespoons light soy sauce
3 tablespoons honey
3 tablespoons sesame oil
2 teaspoons fresh lemon juice
vegetable oil, for brushing
1/2 cup fresh cilantro leaves, coarsely chopped
2 tablespoons black sesame seeds (I didn't have any)

Steps:

  • Prepare a medium-hot grill. While grill is heating, soak the vermicelli in a large bowl with hot water until soft, about 20 minutes. Brush the salmon with olive oil and sprinkle with salt and pepper. Make the glaze for the salmon by combining 1 tbsp soy sauce, 2 tbsp honey, and 1/2 tsp ground pepper. Set aside.
  • Make the dressing; in a small bowl combine 4 tbsp soy sauce, 1 tbsp honey, sesame oil and lemon juice. Place salmon skin side up and place on an oiled grill. Grill for around 2 minutes Turn salmon over and brush with glaze. Cover and cook until salmon is opaque, but very moist (depending on size 3-5mins approx). I did not use a grill, instead I just broiled the fish, and did not turn it over as it had no skin on it. While the fish is cooking drain the vermicelli and pat dry with paper towels. Toss the noddles with the dressing, cilantro and sesame seeds. Serve with salmon.

4 (6 ounce) salmon fillets
1 medium sweet onion, sliced 1/4 inch thick
1 -2 canned chipotle chile in adobo, finely minced
3 tablespoons adobo sauce, from the can of chipotle peppers in adobo seasoning
3 tablespoons brown sugar
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 garlic clove, pressed
1 teaspoon kosher salt
1 cup dry white wine or 1 cup unsweetened apple juice
2 tablespoons sugar
2 tablespoons fresh ginger, grated
2 tablespoons key lime juice
2 tablespoons butter, softened
1 teaspoon cornstarch
1 scallion, thinly sliced
1 tablespoon olive oil
1/4 cup sweet onion, diced
1 cup basmati rice
1 (8 ounce) can crushed pineapple, undrained
3/4 cup pineapple juice
1/2 cup water
1 teaspoon kosher salt
1/4 cup cilantro, minced

Steps:

  • Mix all ingredients for the marinade, reserving 3 tablespoons. Pour the marinade over the salmon, place in refrigerator and allow to marinade for 1 hour.
  • Approximately 10 to 15 minutes before placing the salmon on the grill, began preparing the rice by heating the 1 tablespoon olive oil in a medium saucepan. Stir in chopped onion and cook for 3 minutes; add rice and sauté an additional minute.
  • Add pineapple, pineapple juice, water, and salt; bring to a boil, cover and reduce heat to low. Simmer for 20 minutes or until liquid is absorbed and rice is tender. Fluff with fork and stir in chopped cilantro.
  • Place salmon over medium heat on gas grill or over charcoal, cook until fish flakes easily, turning once; approximately 10 to 12 minutes total.
  • While salmon is cooking, prepare the sauce by bringing to a boil the white wine, sugar, ginger and lime juice. Reduce to 3/4 cup; this should take about 7 to 10 minutes.
  • Brush the sliced onions with the reserved marinade and grill until done, turning as needed.
  • Mix cornstarch with a small amount of water until smooth, whisk into wine along with butter. Cook 1 minute or until thick, add scallion and keep warm.
  • To serve, divide rice onto 4 serving plates, top with cooked fish, spoon sauce over and top with grilled onions.

SPICE MIX
1 tablespoons onion powder
1 tablespoon garlic powder
2 tablespoons paprika
2 teaspoons sea salt
1 teaspoon cayenne pepper
1 1/2 teaspoons lemon pepper
2 teaspoons dried oregano.
CILANTRO MAYONNAISE
1/2 cup mayonnaise
1/2 cup fresh cilantro leaves
1 tablespoon fresh lime juice
1 teaspoon soy sauce
2 cloves garlic

Steps:

  • Heat grill to 500 degrees Make Cilantor Mayonnaise. Clean cilantro and just use the leaves. Put all ingredients into a food processor or blender, blend until just smooth. Store in refridgerator until ready to use. Mix all spices together and stores in an airtight container. Generously coat salmon filets with olive oil. Sprinkle both sides with spice mix. Grill each side of salmon 4-6 minutes depending on thickness of salmon (if salmon has skin, cook skin side first). Do not over cook. Serve with a layer of Cliantro Mayonnaise on top and serve a little extra on the side.
