1/3 cup creamed honey
1/4 cup red miso paste
1/4 cup orange juice
Red chili flakes
Freshly ground black pepper
1 skin-on whole chicken, cut up, breasts split

Steps:

  • For the marinade/glaze: In a small pot on medium heat, whisk together the honey, miso, orange juice, a shake or two of chili flakes and plenty of coarse ground pepper. Cook, whisking, until everything is combined and the liquid reduces and thickens a bit to a glaze consistency, 6 to 8 minutes. Let cool to room temperature.
  • For the chicken: Pour half of the marinade into a resealable plastic bag; reserve the other half for glazing. Add the chicken parts to the bag with the marinade and seal. Rest the chicken at room temperature for 1 to 2 hours.
  • When ready to grill, preheat a grill pan or half of a grill to medium heat.
  • Remove the chicken from the bag and pat dry with paper towels. Place on the indirect heat of the grill, skin-side down, and cook, covered, until the chicken easily releases from the grill, about 15 minutes. Then flip and grill on the other side until cooked through, 15 to 20 minutes more. In the last minute of grilling, brush each piece of chicken with a bit of the reserved glaze.

4 skinless boneless chicken breast halves
1/2 c olive oil
1/3 c thinly sliced fresh basil
2 Tbsp chopped garlic
1/4 tsp salt
1/4 tsp ground black pepper
28 oz low-salt chicken broth
1 c orange juice
1/2 c sugar
6 Tbsp unsalted butter
2 Tbsp tamarind paste
4 tsp grated orange peel
4 tsp grated peeled fresh ginger
3/4 c raw long-grain white rice, cooked

Steps:

  • 1. Place chicken in shallow bowl. Whisk next 5 ingredients in medium bowl. Pour over chicken; turn to coat. Cover; chill at least 1 hour and up to 6 hours, turning often.
  • 2. Whisk broth, juice, sugar, 3 tablespoons butter, tamarind paste, peel, and ginger in large saucepan. Boil mixture over medium-high heat until reduced to 3/4 cup and glaze coats back of spoon, stirring often, about 25 minutes. (Can be made 2 days ahead. Cool glaze, then cover and chill. Rewarm over medium heat, whisking occasionally.)
  • 3. Whisk in 3 tablespoons butter. Season glaze with salt and pepper.
  • 4. Prepare barbecue (medium-high heat).
  • 5. Reserve 1/4 cup glaze in bowl.
  • 6. Grill chicken until cooked through, basting with reserved glaze, about 5 minutes per side. Arrange chicken atop rice on platter. Spoon remaining glaze over chicken.

These grilled chicken wings are marinated in tamarind purée, fish sauce, brown sugar, red pepper flakes, and cumin, with more brushed on as they grill.

¾ cup tamarind purée
¼ cup fish sauce
2 Tbsp. light or dark brown sugar
1 Tbsp. crushed red pepper flakes
1 tsp. ground cumin
3 tsp. Diamond Crystal or 1½ tsp. Morton kosher salt, divided
4 lb. chicken wings, drumettes and flats separated if desired
¼ small red onion, very thinly sliced, preferably on a mandoline
Cilantro leaves with tender stems and lime wedges (for serving)

Steps:

  • Whisk tamarind purée, fish sauce, brown sugar, red pepper flakes, cumin, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a medium bowl until combined and a loose paste forms. Set tamarind glaze aside.
  • Pat wings dry with paper towels, then season all over with remaining 2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt. Place in a large bowl; add half of tamarind glaze and toss to coat. Chill 15 minutes. Set remaining glaze aside.
  • Meanwhile, place onion in a bowl of ice water and set aside.
  • Prepare a grill for medium indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off). Arrange wings on grate over indirect heat, making sure not to overcrowd. Brush top of each wing with some reserved glaze. Cover and grill 15 minutes. Uncover, turn wings over, and brush other side with glaze. Re-cover and grill until wings are golden brown and a thermometer inserted into the thickest part of a wing registers 165°F, about 15 minutes.
  • Brush wings with more glaze, then move over direct heat and grill until charred in spots, 1-2 minutes per side.
  • Transfer wings to a platter. Drain onion and place on paper towels; pat dry. Scatter onion over wings and top with cilantro. Serve with lime wedges for squeezing over.
