Chicken thighs grilled with a sweet, smoky, and slightly spicy sauce are sure to kick things up a notch at your next indoor or outdoor barbecue.

4 tablespoons garlic powder, divided
4 tablespoons onion powder, divided
2 tablespoons smoked paprika
2 tablespoons kosher salt, plus more to taste
2 tablespoons freshly ground black pepper, plus more to taste
6 boneless skinless chicken thighs
2 tablespoons olive oil
1 tablespoon unsalted butter
6 oz raspberry
2 tablespoons brown sugar
1 tablespoon chipotle powder
½ cup ketchup
1 tablespoon mesquite liquid smoke
nonstick cooking spray, for greasing
1 tablespoon fresh flat-leaf parsley, minced, for garnish

Steps:

  • In a small bowl, mix together 2 tablespoons garlic powder, 2 tablespoons onion powder, the paprika, salt, and pepper.
  • Drizzle the chicken thighs with the olive oil, then sprinkle with half of the spice mixture and rub to coat well. Sprinkle with the remaining spice mixture. Set aside while you make the sauce, or refrigerate overnight if you're grilling the next day.
  • Melt the butter in a small saucepan over medium heat. Add the raspberries and cook until they start to break down, about 3 minutes. Add the brown sugar, chipotle powder, remaining 2 tablespoons garlic powder, remaining 2 tablespoons onion powder, the ketchup, and liquid smoke and season with salt and pepper to taste. Bring to a simmer and cook until the sauce thickens, 4 minutes. Remove the pot from the heat and set aside.
  • Heat a grill pan over medium-high heat. Grease with grapeseed oil. Add the chicken and grill for about 7 minutes on each side, until the internal temperature of the chicken reaches 165°F (75°C). Once the chicken has cooked through, generously brush with some of the raspberry chipotle sauce. Continue grilling until the sauce caramelizes, 1-2 minutes, then repeat on the other side.
  • Garnish the chicken with the parsley and serve warm with the remaining sauce alongside.

6 garlic cloves, minced
2 tablespoons lime juice
1 tablespoon olive oil
1 teaspoon salt
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
8 medium kiwifruit, peeled and halved
3 tablespoons honey
1 tablespoon minced chipotle peppers in adobo sauce
Lime juice, optional
Hot cooked rice, optional

Steps:

  • Combine garlic, lime juice, oil and salt. Add chicken and kiwi; turn to coat. Refrigerate, covered, up to 30 minutes., Mix honey and chipotle peppers. Drain chicken and kiwi, discarding marinade. On 8 metal or soaked wooden skewers, alternately thread chicken and kiwi. , Grill, covered, on an oiled rack over medium heat, turning occasionally, until juices run clear, 10-12 minutes. This is a delicious raspberry chicken that my sister ALWAYS asks me to make for her! It's quick and easy... under half an hour to make! The berries bring a very tasty flavor to the chicken! I usually serve this with a raspberry vinaigrette salad!

1/2 cup raspberry jam
1 tablespoon Dijon mustard
6 boneless skinless chicken breasts
1 1/2 cups fresh raspberries (frozen work also)

Steps:

  • Brush grill rack with vegetable oil. Heat gas or charcoal grill. (I've also cooked these in a pan. that also works!)
  • Mix jam and mustard together in a small bowl. Refrigerate.
  • Place chicken on grill or pan. Cover. Cook over medium heat for 15-20 minutes, occasionally brushing with jam mixture and turning once.
  • Use extra jam mixture as more glaze if you prefer.
  • Serve chicken topped with raspberries.

6 boneless, skinless chicken breasts
1/2 cup frozen raspberries, thawed (recommended: Dole)
1 cup raspberry vinaigrette (recommended: Annie's)
1/4 cup raspberry vodka, optional
1/4 cup finely chopped fresh mint leaves
Fresh mint sprigs, for garnish
Fresh raspberries, for garnish

Steps:

  • Rinse and pat dry chicken breasts with paper towels. Place in large zip-top bag. Add raspberries, vinaigrette, vodka, if using, and chopped mint. Squeeze air out and seal bag. Gently massage the bag to mash raspberries. Marinate in the refrigerator for 1 to 4 hours.
  • Preheat grill to medium-high and oil the grates.
  • Place the chicken breasts on the grill and cook for 4 to 6 minutes per side. Remove from grill and place on serving platter. Garnish with fresh mint sprigs and fresh raspberries.

Tired of dried out chicken breasts? Then you are going to love these. They are brined for about 30 minutes, grilled and glazed with a flavorful raspberry-chiptole glaze.

2 boneless chicken breasts
2 tablespoons kosher salt
2 tablespoons sugar
3 cups cold water
1 cup hot water
1/4 cup raspberry preserves
1 tablespoon red wine vinegar
1/2 lime, juice and zest of
1/4 teaspoon ground dried chipotle powder

Steps:

  • Lightly flatten the chicken breasts to 1/2 inch thickness to promote even cooking.
  • Mix together the salt, sugar and water until thoroughly combined; add the chicken and allow the chicken to brine for 30 minutes.
  • Slightly warm the raspberry preserves until liquid, add remaining ingredients, mixing well; divide in half.
  • Remove the chicken from brine, brush with half the glaze, place on hot grill and cook for approximately 4 minutes turning only once; leaving the grill uncovered.
  • When plating, drizzle the remaining glaze over the chicken and enjoy!
