GRILLED BACON-WRAPPED CHICKEN TENDERS



Grilled Bacon-Wrapped Chicken Tenders image

The perfect marriage of smoky and sweet flavors is what you'll get when you use the outdoor grill to cook up these chicken tenders! I like to use center-cut bacon since it is leaner and less likely to cause flare-ups. I find cutting the bacon lengthwise, and then using the thin strips to wrap the bacon, is much easier than trying to wrap using a wide strip. Use your favorite BBQ rub on the chicken!

8 chicken tenders
1 tablespoon BBQ rub (such as McCormick®)
8 slices center-cut bacon, cut in half lengthwise
2 tablespoons honey
1 teaspoon water

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Season chicken tenders with BBQ rub. Wrap each tender with 2 thin strips of bacon, tucking in the ends to secure.
  • Mix together honey and water in a small bowl. Set aside.
  • Place chicken tenders on the preheated grill and reduce heat to medium-low. Close lid and grill tenders, turning every 2 to 3 minutes, until bacon is browned and chicken has reached an internal temperature of 165 degrees Fahrenheit (73 degrees C), 12 to 14 minutes. For crispier bacon, increase heat during the last 2 minutes of cooking.
  • Move tenders to indirect heat and brush with honey mixture. Transfer to a plate and serve.

1 cup water
½ cup soy sauce
2 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoon brown sugar
3 cloves garlic, crushed
1 (16 ounce) package boneless, skinless chicken tenders

Steps:

  • Whisk water, soy sauce, olive oil, lemon juice, brown sugar, and garlic together in a large glass or ceramic bowl. Add chicken tenders and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 3 hours.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Place chicken on the grill and reduce heat to low. Cook for 1 minute, then turn and grill until no longer pink in the center and the juices run clear, 4 to 6 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

My aunt shared this basic teriyaki marinade for chicken tenders with me 40 years ago. Her original recipe called for a lot more sugar and soy sauce. I have tweaked it over the years to get the flavor we love.

½ cup soy sauce
⅓ cup water
¼ cup rice wine vinegar
2 tablespoons brown sugar
1 teaspoon ground ginger
1 clove garlic, smashed
1 dash Worcestershire sauce
1 (16 ounce) package boneless, skinless chicken tenders

Steps:

  • Whisk soy sauce, water, vinegar, brown sugar, ginger, garlic, and Worcestershire sauce together in a bowl and pour into a 1-gallon resealable plastic bag. Add chicken tenders, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 1 hour, or up to 4 hours.

1 1/4 pounds chicken tenders (10 to 12), or cutlets sliced lengthwise into 1-inch strips
Kosher salt and freshly ground pepper
1 1/2 cups buttermilk
4 scallions, white parts only, halved lengthwise and smashed (light- and dark- green tops reserved for Buttermilk-Scallion Ranch Dipping Sauce)
6 slices bacon (about 8 ounces), preferably center-cut, halved lengthwise (optional)
Vegetable oil, for brushing
Cocktail tomatoes and mini cucumber spears, for serving

Steps:

  • In a bowl or resealable plastic bag, season chicken with salt and pepper. Add buttermilk and scallions, massaging to evenly coat chicken. Refrigerate at least 12 hours and up to 1 day.
  • Drain chicken; discard scallions. Wrap each tender with a strip of bacon and thread onto skewers, being sure to skewer bacon at top and bottom of each strip.

2 large chicken breasts, boneless and skinless
adolph's meat tenderizer
1 dash(es) salt and pepper
paul prudhomme's poultry magic to taste
a few drops liquid smoke (optional)

Steps:

  • 1. Liberally sprinkle chicken breasts with meat tenderizer and set aside for about 15 minutes. Set up smokeless grill according to manufacturer's instructions and then heat to 450.
  • 2. Slice chicken breasts into tender-sized strips. Sprinkle with salt, pepper and Paul Prudhomme;s to taste. Note: the meat tenderizer also contains salt so adjust the amount of additional salt accordingly, if you add additional salt. Brush with a few drops of liquid smoke, if desired.
  • 3. Once the grill has reached the desired temperature, lay seasoned chicken strips on the grill and cover. After a few minutes, turn. After about two to three more minutes, turn again. Continue until cooked through and juices run clear. Be careful not to over cook so that your chicken remains moist and tender and doesn't dry out. Enjoy with your favorite veggies and sides.

JUST LIKE CRACKER BARREL'S GRILLED CHICKEN TENDERS
4 boneless, skinless chicken breasts, cut into strips.
1 zip lock bag gallon size
1 C zesty italian dressing
2 tsp lemon . . or . . lime juice ( depends on what you have on hand)
3 tsp honey . . or . . brn sugar ( depends on what you have on hand)

Steps:

  • 1. place Cut chicken tenders in zip lock bag.
  • 2. in a Pint Jar, Add all the other ingredients Shake to Blend well.
  • 3. Pour the liquid over the Chicken tenders in the Bag. SEAL, Marinate, at least 1 hr or more.
  • 4. Place "non stick Skillet" Over Medium Heat, Pour all the Ingredients from the Bag into the Skillet. Continue cooking over Medium heat till Liquid evaporates and the remaining marinade becomes THICK, and Carmelized. about 40 min. (give or take)
  • 5. Coat each piece of chicken in marinade by rubbing/scraping each piece around the bottom of the pan, coating and turning each piece to coat with brown carmelizing, they will be a golden brown, before removing from the pan.
  • 6. NOTE; BE PATIENT. . . do not get in a hurry. the carmelized coating will turn carmelized brown that will coat the Chicken tenders. takes about 40 min.

3 cups ketchup
1 cup brown sugar
1 onion, diced
1/2 cup butter
3 tablespoons chili powder

  • Add everything but chicken together in a ziploc bag.

Grilled Chicken Tenders with Chimichurri image

Number Of Ingredients 12

1.25 pound chicken tenders
1/2 teaspoon salt
1 tablespoon olive oil
1/2 cup coarsely chopped fresh cilantro
1/3 cup minced scallions
1 tablespoon chopped garlic
1/2 cup julienned radishes
1 teaspoon dried Mexican oregano
1/2 teaspoon hot pepper flakes
1/2 teaspoon salt
2 tablespoons fresh lime juice
1/2 cup olive oil

Steps:

  • Preheat oven to 140 degrees. Heat a grill to hot.
  • Put the tenders in a bowl, sprinkle with salt and oil, and stir until well coated.
  • Grill chicken tenders for 1 1/2 minutes each side. Transfer to a platter and keep warm in the oven while you prepare the sauce.
  • For the Chimichurri sauce, mix all the ingredients together in a bowl. Serve the chicken coated with the sauce.
