A DIFFERENT GRILLED CHICKEN REUBEN SANDWICH

Steps:
- Brush chicken and onion with 1/2 cup of the salad dressing and set aside.
- Combine 1/4 cup of the salad dressing with the cabbage, mix well and set aside.
- Grill the chicken 5 to 7 minutes per side or until no pink in the center.
- Top each chicken breast with a slice of Swiss cheese during the last minute of grilling.
- Grill onion slices 4 to 5 minutes on each side or until browned and tender.
- Grill rolls until toasted.
- Spread toasted sides with remaining salad dressing.
- Place chicken on roll bottoms.
- Top with onion, cabbage mixture and roll tops.
- Garnish each, if desired, with a dill pickle spear and a toothpick.
- Serve immediately.

BAKED CHICKEN REUBEN
This is a great make-ahead dish from Marcia C. Adams of Fort Wayne, Indiana. It took the top $10,000 prize in the National Chicken Cooking Contest in Dallas, Texas. It sounds weird, but it is good.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Place chicken in a lightly greased 9x13 inch baking dish. Sprinkle with salt and pepper. Place sauerkraut over chicken and top with cheese slices. Pour dressing over all and cover dish with aluminum foil.
- Bake in preheated oven for 90 minutes, or until chicken is cooked through (fork can be easily inserted and juices run clear). Sprinkle with chopped parsley and serve.

GRILLED REUBEN SANDWICHES
These are terrific! Even my sauerkraut hating DH liked these! I like to use my George Foreman Grill for these. Serve with potato salad and crispy dill pickles.

Steps:
- Spread each slice of bread with thousand island dressing.
- Top 4 of the bread slices with sauerkraut, cheese and corned beef.
- Place remaining bread slices on sandwich.
- Spray butter flavored papm on the outsides of each sandwich.
- Heat a large skillet over medium high heat.
- Grill until browned, then turn and grill until heated through, and cheese is melted.
