1/4 cup kentucky Bourbon (corn whiskey like Jim Beam)
4 ounces soy sauce
2 tablespoons vegetable oil
1 onion, chopped
3 garlic cloves, chopped
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
3 lbs skinless chicken breast halves
1/2 cup ketchup

Steps:

  • In a food processor or blender, combine all of the ingredients except for the chicken and ketchup and puree until smooth.
  • Pour the marinade over the chicken, rub it in well, and refrigerate for 3-4 hours, turning the chicken over a couple of times while it's marinating.
  • Grill the chicken over hot coals for about 10 minutes on each side; baste with marinade while grilling.
  • Or broil chicken with marinade in a casserole dish at 350F for about 40 minutes, turning chicken and basting with pan juices a couple of times while it cooks.
  • When the chicken is done remove it from the pan.
  • Add ketchup to the remaining marinade and boil down until it is a thick dark sauce to coat the chicken with (about 5 minutes).

1 cup cider vinegar
1/2 cup canola oil
5 teaspoons Worcestershire sauce
4 teaspoons hot pepper sauce
2 teaspoons salt
10 bone-in chicken breast halves (10 ounces each)

Steps:

  • In a small bowl, combine the first five ingredients. Pour 1 cup marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for at least 4 hours. Cover and refrigerate the remaining marinade for basting., Drain and discard marinade from chicken. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Prepare grill for indirect heat, using a drip pan. , Place chicken breast bone side down and grill, covered, over indirect medium heat until a thermometer reads 170°, basting occasionally with reserved marinade, 20 minutes on each side.

Chicken (boneless, bone in, breasts or thighs)
Salt & pepper
1/2 cup barbecue sauce
1/1 TBS to 1 TBS Whisky or Bourbon
2 TBS honey

Steps:

  • Pat your chicken dry and trim where necessary.
  • Season with salt and pepper.
  • Combine barbecue sauce (I used Spicy Jack Daniels BBQ), honey and Whiskey/Bourbon and stir until smooth and fully blended.
  • Oil grill, heat to med-high. When Grill is hot, place chicken on grill and cook (depending on cut used) until done flipping once. When placing the chicken on the grill do not brush the face down side with the sauce, brush the topside (separate a bit of sauce from the rest for this so you don't contaminate the rest with raw chicken then wash basting brush)., when you flip it, then brush the other side and cook until done.
  • Remove from grill and brush both sides of the chicken with more sauce, serve.

2 tablespoons olive oil
2 tablespoons Dijon mustard
1/4 cup Bourbon
2 tablespoons red wine vinegar
2 tablespoons Worcestershire sauce

1/4 cup brown sugar
2 garlic cloves, minced

Steps:

  • Combine olive oil and next 7 ingredients.
  • Add chicken, cover and marinate in the refrigerator for at least 2 hours or as long as overnight. Remove chicken from marinade. Discard marinade.
  • Place chicken on grill over medium heat. Grill uncovered for 15-20 minutes, turning once.

2 lb boneless skinless chicken breasts
1/3 cup bourbon
1/3 cup soy sauce
1/4 cup olive oil
1 tablespoon grated gingerroot
4 cloves garlic, crushed
Coarse sea salt

Steps:

  • Pound or cut chicken breasts into thin cutlets. Place in resealable food-storage plastic bag.
  • In small bowl, beat bourbon, soy sauce, oil, gingerroot and garlic with whisk until blended. Pour over chicken; seal bag. Refrigerate 1 hour to marinate.
  • Heat gas or charcoal grill. When grill is heated, remove chicken from marinade; discard marinade. Place chicken on grill over medium heat. Cover grill; cook 8 to 12 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (165°F). Sprinkle with sea salt before serving.
