14 ounces/400 g pizza dough, recipe follows or prepared pizza dough
Small bunch rucola (arugula or rocket)
1 lemon, halved
3 tablespoons/45 ml extra-virgin olive oil
Salt
4 to 5 thinly sliced prosciutto
Parmigiano cheese shavings, as much as you want
2 cups/500 ml lukewarm water
1 cube or 2 tablespoons/30 ml fresh yeast
4 cups/1 L all-purpose flour
2 tablespoons/30 ml extra-virgin olive oil
1 teaspoon/5 ml salt

Steps:

  • Heat a barbecue or grill.
  • Stretch the dough. Place the dough on the hot barbecue. Allow to cook for approximately 4 to 5 minutes on each side or until brown on both sides.
  • In a bowl add the rucola and season with freshly-squeezed lemon juice, olive oil, and salt. Mix together.
  • Lay the dough flat on a plate and layer with prosciutto, rucola, and Parmigiano cheese. Fold the foccacia and serve like a sandwich
  • Add the water to a bowl. Then add the yeast a little at a time and break up the cube of yeast with your hands.
  • Add the flour on a smooth work surface and create a well in the center of the flour. Slowly add the yeast-water mixture, olive oil, and salt until the flour has absorbed the liquid. Knead the dough until the mixture becomes an even dough consistency. If necessary, add a little more flour to absorb any excess liquid.
  • Divide the dough into 4 equal portions to make individual-size pizzas. Place on a lightly-floured surface or pan and cover with a cloth. Let rest for about an hour at room temperature or until the dough has doubled in size.

FOCACCIA WITH GRILLED CHICKEN AND VEGETABLES

1/4 cup (60 mL) mayonnaise
2 tsp. (10 mL) chopped garlic
1 Tbsp. (15 mL) pesto
1 medium onion, thinly sliced
4 artichoke hearts, thinly sliced
4 sun-dried tomatoes, thinly sliced
2 Tbsp. (30 mL) extra virgin olive oil
1 fresh oregano, crumbled
1 fresh basil, crumbled
1 bay leaf
1 red pepper, cut in half, membranes and seeds removed
1 green pepper, cut in half, membranes and seeds removed
1 small eggplant, sliced lengthwise
extra virgin olive oil to taste
sea salt and freshly ground pepper to taste
8 chicken souvlakis
4 focaccia breads, sliced sideways or gourmet italian flatbread

Steps:

  • Preheat the barbecue to medium. Mix together the mayonnaise, garlic and pesto. Set aside in a cool place.Make a papillote out of aluminium foil and inside place the onion, artichoke hearts, sun-dried tomatoes, oil, oregano, basil and bay leaf.Seal the papillote and cook on the barbecue for 15 to 20 minutes. Grill the pepper halves skin side down until the skin blackens. Set aside.Grill the eggplant slices for 2 minutes per side. Set aside. Scrape off the charred pepper skins with a knife.Thinly slice the peppers and set aside.Remove the skin from the eggplant slices. Thinly slice and set aside with the peppers.Add the papillote ingredients to the pepper mixture. Drizzle over some olive oil. Season.Grill the souvlakis 3 minutes per side. Heat the focaccias. Serve the souvlakis in the focaccias; garnish with the pesto sauce and grilled vegetables.

2 packages active dry yeast
2 teaspoon sugar
2 cups warm (100 degrees F to 110 degrees F) water
2 tablespoons kosher salt
4 tablespoons extra-virgin olive oil
6 cups unbleached all-purpose flour, plus more for dusting
4 pounds sweet Italian sausage, links
2 pints red cherry tomatoes
2 pints yellow cherry tomatoes
3 garlic cloves, minced
1 bunch fresh basil
4 (8-ounce) balls of fresh mozzarella di bufala, drained
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 large bag fresh salad mix
1 chunk Parmigiano-Reggiano, (equal to 1 1/2 cups grated)

Steps:

  • Begin by making the dough so it has time to rest and rise. In the bowl of a standing electric mixer fitted with a dough hook, or in a mixing bowl, combine the yeast, sugar and warm water and stir gently to dissolve. Let the mixture stand until the yeast comes alive and starts to foam, 5 to 10 minutes.
  • If you're using a mixer, turn the mixer on low, add the salt and 2 tablespoons of olive oil. Add the flour, a little at a time, mixing at the lowest speed until the flour has been incorporated. When the dough starts to come together, increase the speed to medium and let it go until the dough gathers into a ball. This should take about 5 minutes. Stop the machine periodically to scrape the dough off the hook. Get a feel for the dough as you're making it by squeezing a small amount together between your thumb and fingers. If it's crumbly, add more water, if it's sticky, add more flour, 1 tablespoon at a time. Turn the dough out onto a lightly floured surface and fold it over itself a few times, kneading until it's smooth and elastic. Form the dough into a round and put it into a lightly oiled bowl, turning it over to coat the dough entirely with the oil. Cover with plastic wrap or a damp towel and let it rise in a warm spot (i.e., over a gas pilot light) until doubled in size, about 1 hour.
  • Preheat an outdoor gas or charcoal barbecue and get it very hot. Brush the grates with oil to keep the sausages from sticking. Grill the sausages until cooked through, turning with tongs. Set aside. Keep the grill hot to make the pizza. Roll or pat the dough into a rustic, oblong shape, about 1/4-inch thick - do this directly on a lightly floured pizza paddle for ease. Brush the crust with a thin layer of olive oil, and lay oil side down onto the hot grill. Once the dough looks set, in about 2 minutes, turn the crust over.
  • Now prepare the topping. Cut up the tomatoes and add to a large mixing bowl. Add the garlic and basil. Crumble in the sausage. Rip the mozzarella into pieces with your hands and add that too along with some extra-virgin olive oil. Season with salt and pepper, add the salad mix and toss to combine.
  • Once the crust is set and cooked, transfer it to a platter. Scoop up the salad mix in your hands and spread it evenly over the top. Sprinkle with a good dusting of Parmigiano-Reggiano and finish with a drizzle of olive oil.

CHICKEN CAESAR FOCACCIA SANDWICHES

1 bag Caesar salad kit
1/2 package (about 6 ounces) grilled chicken strips, chopped
1 loaf focaccia bread
Eight 4-inch rosemary stalks
8 cherry tomatoes

Steps:

  • In a large bowl, combine all contents of salad kit and chicken strips. Toss to combine.
  • Cut focaccia loaf in half horizontally. Fill focaccia bread with chicken Caesar salad. Cut focaccia sandwich into 8 portions.
  • Take each rosemary stalk and strip bottom half of the rosemary from the stalk, leaving leaves at top.
  • Insert rosemary skewers through tomatoes.
  • Insert each rosemary-tomato skewer into the top of each sandwich.

1/2 cup Balsamic Base, recipe follows (or balsamic vinegar)
5 ounces (1/2 a box) frozen chopped spinach, defrosted, drained
1/2 cup sour cream
2 tablespoons mayonnaise
1 clove garlic, grated
1 lemon, zested and juiced

One 6-ounce jar marinated artichoke hearts, drained
Fresh Focaccia, recipe follows
1/2 cup sun-dried tomatoes packed in oil, sliced into thin strips
1 pound ball fresh mozzarella, sliced into 1/4-inch slices
2 cups arugula
4 cups balsamic vinegar
2 tablespoons brown sugar
1 teaspoon kosher salt
1/2 teaspoon freshly cracked pepper
8 fresh basil leaves
5 sprigs fresh thyme
4 cloves garlic, crushed
1 large shallot, roughly chopped
2 cups warm water (105 to 110 degrees F)
1 tablespoon sugar
2 packages active dry yeast
4 cups all-purpose flour, plus more for dusting
1 cup whole wheat flour
1 1/2 tablespoons kosher salt
1 teaspoon chopped fresh rosemary, finely chopped, plus leaves, for garnish
1 cup olive oil, plus more for brushing
8 thinly sliced rounds beefsteak tomato
2 tablespoons grated Parmesan

Steps:

  • For the chicken: Marinate the chicken in the Balsamic Base for at least 30 minutes or up to 2 hours in the refrigerator.
  • Preheat a grill pan or grill over medium-high heat.
  • Let any excess marinade drip off the chicken, and then grill the chicken for 5 to 6 minutes per side until cooked through. Once cooked, let rest 5 to 10 minutes. Then slice thinly on the bias.
  • For the spinach and artichoke spread: Squeeze the drained spinach with a kitchen towel to dry it out. Place into a food processor with the sour cream, mayonnaise, garlic, lemon zest and juice. Puree until smooth. Taste for seasoning and add the artichokes. Pulse 2 to 3 times to leave the artichokes slightly chunky.
  • For the sandwich build: Cut the Fresh Focaccia in half equatorially. Spread each half with Spinach Artichoke Spread. Then, on the bottom of the bread, sprinkle over the sliced sun-dried tomatoes, top with chicken slices, place a layer of mozzarella down and top with arugula. Place on the other half of bread and cut into as many pieces as you like and enjoy!
  • Heat the balsamic vinegar in a heavy-bottomed saucepan over medium heat. Add the brown sugar, salt, pepper, basil, thyme, garlic and shallots into the saucepan and stir. Bring the mixture to a gentle simmer and let cook until the liquid is reduced by half, 30 to 45 minutes. Once the mixture is reduced, strain it through a fine mesh strainer set over a bowl and let cool. Store the balsamic base in the fridge; it's great in salad dressings, marinades, drizzled over steaks...let your imagination run wild.
  • Place the water in the bowl of a stand mixer. Add the sugar, sprinkle the yeast over the water and let it bloom until bubbly, 5 to 15 minutes.
  • In a mixing bowl, combine the all-purpose and wheat flours together with the salt and chopped rosemary. Gradually add the flour mixture to the bloomed yeast in the mixing bowl. Then add 1/2 cup of the olive oil.
  • Using the dough hook attachment, mix the dough on medium speed until it becomes smooth and soft, 8 to 10 minutes. The dough will be very loose.
  • Transfer the dough to a clean, floured surface and knead the dough by hand for 2 to 3 minutes.
  • Wipe out the bowl you mixed the dough in and then coat the bowl with some olive oil. Return the dough to the oiled bowl and let it rest in a warm place, covered with a dish towel, until doubled in size, 30 to 35 minutes.
  • Oil a 9-by-13-inch baking sheet with the remaining 1/2 cup olive oil. Spread the dough into the pan using your fingertips to create dimples into the dough. The more dimples you make, the more texture the bread will have.
  • Using a pastry brush, oil the dough and place leaves of rosemary into some of the dimples. Top with the tomato slices and sprinkle with the Parmesan. Cover the dough again with the towel and let rest in a warm spot until doubled in size, another 30 minutes.
  • Preheat the oven to 425 degree F and set a rack in the middle of the oven.
  • Bake the dough until golden brown, 35 to 40 minutes.

1 cake yeast or 1 envelope active dry yeast
1 cup warm water
1 1/2 teaspoons sugar
2 tablespoons olive oil, plus 2 to 3 tablespoons for greasing and brushing
3 to 3 1/4 cups all-purpose flour
2 to 3 cloves garlic, peeled
1/4 cup mixed chopped fresh herbs, including basil, marjoram and thyme
1 tablespoon cracked black peppercorns
1 tablespoon kosher salt

Steps:

  • Combine the yeast, water and sugar in a bowl, and let stand for 5 minutes, or until foamy. Stir in the oil and 3 cups of the flour. Knead the dough by hand for 6 to 8 minutes until smooth and elastic, or use a food processor or a mixer fitted with a dough hook. If necessary, add more flour; the dough should be soft and pliable but not sticky.
  • Place the dough in an oiled bowl, brush the top with oil, cover with plastic wrap, and let rise in a warm place for 1 hour or until doubled in bulk.
  • Punch the dough down, and form it into a long 2-inch-thick roll. Cut the roll into 2-inch pieces. Form each piece into a ball, and keep covered with a damp dish towel. Roll out each ball as thinly as possible to make a flat bread 6 to 8 inches in diameter and 1/8-inch thick. Lightly dust each round with flour, and stack, separated by pieces of wax paper.
  • Heat the grill until it is medium-hot. Mince the garlic, and combine with the herbs in a small bowl. Combine the cracked peppercorns and salt in another small bowl. Lightly brush each round with olive oil, sprinkle with herbs and the salt mixture, and place, oiled side down, on the grill. Cook for 30 to 60 seconds, or until slightly puffed and blistered. Lightly brush the top with oil, and sprinkle on more herbs and the salt mixture. Turn the focaccia, and cook another 30 seconds or until lightly browned. Cook all the dough the same way.
  • Just before serving, sprinkle each focaccia with a few more herbs and the salt mixture.

2 medium zucchini, shredded
2 teaspoons salt
1 tablespoon olive oil
1 15-ounce container whole-milk ricotta cheese
1/4 cup freshly grated Parmesan cheese
1 teaspoon grated lemon peel
4 5x4-inch pieces focaccia or ciabatta, halved horizontally
2 large tomatoes, thinly sliced
4 purchased roasted chicken breasts, skinned, boned, thinly sliced crosswise

Steps:

  • Mix zucchini and salt in medium bowl. Transfer to colander; set over bowl. Let stand 15 minutes to drain liquid from zucchini. Rinse and drain zucchini. Squeeze zucchini to remove liquid.
  • Heat oil in large skillet over medium heat. Add zucchini and sauté 2 minutes. Cool slightly. Add ricotta, Parmesan and lemon peel to zucchini. Stir to blend. Season to taste with salt and pepper. (Can be made 8 hours ahead. Cover; chill.)
  • Preheat broiler. Arrange focaccia pieces cut side up on baking sheet. Broil focaccia just until lightly toasted. Spread ricotta mixture generously over 8 focaccia pieces. Broil until ricotta mixture is heated through and beginning to brown in spots, about 4 minutes.
  • Top 4 focaccia pieces with tomato slices, then with chicken slices, dividing equally. Sprinkle with salt and pepper. Cover with remaining 4 focaccia pieces, ricotta-mixture side down. Cut sandwiches diagonally in half and serve.
