Number Of Ingredients 7

1 Whole-wheat pizza crust (store-bought, preferably organic)
1 cup of grilled chicken slices
1/2 cup of Pizza Sauce
1/2 cup of arugula + spinach (loosely packed)
3/4 cup pepper jack or mozzarella cheese
2 tbsp. grated or shredded parmesan cheese
1 tsp olive oil for brushing

Steps:

  • Preheat oven to 400F.
  • Grease a pizza stone or large cookie sheet lightly with oil. Lay the whole-wheat pizza crust on it. Brush it with olive oil generously (or the crust will become soggy from the sauce).
  • Spread the pizza sauce on the prepped crust and sprinkle the cheese.
  • Arrange the grilled chicken slices and throw in the spinach+arugula.
  • Bake for 5 to 6 minutes (or according to package instructions) till the cheese melts.
  • Sprinkle the parmesan cheese on top, slice and serve.

Two 8-ounce balls prepared pizza dough, each rolled into a thin circle
2 cups shredded chicken (I use a rotisserie chicken)
1/2 cup Buffalo sauce (or 1/4 cup hot sauce, such as Frank's, mixed with 1/4 cup melted unsalted butter)
2 cups shredded mozzarella
1/2 cup blue cheese crumbles
1 tablespoon minced chives
Celery leaves, for garnish

Steps:

  • Preheat a grill to medium-high heat for indirect grilling.
  • Place the dough circles on the hot side of the grill. Let cook for 1 minute, then flip with tongs, moving to a cooler spot on the grill (about medium heat) until the dough begins to pull away from the grill, about 1 minute. Remove to a platter or baking sheet.
  • In a large bowl, toss the shredded chicken with the Buffalo sauce. Divide the chicken mixture between the 2 grilled crusts and top with equal amounts of mozzarella and blue cheese crumbles. Put the pizzas back on the grill and grill until the cheese melts, just a minute or 2.
  • Sprinkle with chives and garnish with celery leaves. Cut into fourths and serve.

2 Tbsp ranch dressing with bacon (if desired)
1/2 small onion (chopped small)
1/2 small tomato (diced)
1 scoop(s) Mexican blend shredded cheese
2 dash(es) Creole seasoning
1 1/2 dash(es) salt and pepper
1 medium burrito shell or soft taco shell
* may add any other vegetable you like

This is a pizza I came up with while experimenting with different toppings. I served it the first time to DD and a few of her friends and they loved it.

11 ounces pizza dough
1/4 cup Frank's red hot sauce
1/4 cup butter, melted
1 1/2 cups chicken, cooked
1/4 cup onion, chopped finely
1/2 cup blue cheese, crumbled
1 1/2 cups mozzarella cheese, shredded
1/2 cup ranch dressing

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Grease a 12 inch x 12 inch non-stick pizza pan or a 15 inch x 10 inch non-stick baking sheet with shortening.
  • Press dough onto sheet.
  • Mix hot sauce and butter together.
  • Spread half of the hot sauce mixture over dough.
  • Mix together the onions, chicken and remainder of hot sauce.
  • Spoon mixture evenly over dough.
  • Sprinkle with cheeses.
  • Bake 15 to 20 minutes or until bottom of crust is golden brown.
