1 pound boneless skinless chicken breasts, cut into 1-1/2-inch cubes
1 medium sweet red pepper, cut into 1-1/2-inch pieces
1 medium zucchini, cut into 1-1/2-inch pieces
1 medium red onion, cut into thick wedges
2/3 cup sun-dried tomato salad dressing, divided

Steps:

  • In a large bowl, combine chicken and vegetables. Drizzle with 1/3 cup dressing and toss to coat. Alternately thread chicken and vegetables onto 4 metal or soaked wooden skewers., Grill kabobs, covered, over medium heat or broil 4 in. from heat until chicken is no longer pink, 8-10 minutes, turning occasionally and basting with remaining dressing during the last 3 minutes.

30-minute easy grilled chicken and vegetables image

This easy grilled chicken and vegetables recipe takes 30 minutes to make and is a delicious, healthy family dinner plus it is great for meal-prep.

¼ cup olive oil
¼ cup fresh lemon juice
4 garlic cloves (crushed)
1 tsp smoked paprika
½ tsp chilli flakes
1 tsp dried oregano
1 tsp salt
black pepper (to taste )
4 large chicken breasts (skinless + de-boned)
2 bell peppers (seeds removed and sliced into thick strips)
broccolini
12-16 spears asparagus (woody ends trimmed )
2-3 large zucchini/courgette (sliced into thick slices )

Steps:

  • Pre-heat the grill/griddle pan.
  • Season the chicken with salt and allow to sit while you make the marinade.
  • Combine all the marinade ingredients and mix well. Pour half of the marinade over the chicken and the other half over the vegetables. Allow to marinade for a few minutes.
  • Grill the chicken for 5-7 minutes per side (depending on thickness) until cooked to your preference. Remove from the grill, cover with foil and allow to rest while you grill the vegetables.
  • Grill the vegetables until they are starting to char and are cooked to your preference.
  • Remove from the grill and serve with the chicken and lemon wedges for squeezing.

1 1/2 pounds boneless, skinless chicken thighs (about 5), cut into 1 1/2-inch-wide strips
3 tablespoons extra-virgin olive oil, divided, plus more for dressing
Coarse salt and freshly ground pepper
2 medium zucchini, cut crosswise into 1-inch-thick rounds
16 medium cipollini onions (about 10 ounces), peeled
16 medium cremini mushrooms (about 8 ounces), trimmed
1 lemon, zested and juiced
1/2 cup coarsely chopped fresh flat-leaf parsley leaves

Steps:

  • Soak ten 12-inch wooden skewers in water 30 minutes; drain. Preheat grill over medium-high heat. Meanwhile, toss chicken with 1 tablespoon oil; season with salt and pepper. Toss vegetables with remaining 2 tablespoons oil; season with salt and pepper. Divide chicken among 4 skewers. Skewer vegetables separately, using 2 skewers for each vegetable.
  • Place onion skewers on grill; cook 5 minutes. Add chicken and zucchini skewers; cook, turning occasionally, 5 minutes. Add mushroom skewers; cook until chicken and vegetables are cooked through and charred in places, about 10 minutes. Dress with lemon zest and juice, oil, and parsley. Skewers can be assembled and refrigerated up to 3 hours ahead; let sit at room temperature 30 minutes before grilling.

8 chicken thighs, boned and skinned, small thighs cut in half, larger ones in thirds or quarters
1 pound sweet or hot Italian sausage (optional), cut into 1- to 2-inch lengths
1 pound eggplant, zucchini or baby pattypan squash, cut into 1-inch pieces
2 bell peppers, preferably one each red and yellow, cut into 2-inch sections
2 lemons, cut into eighths
Salt and pepper to taste
Several sprigs fresh rosemary or wood skewers

Steps:

  • Start a gas or charcoal grill (or preheat the broiler); the fire should be moderately hot. If you're using wooden skewers, soak them in water to cover while you prepare the food. Using 8 skewers, alternate the ingredients, but generally, surround both chicken and sausage with the moister lemon and eggplant. Pack the food fairly tightly together on each skewer, and sprinkle with salt and pepper. If you're not using rosemary skewers, tuck some rosemary among the chicken and vegetables.
  • Grill over moderate heat, covered or not, turning the skewers 3 or 4 times to brown evenly. Total cooking time will be 10 to 15 minutes, depending on the heat of the grill and the distance from the heat source. When the chicken and sausage are browned, the eggplant will be tender; do not overcook.
  • Serve, squeezing hot lemon juice over all.
