These delicious filled hobo dinners are perfect for cooking a mixture of carrots, potatoes and your meat all in a foil packet. It is fun to make and an easy dinner option for the summertime!

1 pound lean ground beef
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
salt and pepper
1 pound baby potatoes (cut in half)
3 large carrots (sliced into one inch cubes)
1/2 onion (sliced)
2 tablespoons olive oil
1 Tablespoon Italian seasoning
1 cup colby jack cheese (shredded )

Steps:

  • Cut four sheets of heavy duty aluminum foil. Combine ground beef, garlic powder, onion powder, and salt and pepper. Shape into four patties and place in the center of the aluminum foil.
  • In a medium sized bowl toss potatoes, carrots, onion olive oil and Italian seasoning. Divide evenly between the four packets. Fold the foil over and seal each packet.
  • Place the packets on the grill or over the coals of a fire. Cook for about 45-60 minutes or until the potatoes are tender. Carefully open the foil packets and top with cheese.

2 medium zucchini, cut into 1/2 inch slices
1 large green bell pepper, cut into 1/2 inch pieces
1 large red bell pepper, cut into 1/2 inch pieces
1 lb fresh mushrooms, halved
1 large onion, coarsely chopped
6 medium carrots, cut into 1/4 inch slices
2 cups small broccoli florets
2 cups small cauliflower florets
1/4 cup olive oil
1/4 cup butter or 1/4 cup margarine, melted
1/4 cup minced fresh parsley
4 cloves garlic, minced
2 teaspoons dried basil
1 teaspoon dried oregano
salt and pepper

Steps:

  • Mix together all the vegetables in a large bowl.
  • Take two pieces of double layered heavy duty foil (18-inches square) and lay one on top of the other.
  • Put the vegetables in the center of the foil.
  • Mix together the dressing ingredients; drizzle over the vegetables.
  • Fold the foil around and over the vegetables and seal tightly.
  • Grill, covered, over medium heat for 30-35 minutes or until the vegetables are tender, turning once.

1/4 cup thinly sliced green onions
6 slices ready-to-serve fully cooked bacon, chopped

  • In a large bowl, toss potatoes with green onions, bacon, salt and pepper. 2 cups refrigerated new potato wedges (from 1 lb 4-oz package)
2 boxes (10 oz each) frozen broccoli, cauliflower, carrots & cheese flavored sauce, thawed
1 cup shredded Cheddar cheese (4 oz)

Steps:

  • Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil. Place ham piece in center of each. Top each evenly with potatoes and vegetable mixture. Bring up foil sides so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space on sides for heat circulation and expansion.

It's very easy and inexpensive to make a delicious and healthy side dish that will feed a large crowd. The fun part is that you can add a little more or less of any ingredient, or even substitute completely.

3 baking potatoes, peeled and chopped
5 -6 carrots, chopped
1 bunch asparagus, chopped into 1-inch pieces
1 (8 ounce) package portabello mushrooms, chopped

1/2 teaspoon pepper

Steps:

  • TIP: Chop the vegetables in sizes that relate to how quickly they cook. For example, chop the carrots smaller than the mushrooms.
