Grilled Prosciutto Wrapped Figs Stuffed with Goat Cheese image

6 Black Mission figs, cut in 1/2
1/2 cup balsamic vinegar, plus extra for dressing
Crushed red pepper flakes, optional
12 slices prosciutto
1/2 log goat cheese
Extra-virgin olive oil
2 cups baby arugula
1/2 cup Parmigiano-Reggiano, shaved with a vegetable peeler
Kosher salt

Steps:

  • Preheat the grill and brush with a grill brush to remove any excess crud and fat. After brushing, run an oiled towel over the grates to pick up any loosened crud or soot.
  • Drizzle each fig half with vinegar and fill each fig center with goat cheese. Sprinkle a couple flakes of crushed red pepper, if using, on top of the goat cheese and wrap each fig with a slice of prosciutto. Paint the outside of each fig very lightly with olive oil.
  • Put the figs on a cooler spot of the preheated grill. The idea here is that we want to grill the figs gently to cook the fig all the way through but to still get the char on the outside. Grill the figs on all sides so the prosciutto is starting to become crispy and the fig feels soft when squeezed, about 5 to 6 minutes.
  • While the figs are grilling, in a large bowl, toss the arugula with a little extra-virgin olive oil, some balsamic vinegar and the Parmigiano-Reggiano. Taste, and add salt, if needed. Arrange on individual serving plates or a serving platter and top with the figs. Drizzle a couple of drops of balsamic on each fig and serve.

8 ounces fresh soft goat cheese
2 teaspoons finely chopped fresh rosemary
Salt and freshly ground black pepper
24 fresh figs, mixed varieties
1/4 pound thinly sliced prosciutto
6 long woody sprigs rosemary
Olive oil for brushing and drizzling

Steps:

  • Combine goat cheese, rosemary, and a pinch of salt and pepper in a small mixing bowl, and stir.
  • Make a small slit in bottom or side of each fig. Fill a pastry bag fitted with a small plain tip with cheese mixture. Pipe cheese into each fig through slit. Fill figs with just enough cheese so they expand slightly.
  • Tear or cut the prosciutto slices into long strips. Wrap a strip of prosciutto around each fig, and skewer 4 figs on each rosemary sprig. Brush figs with olive oil, and season with salt and pepper.
  • Place figs on a moderately hot grill, rotating skewers until figs are very hot and cheese starts to ooze, about 6 minutes. Remove from grill; serve immediately with a drizzle of olive oil and good bread.

Toss the asparagus with the olive oil and season with salt and pepper to taste. Wrap a piece of prosciutto around each spear and place on a platter. Drizzle with lemoncaper vinaigrette and top with the cheese.

12 fresh black Mission figs, stems removed
2 ounces blue cheese, cut into 12 equal pieces
6 pecan halves, broken in half lengthwise
6 thin slices proscuitto, 2 to 3 ounces, cut in half lengthwise
Olive oil, for brushing
Honey, for serving

Steps:

  • Place 12 skewers (4 inches each) in water to soak for at least 10 minutes. Heat a grill pan over medium-high heat.
  • Slice the figs through the center vertically without cutting all the way through. Carefully open each fig, and place a slice of cheese and a pecan piece inside each. Gently squeeze figs to enclose the cheese. Wrap figs horizontally with a strip of proscuitto and skewer to secure. Brush the figs with oil and place on the grill. Cook, just until grill marks begin to appear, about 1 1/2 minutes. Turn and repeat with opposite side.
  • Transfer to a serving platter, and lightly drizzle with honey. Serve warm or at room temperature.

  • Heat oven to 350°F. In a small pot over medium heat, cook tomato, onion and garlic until tomato breaks down and resembles jam, 15 minutes.

4 cups arugula leaves, packed (it seems like a lot now, but it gets wilted down during the cooking process)
8 slices prosciutto
1/3 cup goat cheese, crumbled
2 tablespoons lemon juice (about 1 lemon)
1/4 cup extra virgin olive oil

Steps:

  • Preheat grill. Brush grates with vegetable or corn oil.
  • In a small bowl, whisk together the 2T lemon juice and extra virgin olive oil. Place arugula leaves into a large bowl, and dress it with the lemon vinaigrette. Toss to mix well. Set aside. [I know it may seem like a lot of arugula at this point, but it will wilt down during the cooking process.].
  • Roll out pizza dough according to your recipe or store bought instructions. Once the grill is hot (you can hold your hands an inch over the grates for no more than 2 or 3seconds), carefully place the pizza dough onto the grill. Grill for about two minutes on one side. The pizza dough will also immediately puff up. Flip the pizza dough onto the other side and grill for another two minutes. Remove from grill onto a cookie sheet with tongs. Close the lid of the grill to retain its heat. [If you are using a ready-made pizza crust, cook it for two minutes on each side to get the grill marks and flavor.].
  • Place slices of smoked mozzarella around top of the pizza crust. And then in this order, spread all of the arugula leaves around, layer with prosciutto slices, and top with crumbled goat cheese.
  • Place the cookie sheet onto the grill and close the lid. [This allows for the toppings to cook without burning the pizza crust.] Cook for about five minutes, or until the cheese has melted, the arugula has wilted, and the prosciutto has crisped up a little. 1 granny smith apple, peeled and thinly sliced

Steps:

  • 1. Heat olive oil over medium-low heat in a dutch oven or large pot. Once hot, add onion and cook, stirring occasionally until softened, about 10 minutes. Add the garlic and cook for 1 more minute, stirring to avoid burning the garlic. Stir in the tomatoes, chicken stock and salt and pepper. Bring to a boil, then reduce heat and simmer for about 20 minutes. Remove from heat and let cool slightly. Carefully transfer mixture to a blender and puree until smooth. Return mixture to the pot. Stir in the cream, basil and sugar, bring to a boil and let simmer for another 20 minutes until thick and creamy. While soup is simmering, make grilled cheese. Melt butter in a skillet over medium heat. Place a piece of bread in the skillet and layer with prosciutto, Gruyere, cheddar and apple. 8 slices prosciutto
1 cup packed baby arugula

Steps:

  • Heat grill pan to medium-high.
  • Heat the olive oil in small pot over medium heat with garlic and rosemary to infuse flavor, 3 to 4 minutes.
  • Brush eggplant with olive oil and season with salt and pepper, grill 2 to 3 minutes on each side to tenderize. Remove from heat.
  • Make sandwiches on split flat breads of 2 slices each eggplant, blue cheese, prosciutto and a handful of arugula.
  • Heat a dry skillet over medium heat. Choose a second skillet that can fit down inside the first and get a few heavy cans ready to weight skillets. When pan is hot, add 1 flat bread, weight down with second skillet and cans and cook 1 minute, flip, cook a minute more. Repeat process with remaining ingredients and serve.

12 firm but ripe figs, preferably Adriatic figs, stemmed
1/2 to 3/4 cup (4 to 6 oz./125 to 180 g) fresh goat cheese,
preferably Pennyroyal Farm
12 paper-thin slices prosciutto
A handful of arugula
Saba for drizzling
Extra-virgin olive oil for drizzling
Freshly ground pepper, to taste

Steps:

  • Preheat a hot fire in a grill for grilling over direct and indirect heat. Using a sharp knife, make a lengthwise slit in a fig starting at the stem end, cutting about three-quarters of the way through the fruit. Gently open the fig and stuff it with 2 to 3 teaspoons of the goat cheese (the amount that will fit will depend on the size of the fig). Press the sides of the fig together to close. Wipe off any goat cheese remaining on the outside of the fig, then wrap 1 slice of the prosciutto around the fig, making sure the opening at the top of the fig is completely covered by the prosciutto. Repeat with the remaining figs, goat cheese and prosciutto. Thread a metal or wooden skewer horizontally through the center of each fig. Grill the figs over high heat, with the stem end (the side stuffed with goat cheese) facing up, until the bottom is nicely grill marked, about 1 minute. Using the skewer, turn the fig 180 degrees to form crosshatch grill marks and continue grilling about 1 minute more. Flip the figs so that the stem end is now facing down, move to a cooler part of the grill and cover the grill. This will allow the goat cheese to melt without the figs burning. Continue cooking until the goat cheese is just beginning to melt, about 3 minutes. Remove the figs from the grill and remove from the skewers. Spread the arugula on a platter and arrange the figs on top. Drizzle some saba and olive oil on top of the figs, season with pepper to taste and serve immediately. Serves 6.   • Need Pepperidge Farm cinnamon raisin swirl bread Brie cheese Butter Green apple Fresh prosciutto Gruyere (optional) Instructions Place one tablespoon of butter on your frying pan or skillet and lightly butter the outsides of the bread. On medium heat place your bread on the pan, butter side down. The sequence of ingredients that comes next is very important. First is the gruyere layer. Just two thinly sliced small pieces is fine. I used the gruyere to give it more of a sharp cheesy flavor. Brie can be bland at times depending on where you buy it. Next is one slice of prosciutto. On top of the prosciutto is the apple. Very important: The apple slices must be paper thin. It will be difficult to eat and too tart if not. I used a mandolin and it worked well. The last layer is the brie, about three strips without the rind (because the cheeses are closest to the grill you get the right gooey consistency with out burning the bread). By the time you are done layering and your bread top goes on butter side up, you should be ready to flip. Check the color and crisp of the bread. It should be golden brown and just slightly crunchy.

4 - boneless skinless chicken breasts
4 slice(s) prosciutto
MARINADE
2 clove(s) garlic, minced
1 medium shallot, minced
1 - lemon, juiced and zested
1 tablespoon(s) dijon mustard
1/4 cup(s) white wine (Sauvignon blanc)
1/4 tablespoon(s) extra virgin olive oil
1 teaspoon(s) salt
1 teaspoon(s) pepper
GOAT CHEESE MIXTURE
4 ounce(s) goat cheese (room temperature)
1 - lemon juiced and zested
1 tablespoon(s) fresh thyme
1 tablespoon(s) fresh oregano
1 tablespoon(s) fresh rosemary
1/2 teaspoon(s) salt
1/2 teaspoon(s) pepper

Steps:

  • Preheat the grill to 400°F.
  • In a bowl mix together the ingredients for the marinade. Put the 4 chicken breasts into a gallon zip lock bag and add the marinade. Marinate for 20 minutes.
  • In a separate bowl, mix together the Goat Cheese Mixture ingredients and set aside.
  • Once the chicken has marinated for 20 minutes, remove from the gallon bag. Cut a pocket in the side of each chicken breast. Make sure you do not cut all the way through the breast. Put one slice of prosciutto in each chicken breast pocket and 1⁄4 of the goat cheese mixture. Use toothpicks to seal the cut side of the pocket.
  • Once your grill has pre-heated, put the chicken breast on the grill. Cook for 18-22 minutes, until chicken is completely cooked through. Serve warm at your next BBQ with friends and family, enjoy!

Salty prosciutto covered creamy melted fresh mozzarella and balanced by sweet fig preserves and peppery arugula all wrapped in a crusty ciabatta bun and grilled to perfection.

1 ciabatta bun, sliced in half
1 tablespoon olive oil
2 tablespoons fig preserves
2 slices prosciutto
1/4 cup fresh mozzarella, room temperature
1 handful arugula tossed with 1 teaspoon balsamic vinaigrette

Steps:

  • Assemble sandwich and grill until golden brown and the cheese has melted, about 2-3 minutes per side.
