1 tablespoon Hellmann's® or Best Foods® Real Mayonnaise
2 slices crusty Italian bread
2 (1 ounce) slices white Cheddar cheese

Steps:

  • SPREAD one slice of bread with Hellmann's® or Best Foods® Real Mayonnaise. Place bread Mayonnaise-side-down into hot skillet; add cheese.
  • SPREAD other slice of bread with Mayonnaise and place Mayonnaise-side-up on top of cheese.
  • COOK until lightly browned on one side. Flip over and cook until cheese is melted.

The classic and simple grilled cheese sandwich can be reimagined multiple ways just by changing up the bread and cheese.

2 ounces sliced melting cheese (about 2 slices), such as American, Cheddar, muenster, Havarti, Swiss, fontina, Mozzarella, Monterey jack, pepper jack, provolone
2 slices bread, such as white, rye, brioche, sourdough, potato, whole wheat, pumpernickel
1 tablespoon fat, such as mayonnaise, butter or olive, chili or coconut oil

Steps:

  • Oven method (great for a crowd of six or fewer): Put a rimmed baking sheet on the middle rack of the oven and preheat to 450 degrees F. Make one sandwich per person: Sandwich 2 slices of cheese between 2 slices of bread. Spread or brush the outside of the sandwich with 1 tablespoon of fat. Place on the preheated baking sheet and cook until the cheese starts to melt, about 5 minutes. Flip the sandwich and bake until golden brown, an additional 5 minutes.
  • Panini press method (for crispy crunchy sandwich that needs minimal attention): Sandwich 2 slices of cheese between 2 slices of bread. Preheat a panini press to medium heat. Spread or brush the outside of the sandwich with 1 tablespoon of fat and place in the press. Close the top and cook until lightly browned and the cheese is melted, 5 to 6 minutes.
  • Skillet method (fool-proof and low-tech): Sandwich 2 slices of cheese between 2 slices of bread. Preheat a skillet over medium-low heat. Spread or brush the outside of the sandwich with 1 tablespoon of fat and cook until lightly browned, 3 to 4 minutes. Flip the sandwich, and continue cooking until browned and the cheese is melted, 3 to 4 minutes more.
  • Great combos:
  • 1. Pepper jack and sourdough, brushed with chili oil
  • 2. American and white bread, brushed with butter
  • 3. Swiss and rye, brushed with mayo
  • 4. Cheddar and brioche, brushed with butter

Here's what you need: sourdough bread slices, unsalted butter, cheddar cheese slices, bacon strips, maple syrup, brown sugar, black pepper

4 sourdough bread slices
2 tablespoons unsalted butter
4 cheddar cheese slices
8 bacon strips
½ cup maple syrup
⅓ cup brown sugar
black pepper, to taste

Steps:

  • Preheat the oven to 400°F (200°C), and double line a large baking sheet with aluminum foil fitted with a wired rack; set aside.
  • In a small mixing bowl add maple syrup and brown sugar, then mix until combined with no lumps.
  • Place bacon strips evenly on the wired rack and generously brush maple syrup mixture over the top of the bacon and bake for 12 to 15 minutes. Remove from the oven, flip each strip and brush on the remaining mixture. Return to the oven and continue to cook for another 8-10 minutes or until it reaches your desired level of crispiness, then garnish with coarse black pepper.
  • Heat a skillet over medium heat. Butter one side of each slice of bread. Place the buttered side down on the skillet, add 2 slices of cheddar cheese then top with the remaining slice of bread, buttered side out.
  • Cook until bread is toasted and golden and cheese starts to melt, about 2 minutes. Flip, and cook until cheese melty and bread toasted and golden. Remove from heat, and set aside for 5 mins.
  • Cut each grilled cheese sandwich into even 1.5x1.5-inch squares, set aside.
  • Assemble each skewer starting with a grilled cheese square, then bacon strip, alternating until the end by spiralling the bacon strip in-between each square until finished. Serve and enjoy!

4 tablespoons unsalted butter, softened
2 tablespoons chopped fresh parsley
1 tablespoon grated Pecorino Romano cheese
1 clove garlic, minced
4 slices white bread
4 slices provolone cheese
½ cup shredded mozzarella cheese

Steps:

  • Heat a large skillet over medium heat.
  • Combine butter, parsley, Pecorino Romano cheese, and garlic in a small bowl. Stir to combine.
  • Lightly coat 1 side of each bread slice with the butter mixture. Flip bread and top 2 slices evenly with provolone cheese and mozzarella cheese. Cover with remaining bread slices, buttered-sides up.
  • Place sandwiches into the hot skillet. Cook until golden brown on one side, 3 to 4 minutes. Flip and cook until golden brown on the second side and cheese has melted, 3 to 4 minutes more. Cut each sandwich in half and serve.

This is an adopted recipe that my husband raved over. I used a Pesto Jack cheese and hunks of leftover roasted garlic ciabatta rolls for the bread. It was FABULOUS. Of course, who doesn't like melty cheese and garlic? The original chef states: "These do not require a very hot fire, so the perfect time to cook them is over the embers, right after you take the main course off the grill."

10 sun-dried tomatoes, halves, in oil
2 tablespoons oil, from the sun-dried tomatoes
1/2 cup olive oil
1 garlic clove, finely minced
1/4 teaspoon salt
1/2 lb French bread, cut into 1-inch cubes (about half of a large loaf)
3/4 lb monterey jack cheese, cut into 1/2 inch cubes

Steps:

  • Place a grilling rack over the barbecue, about 4 to 6 inches from the heat.
  • Put the 2 tablespoons of oil from the sun dried tomatoes in a large bowl.
  • Pat the tomato halves dry with a paper towel and cut into quarters, set aside.
  • Stir the olive oil, garlic and salt into the tomato oil.
  • Toss the bread cubes into the oil mixture until they are well-coated.
  • Thread bread, cheese and tomato quarters, alternately on skewers.
  • Grill over coals for about 5 minutes or just until the cheese begins to melt and the bread is toasted.
  • Serve immediately.
