4 bananas
1 tbsp butter, melted
1 tbsp brown sugar (maple syrup or honey)
1/2 tsp cinnamon

Steps:

  • Preheat the grill to medium high heat. Stir together the melted butter, brown sugar, and cinnamon.
  • Slice the bananas in half, leaving the peel on the bananas. This will hold the bananas together and ensure they don't fall apart on the grill. Brush the exposed banana halves with the butter, sugar, and cinnamon mixture. Let rest for 10 minutes. This helps the sugar dissolve.
  • Start grilling the banana with the flesh side down. Grill for 2-3 minutes until grill marks form and banana slightly softened. Turn over to peel side and grill for about 1 minute. You know it's done when the banana begins to pull away from the peel.
  • Serve immediately. Consider topping with drizzle chocolate, peanut butter, or both.

2 bananas (not too ripe)
2 tablespoons sugar
2 tablespoons ground cinnamon
2 tablespoons honey
Vanilla ice cream, for serving
Bourbon or other liqueur, for drizzling, optional

Steps:

  • Build a charcoal fire or preheat a gas grill.
  • Slice the bananas, in their skins, in half crosswise and then lengthwise so each banana yields 4 pieces. Set aside on a clean platter. In a small bowl, combine the sugar and cinnamon. Drizzle the honey on the cut sides of the bananas and sprinkle them with the cinnamon sugar. Let the bananas sit for 5 minutes.
  • Place the bananas, cut side down, on the center of grill. Grill for 2 minutes or until grill marks appear. Using a pair of tongs, turn them over and cook for 5 more minutes, or until the skin pulls away from the bananas. Remove the bananas from the grill and serve them immediately, on top of vanilla ice cream and drizzled with bourbon or liqueur, if desired.

4 bananas, cut into 1/2-inch-thick slices
8 chocolate chip cookies (2 inch)
1/2 cup cajeta (goat milk caramel)
2 cups JET-PUFFED Miniature Marshmallows
1/2 cup thawed COOL WHIP Whipped Topping, divided

Steps:

  • Heat grill to medium heat.
  • Arrange banana slices in single layer in centers of 8 sheets of heavy-duty foil sprayed with cooking spray. Top each with 1 cookie, 1 Tbsp. cajeta and 1/4 cup marshmallows.
  • Bring up foil sides. Double fold top and both ends to seal each packet, leaving room for heat circulation inside.
  • Grill 4 to 5 min. or until marshmallows are slightly melted. Serve warm topped with COOL WHIP.

EASY CARAMELIZED BANANAS

These are great for breakfast over pancakes, waffles, french toast, crepes, oatmeal, etc. Or serve with low fat ice cream and toasted macadamia nuts for dessert. You can use regular tub margarine or butter in place of the cooking spray. However, this will double the cooking time, and make for a crunchier stickier outside to your banana.

2 -3 bananas
4 -6 tablespoons granulated sugar (or more)
cooking spray (regular or butter flavor)

Steps:

  • Slice bananas into thick coins or lengthwise strips, depending on your preference.
  • Pour sugar onto a plate. Roll bananas in sugar, until completely coated.
  • Spray a medium size nonstick pan, and heat over medium high heat. Add bananas and sugar.
  • Cook bananas until light to golden brown underneath, about 4-5 minutes (you can lift with a spatula or fork to peek). Be careful not to overcook or burn them (if you smell them browning, or see color in the pan, flip them right away). Keep in mind these times will vary, depending on your stove.
  • Gently flip bananas over to brown other side, turning heat down to medium. The second side will brown in about one minute.
  • Transfer to a plate that has been coated with cooking spray (otherwise they may stick - they are ooey gooey and sticky!) and serve. Alternately, slide them right onto your ice cream or breakfast food.
  • Soak pan in hot water to facilitate cleaning.

6 ripe firm large bananas, unpeeled
6 tablespoons chocolate chips
6 tablespoons miniature marshmallows
2 tablespoons chopped pecans

Steps:

  • Cut 6 (12-inch) sheets of heavy-duty foil. Heat gas or charcoal grill, or heat oven to 350°F.
  • With sharp knife, make deep lengthwise cut along inside curve of each banana, being careful not to cut all the way through. Open slit to form pocket. Crimp and shape 1 sheet of foil around each banana, forming boats.
  • Holding each banana in hand, fill pocket with 2 tablespoons chocolate chips, 2 tablespoons marshmallows and about 1/2 heaping teaspoon chopped pecans.
  • Return each banana to its foil boat. Seal top of foil, leaving 2 to 3 inches headspace. Place on grill over medium heat. Cover grill; cook 8 to 10 minutes or until marshmallows soften. Or bake 15 to 20 minutes in oven until marshmallows soften. (Can also place in campfire coals to cook.)
