4 baking potatoes
3 tablespoons olive oil
1 teaspoon minced fresh garlic
¼ teaspoon salt
¼ teaspoon ground black pepper
1 ½ teaspoons onion powder
½ teaspoon paprika

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a baking sheet.
  • Cut each potato into 12 wedges; place in a large bowl. Toss potatoes with olive oil, garlic, salt, pepper, onion powder, and paprika. Arrange in a single layer on prepared baking sheet.
  • Bake in preheated oven for 20 minutes. Turn potatoes over and continue baking until golden and crisp, 25 to 30 minutes longer.

We just started cooking with a 30-inch gas grill after decades of using a Weber® charcoal grill. While we still use the charcoal grill, the extra space allotted to us on the gas grill has made us really branch out with different sides. I created this one knowing we could put the potatoes directly on the grill and not have to make a foil packet to make it fit!

¼ cup olive oil
1 large clove garlic, peeled and crushed
2 tablespoons chopped fresh rosemary, or more to taste
2 tablespoons chopped fresh thyme, or more to taste
4 Idaho potatoes, each cut into 8 wedges
1 teaspoon garlic salt
freshly ground black pepper to taste

Steps:

  • Combine olive oil, crushed garlic, chopped rosemary, and chopped thyme in a covered container; let stand for 2 hours or longer.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Put potatoes in a large saucepan and pour in enough salted water to cover; bring to a boil; cook over medium-high heat until mostly tender, 8 to 9 minutes. Drain potatoes and transfer to a bowl.
  • Remove garlic from the olive oil mixture and discard. Pour oil over potatoes, sprinkle with garlic salt and black pepper, and toss to coat.
  • Place potatoes skin-side down on the grill over direct heat; reserve remaining oil. Grill for 10 minutes; move potatoes to indirect heat until completely cooked, 5 to 10 minutes. Transfer to a serving bowl and drizzle remaining oil over potatoes.

Number Of Ingredients 15

4 large unpeeled potatoes, cut into wedges
1 lemon, cut into wedges
8 whole garlic cloves, unpeeled
1 sweet onion, peeled and cut lengthwise through the root end into small wedges
4 bay leaves
3 tablespoons fresh lemon juice
4 tablespoons water
1 tablespoon tomato paste
salt and pepper (preferably sea salt)
1 teaspoon paprika
1/2 teaspoon cayenne pepper
1 teaspoon dried oregano (when in season, use fresh hot and spicy oregano and double the amount)
1 teaspoon thyme
1/2 teaspoon ground cumin
4 tablespoons olive oil

Steps:

  • Preheat oven to 400° or heat the barbecue.
  • Place potato wedges in saucepan and cover with cold water, add 1 tsp of salt and bring to a boil cooking for only 3-5 minutes.
  • Drain well and place in a roasting pan with the lemon wedges, garlic, onions and bay leaves. (for barbecue, make a pan frame of foil large enough to hold all the potatoes, spray or brush with oil and place the same ingredients in).
  • Combine the lemon juice, water and tomato paste in a small bowl and add the spices and herbs and mix together well. Pour the spice mixture over the potatoes in the pan (foil) and toss together lightly.
  • Drizzle oil over top and cook in preheated oven for 35-40 minutes, or until the potatoes are tender and all the liquid has been absorbed. Turn the mixture frequently with a metal spatula.
  • Potatoes should be slightly crispy and brown and red in colour.
  • Can be served on it's own as an appetizer with dip, or with meat and poultry.

Cooking spray
1 teaspoon Cajun seasoning
1/2 cup fat-free sour cream

Steps:

  • Heat gas or charcoal grill. Cut each potato lengthwise into 8 wedges; pat dry with paper towels. Spray potato wedges thoroughly with cooking spray. Sprinkle with Cajun seasoning. Place in grill basket (grill "wok").

1 teaspoon cider vinegar
1 -2 teaspoon hot pepper sauce
1 tablespoon cajun spices

Steps:

  • Mix butter,vinegar,hot pepper sauce and cajun spice together.
  • Cut potatoes into 4 wedges.
  • Throw potatoes in sauce and cook on low for 10 minutes.
  • Preheat grill to medium.
  • Cook potatoes on warming rack or 6" from heat for 10-15 minutes, turning occasionally and brushing with sauce until tender- about 10-15 minutes.
  • Serve with ranch dressing.

1 ½ pounds large baking potatoes
¼ cup olive oil
1 teaspoon salt

  • Cut each potato in half lengthwise. Place each half flesh-side down on the cutting board and cut each half lengthwise again to make 4 large wedges. Cut each wedge in half lengthwise again for a total of 8 wedges per potato.
  • Bring a large pot of salted water to a boil. Add potato wedges and boil for about 10 minutes. Drain in a colander.
  • Whisk olive oil, salt, pepper, onion powder, chili powder, and cumin together in a bowl until smooth. Add wedges and gently toss to coat.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Grill wedges for 4 minutes. Flip and grill for 4 minutes more.
