Garlic-Mustard Grilled Beef Skewers image

One 2-pound beef tenderloin, halved and cut into 1-inch slices
Garlic-Mustard Glaze, recipe follows
4 cloves garlic, finely chopped
1/4 cup grainy mustard
2 tablespoon Dijon mustard
2 teaspoons Spanish paprika
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon low-sodium soy sauce
2 tablespoons white wine vinegar
1 tablespoon honey

Steps:

  • Heat grill to high. Skewer 2 pieces of the beef onto 2 skewers so that the meat lies flat. Brush the meat liberally on both sides with the Garlic-Mustard Glaze. Grill the meat for 2 to 3 minutes per side until golden brown and cooked to medium-rare doneness, brushing with the remaining glaze while grilling. Remove from grill and serve.
  • Whisk together all ingredients in a small bowl. Cover and let sit at room temperature for 30 minutes before using.

These Steak Kabobs are made with an easy kabob marinade and loaded with tender steak, bell peppers and red onions. Easy to make and easy to prep ahead for summer entertaining!

1.5 lb sirloin steak (trimmed)
2 bell peppers
1 large red onion
1/2 cup oil
1/4 cup Worcestershire sauce
2 tablespoons low sodium soy sauce
2 tablespoons apple cider vinegar
1 tablespoon garlic powder
1 tablespoon honey
1 teaspoon onion powder
1/2 teaspoon chipotle chili powder optional (for a bit of kick)

Steps:

  • Cut steak, peppers and onion into equal sized pieces (about 1-1.5")
  • In a large freezer bag, combine the oil, Worcestershire sauce, soy sauce, vinegar, garlic, honey, onion powder and chipotle powder if using.
  • Add steak and let marinate for at least one hour, and up to 8 hours (see notes above regarding marinade times)
  • If using wooden skewers, soak for 10 minutes before skewering your beef and vegetables.
  • Preheat the grill to medium-high.
  • Skewer your beef cubes and vegetables, alternating as you like. I try to ensure 3-5 cubes of beef per skewer, depending on how long your skewers are.
  • Place kabobs directly over the heat, cooking for 4-5 minutes before flipping and cooking another 4-5 minutes. See notes above for cook times depending on your preference for doneness.

Garlic-mustard glaze
1/4 cup whole grain mustard
2 tablespoons Dijon mustard
4 cloves garlic, finely chopped
2 tablespoons white wine vinegar
1 tablespoon low-sodium soy sauce
1 tablespoon honey
1 tablespoon finely chopped fresh rosemary leaves
2 teaspoons Spanish paprika
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Grilled beef skewers
2 pounds beef tenderloin
Twelve 6-inch wooden skewers, soaked in cold water for 30 minutes

Steps:

  • For garlic-mustard glaze:
  • Whisk together all of the ingredients in a small bowl,cover,and let sit at room temperature for at least 30 minutes and up to 4 hours before using.
  • For grilled beef skewers:
  • 1. Heat your grill to high.
  • 2. Cut the tenderloin lengthwise in half, then cut the halves lengthwise in half again. Slice crosswise to make 24 equal pieces. Skewer 2 pieces of beef onto each skewer, keeping them together at one end of the skewer. (This will make the grilled skewer easier to hold and eat.) Place the skewers in a baking dish or on a baking sheet, pour half of the glaze over the meat, and turn to coat.
  • 3. Grill the meat, turning once and brushing with the remaining glaze, for 4 to 6 minutes until golden brown, slightly charred, and cooked to medium-rare. Transfer the skewers to a cutting board and let rest for 5 minutes.
  • 4. Place the skewers on a platter and serve hot or at room temperature.

Yum, perfect for Father's Day or any warm, summer night! Be sure to leave the skewers on the grill long enough to get the beef nice and crusty on both sides. This means you have to be patient, and remember: Don't turn them often. Can also add grape tomatoes, mushrooms and chunks of red onion to the skewers. Sometimes I grill the veggies on separate skewers because they can cook quicker than the meat. Then I put all on a platter and let guests choose what they want. Plan ahead, needs to marinade for 30 minutes up to 4 hours. This is adapted from a Bobby Flay recipe. Prep time does not include marinade time.

Steps:

  • 1. MARINADE: For nutriental info, click on recipe link. https://www.justapinch.com/recipes/sauce-spread/marinade/reduced-sodium-liquid-marinade.html Ingredients 1/4 c olive oil 2 Tbsp reduced sodium worcestershire sauce 2 tsp liquid smoke 2 tsp apple cider vinegar 1/4 tsp ground ginger (powder not fresh) 1 Tbsp fresh crushed garlic, about 2 cloves 2 Tbsp chopped, fresh cilantro 1 dried mexico chile pepper 1 dried pasilla chile pepper 1 Leave pepper seeds in for more heat, or remove for less. You can also add salt to this recipe, but left out the only sodium is from the reduced sodium Worcestershire sauce. 2 Crush dried peppers in food processor. Finely chop cilantro and garlic. Mix all ingredients together.
  • 2. Soak wooden skewers in water overnite if possible, or as long as possible if cooking them the same day.
  • 3. Marinate the beef overnite, or as long as possible. I used a ziploc bag and flipped once. Before cooking, remove and place on skewers. I used a chuck roast and cut thin slices against the grain. Probably most any cut of beef would work, just be sure to slice against the grain and not more than 1/4" thick.
  • 4. We grilled them for about 4-5 min on each side.
