ITALIAN BACON WRAPPED ASPARAGUS

A great friend of mine introduced me to this recipe and this is the only way my kids will eat their asparagus now. Didn't see it on here, so thought I should share:-)

Yield 2 bundles, 5-6 serving(s)

Number Of Ingredients 3

1 lb fresh asparagus, bottoms removed
8 ounces Italian salad dressing, I use Kraft Zesty Italian
1 lb bacon, about 10 to 12 slices

Steps:

  • Cut 1 to 2 inches off bottom of asparagus spears.
  • Place in gallon sized zip top plastic bag.
  • Pour 8 ozs Italian Salad Dressing in bag with asparagus.
  • Marinate for at least 1 hour in refrigerator.
  • When ready, preheat oven to 400 degrees.
  • Wrap 3 asparagus stalks with 1 slice of bacon.
  • Place on foil lined cookie sheet.
  • Bake 20-30 minutes on 400 degrees until bacon crisp up. May have to turn over half way through cooking time.
  • Remove from pan to cool slightly.
  • I usually get around 10 to 12 bundles.
  • Enjoy!

10 fresh asparagus spears, trimmed
Cooking spray
1/8 teaspoon pepper
5 bacon strips, halved lengthwise

Steps:

  • Place asparagus on a sheet of waxed paper; coat with cooking spray. Sprinkle with pepper; turn to coat. Wrap a bacon piece around each spear; secure ends with toothpicks. , Grill, uncovered, over medium heat until bacon is crisp, 4-6 minutes on each side. Discard toothpicks.

12 asparagus spears, trimmed and blanched
12 slices bacon
2 sprigs fresh rosemary
1 lemon, halved
Roquefort cheese, for crumbling
1 dash balsamic vinegar
1 dash olive oil
salt & freshly ground black pepper
1 bunch fresh parsley, chopped

Steps:

  • To make the asparagus, flatten the bacon slices with the back of a knife. Wrap a bacon slice around each asparagus spear.
  • Heat an oiled griddle pan until it is very hot.
  • Place the wrapped asparagus, rosemary sprigs and lemon halves onto the griddle pan. Cook until grilled on both sides.
  • To make the dressing, crumble the roquefort into a mixing bowl.
  • Whisk in all the other ingredients to a smooth dressing.
  • Drizzle over the griddled asparagus and serve.
