BALSAMIC GRILLED BABY POTATOES



Balsamic Grilled Baby Potatoes image

If you've got the grill going anyway, this is a quick and easy side dish that is a hit in our household.

2 pounds baby (1 to 2-inch long) potatoes, halved lengthwise
2 tablespoons balsamic vinegar
1 tablespoon olive oil
2 tablespoons onion powder
salt and ground black pepper to taste
2 tablespoons butter, cut into small chunks

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Place a 24-inch long piece of aluminum foil on a flat work surface. Spread potatoes onto the middle of the foil. Drizzle vinegar and olive oil over the potatoes; season with onion powder, salt, and pepper. Dot the top of the potatoes with small chunks of butter.
  • Bring opposing sides of the foil up and around the potatoes. Fold the two edges together at the top to create a seam on the top of the packet. Fold the remaining two edges to seal the packet.
  • Cook potatoes in the packet on the preheated grill with the seam-side facing up for about 10 minutes, turn and cook another 10 minutes. Turn the packet once again and continue cooking until a fork stuck through the foil and into the potatoes meet no resistance from the contents, about 5 minutes more.

30 baby potatoes (1 to 1 1/2 inches in diameter; 1 3/4 lb total)
1 tablespoon plus 1 teaspoon coarse kosher salt
3 tablespoons extra-virgin olive oil

12 (6- to 8-inch) woody rosemary stems or bamboo skewers, soaked in water 30 minutes

Steps:

  • Cover potatoes by 1 inch in cold water in a 4-quart pot, then add 1 tablespoon kosher salt and bring to a boil over high heat. Reduce heat and simmer until potatoes are just tender, 12 to 15 minutes.
  • Drain potatoes in a colander and transfer to a large shallow pan to cool quickly.
  • If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is hot when you can hold your hand 5 inches above rack for 1 to 2 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes, then reduce heat to moderately high.
  • Meanwhile, toss potatoes with 1 tablespoon oil and remaining teaspoon kosher salt, then push 2 or 3 potatoes onto each rosemary stem.
  • Grill potato skewers directly over coals, turning over occasionally with tongs, until grill marks appear, 3 to 4 minutes total.
  • Transfer potatoes to a platter and drizzle with remaining 2 tablespoons oil.

1 1/2 cup orange juice
3 pomegranates, juices
1/4 cup port
1 cup red wine
1 large shallot, chopped
1 carrot, chopped
1 stalk celery chopped
1 cup chicken stock
4 black peppercorns
4 sprigs parsley
1 bay leaf
2 tablespoons cold butter
Salt and freshly ground pepper
10 small red potatoes
1/4 cup olive oil
4 cloves garlic, coarsely chopped
1/2 tablespoon ground coriander
1 tablespoon ground fennel seed
1 tablespoon cumin
1/4 cup coarsely chopped cilantro
Salt and freshly ground pepper
olive oil
12 baby lamb chops
Salt and freshly ground pepper
1/4 cup toasted pine nuts

Steps:

  • Place all ingredients in a medium saucepan and cook until reduced to a sauce consistency. Strain and whisk in cold butter. Season with salt and pepper to taste.
  • Parboil potatoes, cool and quarter. Heat oil in a large saute pan over medium heat. Add potatoes and saute until lightly golden. Add garlic and spices and cook for 3-4 minutes. Season with salt and pepper to taste. Add cilantro.
  • Heat a large grill pan. Brush lamb chops with olive oil and season with salt and pepper to taste. Grill on each side for 2-3 minutes. Serve 3 per person, drizzle with blood orange sauce, toasted pinenuts and serve with potatoes.

LEMON AND GARLIC GRILLED BABY POTATOES

This recipe works well with all grilled meats, but especially with lamb. I have tried many barbecued potatoes, but I always seem to come back to these beauties!

3 lbs small red potatoes
2 tablespoons olive oil
4 garlic, coarsely chopped
2 bay leaves
1 tablespoon fresh oregano
1 lemon, cut in half
2 tablespoons butter
2 tablespoons fresh dill

Steps:

  • Cut potatoes into small chunks.
  • In a bowl, toss the potatoes with oil, garlic, bay leaves, oregano, salt and pepper. Squeeze lemon juice onto the potatoes, then place the rind halves on top. (Can pre-cook potatoes in microwave for about 5 minutes) (May need to add more olive oil)
  • Preheat grill. Place potatoes in a small roasting pan or double thickness tin foil pans that have been sprayed with Pam, add the potatoes. Place on grill. Cook until tender, 20 - 30 minutes, stirring so all pieces cook evenly.
  • Remove from heat. Remove lemon rind and bay leaves. Add butter and dill and incorporate evenly. Salt and pepper to taste.
  • Note: Instead of fresh herbs, you can use 1 tsp dried.

1 MEDIUM SIZE VIDALIA (OR OTHER SWEET) ONION
1/4 CUP OLIVE OIL
1 1/2 TSP ADOBO SEASONING

Steps:

  • PARBOIL THE POTATOES UNTIL SLIGHTLY TENDER. DRAIN. SLICE ONION INTO THICK SLICES AND GRILL ON BBQ UNTIL SLIGHTLY CHARRED. DICE AND ADD TO POT WITH POTATOES. POUR OLIVE OIL AND SPRINKLE ADOBO OVER POTATOES; MIX TO COAT. MAKE A PACKET OUT OF DOUBLED ALUMINUM FOIL. PLACE POTATOES IN PACKET AND PUT ON GRILL FOR ABOUT 30 MIN. (OR UNTIL POTATOES ARE TENDER).

Grilled Baby Potatoes with Mojo Verde Sauce image

Tender potatoes grilled until golden and tossed with a spicy cilantro-serrano pepper sauce. Such a fun side dish for spring and summer.

1 1/2 pounds fingerling potatoes or baby potatoes (scrubbed)
1 tablespoon olive oil
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
2 cups fresh cilantro leaves + a few more leaves for garnish
3 tablespoons olive oil
2 tablespoons freshly-squeezed lime juice
1 serrano pepper (seeded and roughly minced)
2 large cloves garlic (roughly minced)
1 tablespoon red wine vinegar
1/8 teaspoon kosher salt + more to taste
1/4 teaspoon granulated sugar or honey (if not vegan, optional)

Steps:

  • Boil the potatoes: Scrub the potatoes and place them in a large pot of salted water. Place on the stove over high heat and bring to a boil. Cook for 8-10 minutes, until just fork tender (they shouldn't be 100% cooked). Remove from heat and run under cold water. Set aside to cool the rest of the way.
  • Make the mojo verde: Add all ingredients to the bowl of a small food processor. Puree. Taste and add additional salt if desired. If it seems too acid, you can add a bit of sugar or honey as noted in the ingredients to tame it. Note: I have made the sauce in my blender as well, but I find there's not quite enough sauce to blend well. Another option is to double or triple the sauce and then refrigerate the remainder for later on.
  • Grill the potatoes. Preheat your grill on medium-high, about 450 degrees Fahrenheit. Slice the potatoes in half and place in a medium bowl. Drizzle with olive oil and sprinkle with salt and pepper. Toss gently.
  • Lay potatoes flat-side down on the grill. Cook until browned, about 3 minutes. Carefully flip and cook for another 3-4 minutes on the other side. Test with a fork to make sure they're tender. Transfer potatoes from grill back to the bowl. Pour the sauce over the top. Toss to coat. Sprinkle with additional cilantro leaves and serve.

1 1/2 inches Thick (Four) Sirloin Steaks (6 oz/ 175 gms each)
20 -24 Baby Potatoes
Water
2 Zucchini
1 Head Broccoli
2 Celery Stalks
10 Baby Carrots
Cooked Potatoes
1 teaspoon Olive Oil
1 teaspoon Mrs.Dash Garlic and Herb
BBQ sauce
1 cup Ketchup
1/4 cup Salsa
1 teaspoon Liquid Smoke
1/4 cup Honey
2 teaspoons Worcestershire Sauce
Veggies in Wok
Pre-Spiced Steak
Prepared BBQ Sauce
Aluminum Foil

Steps:

  • 1.Take out equipment and ingredients. 2.Sprinkle spice onto both sides of steak. Let stand at room temp. 3.Wash potatoes and place in cold water in a large stove top pot at high heat. 4.Bring to a boil then reduce heat to medium for a low boil. Set timer for 10 minutes. 5.You won't be able to slide a knife into the potato, but almost. (You want the potatoes firm to finish off on the grill.) Drain water and set aside. 6.Meanwhile: 7.Wash and slice veggies into large chunks. Toss into BBQ wok as you cut. 8.Add carrots. Add firm potatoes. 9.Pour olive oil into the palm of your hand and massage onto all the veggies. Sprinkle with spice. Set aside. 10.Preheat BBQ at medium heat (350 degrees F): Immediately put veggie wok directly on heat, leaving room to grill steak. Toss often. 11.When veggies begin to soften place on higher rack or turn off one side of BBQ. 12.Grill steaks to desired doneness by placing steak on pre-heated grill. 13.Rotate steaks when they lift easily off grill and don't stick (change the angle but don't flip). 14.Turn over and baste top with BBQ sauce. 15.When steaks are done wrap them in foil to rest for 5 minutes, just long enough to set the table. 16.Check Food tv.ca for my tip on how to know when a steak is done to your liking. This meal is just yummy and so easy to throw together if you stick with the order of things!
