Grilled Korean-Style BBQ Glazed Pork Chops with Red Onions and Baby Bok Choy image

Instead of marinating the meat, which is typical of Korean BBQ, these pork chops are brushed in a nutty hoisin glaze while they're on the grill. Grilled veggies, tossed in that same sweet and spicy glaze are served alongside.

2 tablespoons soy sauce
1 tablespoon chili garlic sauce, such as Sriracha
1 tablespoon toasted sesame oil
1 tablespoon light brown sugar
1 tablespoon rice vinegar
1 tablespoon peeled and finely grated fresh ginger
1 clove garlic, grated
1/2 cup hoisin sauce
4 bone-in pork chops (about 3 pounds)
Kosher salt and freshly ground black pepper
1 red onion, cut into 1/2-inch-thick slices
4 to 6 baby bok choy, halved lengthwise (about 1 pound)

Steps:

  • Preheat a grill to medium-high heat. Stir together the soy sauce, chili sauce, sesame oil, brown sugar, vinegar, grated ginger and grated garlic in a small bowl. Reserve 2 tablespoons for the vegetables and then stir in the hoisin sauce. Set half aside for serving with the cooked pork chops and stir in 1 to 2 tablespoons water.
  • Sprinkle the pork chops on both sides with 1/2 teaspoon each salt and pepper for all 4 chops. Place the pork chops and onions on a lightly oiled grill. Grill until the pork chops are just slightly pink near the bone, 6 minutes on the first side and 4 to 5 minutes on the second side. Grill the onions until they are soft. Start brushing both the pork and the onions with the hoisin sauce mixture about halfway through grilling. Transfer the pork chops to a cutting board to rest for about 5 minutes and the onions to a bowl.
  • Put the bok choy in a large bowl and cover with plastic wrap. Microwave until the center core has softened and can easily be pierced with the tip of a sharp knife, 3 to 5 minutes. Season the bok choy with 1/4 teaspoon each salt and pepper and grill until charred, 2 to 3 minutes per side. Add to the bowl with the onions and gently toss with the reserved 2 tablespoons ginger sauce. Serve the pork chops with the grilled vegetables and the reserved hoisin sauce mixture on the side.

One 14-ounce block extra-firm tofu, drained and sliced into eight 1/2-inch-thick steaks
Kosher salt and freshly ground black pepper
1/3 cup low-sodium soy sauce or tamari
1/4 cup fresh cilantro leaves, roughly chopped
1/4 cup lime juice (from about 2 limes)
2 tablespoons light brown sugar
1 tablespoon chopped fresh ginger
2 cloves garlic, minced
2 scallions, whites finely chopped and green tops sliced thin
4 heads baby bok choy, halved lengthwise through the stems
3 tablespoons extra-virgin olive oil, plus more for the grill
2 tablespoons toasted sesame seeds

Steps:

  • Put the tofu steaks on a paper towel-lined rimmed baking sheet and top with more paper towels, pressing gently to remove excess moisture. Remove the paper towels and towel and sprinkle the tofu with salt and pepper on both sides.
  • Stir to combine the soy sauce, cilantro, lime juice, brown sugar, ginger, garlic and scallion whites in a medium bowl. Pour 1/3 cup of the marinade over the tofu steaks, flipping to coat both sides. Reserve the remaining marinade for serving.
  • Put the bok choy on another rimmed baking sheet and brush all sides with olive oil and sprinkle with salt and pepper.
  • Prepare a grill for medium heat and brush the grates of the grill with oil.
  • Put the tofu steaks and bok choy, cut-sides down, on the grill at an angle across the grates. Close the lid of the grill and cook for 5 minutes, then rotate both the tofu and the bok choy 90 degrees and cook another 5 minutes with the lid closed. Flip the tofu steaks and bok choy and cook for another 10 minutes with the lid closed, rotating 90 degrees halfway through to create crosshatch grill marks.
  • Remove the tofu and bok choy to a platter. Spoon the reserved marinade over the tofu and bok choy and sprinkle the tofu steaks with the scallion greens and toasted sesame seeds.

1 tablespoon Asian sesame oil
2 tablespoons sake or rice wine vinegar
2 tablespoons soy sauce
2 garlic cloves, minced
1 (1-inch) piece fresh ginger, peeled and minced
1 (2-pound) salmon fillet with skin
2 limes, cut into quarters
Special equipment: Gas or charcoal grill

Steps:

  • Prepare a gas or charcoal grill to moderately high heat.
  • Trim 1/8 inch from the bottom of each bok choy, then cut into quarters. Wash the bok choy in several changes of cold water and dry in a colander or salad spinner.
  • In a small bowl, whisk together the sesame oil, sake, soy sauce, garlic, and ginger.
  • On a large baking sheet, arrange 2 (12 by 24-inch) pieces of heavy-duty foil, overlapping them in the center to form a cross. 1 1/2 pounds baby bok choy (about 6 heads) or Shanghai bok choy
3 tablespoons unsalted butter, at room temperature
3 tablespoons white or yellow miso paste
2 tablespoons olive oil
1 tablespoon freshly squeezed lemon juice
Pinch of kosher salt
Freshly ground black pepper

Steps:

  • Cut the leaves away from the bok choy stalks. Halve the stalks lengthwise. Rinse the leaves and stalks well, then pat dry to remove any excess water. In a small bowl, mix together the butter and miso with a fork until well combined. Set aside.
  • Prepare a medium-hot fire in a charcoal or gas grill. Put the bok choy stalks in a large bowl. Using your hands (or a fork), coat the bok choy with the miso butter. Arrange the bok choy, cut side down, on the grill grate. (If you have a grill screen, set it on top of the grate before adding the bok choy, to keep the stalks from falling through the gaps.) Close the lid and grill for about 5 minutes, until golden brown on the underside. Turn the bok choy with tongs, re-cover, and grill for 5 to 6 minutes more, until golden and crisp-tender.
  • While the stalks are cooking, stack the bok choy leaves and roll them up lengthwise into a cigar shape. Slice the leaves crosswise into thin shreds. Make a bed of the shredded leaves on a serving platter. Drizzle the leaves with the oil and lemon juice, sprinkle with the salt and 1/4 teaspoon pepper, and toss to combine.
  • Put the grilled bok choy on the dressed salad to wilt the leaves; sprinkle additional pepper over the bok choy. Serve immediately.

1/4 cup low-sodium soy sauce
1/4 cup rice wine vinegar
2 tablespoons light brown sugar
1 teaspoon sesame oil
2 scallions, thinly sliced, plus more for garnish
1/4 cup plus 1 tablespoon vegetable oil
3 cloves garlic, thinly sliced
One 3-inch piece fresh ginger, peeled and thinly sliced
2 pork tenderloins
1 1/2 pounds baby bok choy, halved lengthwise

Steps:

  • In a 9-by-13-inch baking dish, whisk together the mirin, soy sauce, rice wine vinegar, brown sugar, sesame oil, scallions, 1/4 cup of the vegetable oil and two-thirds of the garlic and ginger. Put the pork tenderloins in the marinade and turn to coat. Cover and marinate for at least 2 hours and up to overnight.
  • Heat a grill pan over medium-high heat.
  • Remove the pork from the marinade, allowing the excess to drip off. Transfer the marinade to a small saucepan and bring to a boil over high heat. Boil to reduce slightly, about 5 minutes. Set aside to cool.
  • Meanwhile, grill the pork, turning occasionally, until a meat thermometer inserted into the center of the tenderloins reaches 145 degrees F, 10 to 12 minutes. Remove to a cutting board and allow to rest for 10 minutes before slicing.

2 fresh tarragon sprigs
1 teaspoon white wine vinegar
3/4 cup plus 3 tablespoons water
8 baby bok choy, trimmed, cut lengthwise in half through core
Fine sea salt
4 large egg yolks
2 tablespoons chopped fresh tarragon
4 (7- to 8-ounce) tilapia fillets
2 tablespoons canola oil

Steps:

  • Boil first 4 ingredients in heavy small saucepan until liquid is reduced to 2 tablespoons, about 9 minutes. Cover and remove from heat. DO AHEAD: Can be made 4 hours ahead. Let stand at room temperature.
  • Prepare barbecue (medium-high heat). Combine 3/4 cup water and bok choy in large pot. Cover and cook over high heat until crisp-tender, turning occasionally, about 5 minutes. Drain. Sprinkle bok choy with sea salt and pepper. Cover to keep warm.

4 heads baby bok choy (about 1 pound)
1/4 cup rice wine vinegar
2 tablespoon chili garlic sauce
2 teaspoons light brown sugar
2 tablespoon sesame oil
1/2 teaspoon ground black pepper
soy sauce

Steps:

  • Heat grill on high. Brush to clean and reduce to low. Trim large leaves from the bok choy and cut in half lengthwise. Rinse well under cold water to remove any grit. Pat dry with a paper towel. In a small bowl whisk together vinegar, chili sauce, brown sugar, oil, and pepper. Place bok choy cut side up in a pan or on a plate. Pour the rice wine chili mixture over the pak choi. Place the bok choy cut side down on the grill, cover, and cook until tender, about 10 minutes. Place on a serving platter and drizzle with any remaining rice vinegar mixture and a little soy sauce.

1 1/2 pounds baby bok choy (about 6 heads), or Shanghai bok choy
3 tablespoons unsalted butter, at room temperature
3 tablespoons white or yellow miso paste
2 tablespoons olive oil
1 tablespoon freshly squeezed lemon juice

Steps:

  • 1. Cut the leaves away from the bok choy stalks. Halve the stalks lengthwise. Rinse the leaves and stalks well, then pat dry to remove any excess water. In a small bowl, mix together the butter and miso with a fork until well combined. 2. Prepare a medium-hot fire -- a hotter fire will burn the miso paste -- n a charcoal or gas grill. Put the bok choy stalks in a large bowl. Using your hands (or a fork), coat the bok choy with the miso butter. Arrange the bok choy, cut side down, on the grill grate. Close the lid and grill for about 5 minutes, until golden brown on the underside. Turn the bok choy with tongs, re-cover, and grill for 5 to 6 minutes more, until golden and crisp-tender. 3. While the stalks are cooking, stack the bok choy leaves and roll them up lengthwise into a cigar shape. Slice the leaves crosswise into thin shreds. Make a bed of the shredded leaves on a serving platter. Drizzle the leaves with the oil and lemon juice, sprinkle with a pinch of kosher salt and 1/4 teaspoon black pepper. Toss to combine. 4. We grill little heads of bok choy to give them a smoky flavor, then add a sweet touch with the coconut milk dressing. Putting the bok choy in a covered bowl after grilling lets the stems steam gently until just tender. And if you have it on hand...Top the dressed bok choy with a handful of chopped salted peanuts.

Number Of Ingredients 6

7 tablespoons (from one 15-ounce can) coconut milk (3 of the tablespoons should be the thick milk taken from the top of the can)
1 tablespoon fresh lime juice
1 teaspoon peeled and grated fresh ginger
1 teaspoon sugar
Kosher salt
1 pound baby bok choy, quartered lengthwise through the stem

Steps:

  • Preheat a grill or grill pan to medium. Whisk 4 tablespoons of the coconut milk, the lime juice, ginger, sugar and 1/4 teaspoon salt in a small bowl.
  • Tear off a long strip of aluminum foil and place on half of the grill. Arrange the bok choy on a plate and brush with the remaining 3 tablespoons thick coconut milk. Season with salt.
  • Arrange the bok choy cut-side down on the grill, with the leafy tops resting on the aluminum foil. Cover the grill and cook the bok choy, flipping once, until you get nice grill marks on both sides, 6 to 7 minutes total. Transfer the bok choy to a medium bowl and cover with plastic wrap to steam, 3 to 5 minutes (this will allow the stems to cook through without grilling the leaves to a crisp).
  • Divide the bok choy among 4 plates and drizzle with the coconut-ginger dressing.
