1 1/2 pounds boneless skinless chicken breasts (or 4 chicken breasts)
2 garlic cloves finely minced
3 tablespoons olive oil
¼ cup cilantro (chopped)
Juice of 1 lime
1/2 tsp. cumin
½ tsp paprika
½ tsp salt (or to taste)
¼ tsp black pepper
2 avocados diced
2 small (or 1 large tomato) (chopped)
¼ cup red onion (chopped)
1 jalapeno (de-seeded and chopped (optional))
1/4 cup cilantro finely chopped
Juice of 1 lime
fresh cracked pepper & salt to taste

Steps:

  • In a large bowl, whisk all the ingredients for the marinade and set aside.
  • Pound the breasts to even thickness or slice in half horizontally to get evenly sized breasts and add to the bowl of marinade. Mix through until the chicken is fully coated in the marinade. Use right away if needed or marinate for 30-minutes or up to 12 hours.
  • Grill chicken over medium-high heat or in a large heavy-duty skillet on the stovetop for 5-6 minutes per side or until the inside is cooked through and the outside is charred. Top with fresh avocado salsa and serve immediately.

1 cup canned black beans (about half a 15-ounce can), drained and rinsed
2 tablespoons chopped fresh cilantro
2 tablespoons finely diced red onions
1/4 teaspoon ground cumin
2 plum tomatoes, seeded and diced
1 lime, juiced
1/2 red or green bell pepper, diced
1/2 jalapeno, finely diced
Salt and freshly ground black pepper
2 medium avocados (not too ripe), sliced in half and pitted
1 tablespoon olive oil
1/2 teaspoon chile powder
Salt and freshly ground black pepper
Tortilla chips, for serving

Steps:

  • Prepare a grill for medium-high heat.
  • For the black bean salsa: Stir together the beans, cilantro, red onions, cumin, tomatoes, lime juice, bell peppers and jalapenos in a medium bowl until well incorporated. Season with salt and pepper.
  • For the grilled avocado: Brush the cut sides of the avocados with olive oil and place on the grill cut-side down. Cook until charred, about 1 minute. Season with the chile powder and some salt and pepper.
  • To serve, fill the cavity of each avocado with the salsa and serve with tortilla chips.

6 medium roma tomatoes ((20 oz), seeded and diced)
1 cup chopped red onion, (chopped)
1 large or 2 small jalapeños, (seeded and chopped (1/4 cup. Leave seeds if you like heat))
3 medium avocados, (semi-firm but ripe, peeled, cored and diced)
3 Tbsp olive oil
3 Tbsp fresh lime juice
1 clove garlic, (finely minced)
1/2 tsp salt ((more or less to taste as desired))
1/4 tsp freshly ground black pepper
1/2 cup loosely packed cilantro leaves (, chopped)

Steps:

  • Place red onion in a strainer or sieve and rinse under cool water to remove harsh bite. Drain well. Add to a mixing bowl along with diced tomatoes, jalapeños and avocados.
  • In a separate small mixing bowl whisk together olive oil, lime juice, garlic, salt and pepper until mixture is well blended. Pour mixture over avocado mixture, add cilantro then gently toss mixture to evenly coat. Serve with tortilla chips or over Mexican entrees.

Had some ripe avocados left over. They were extras from guacamole the previous weekend. So I gave this quick and extremely easy recipe a shot on the grill, and the wife and kids loved it. Fresh ones are good too. Use paprika instead of the chipotle and chili powder for less spicy. Canola oil can be substituted for olive oil if desired.

1/2 cup lime juice
1/4 cup finely chopped seeded jalapeno peppers

SALSA:
2 medium ripe avocados, peeled and chopped

  • For marinade, mix first 5 ingredients. In a large bowl, toss pork with 1/2 cup marinade; refrigerate, covered, up to 2 hours., For glaze, place jelly and 1/3 cup of the remaining marinade in a small saucepan; bring to a boil. Cook and stir until slightly thickened, 1-2 minutes; remove from heat. Place salsa ingredients in a large bowl; toss lightly with remaining marinade., Drain pork, discarding marinade.
