3/4 cup unsweetened apple juice or apple cider
1/3 cup lemon juice
3 tablespoons reduced-sodium soy sauce
3 tablespoons honey
1/4 teaspoon garlic powder
1/4 teaspoon ground ginger
4-1/2 teaspoons canola oil
6 boneless skinless chicken breast halves (4 ounces each)

Steps:

  • In a small bowl, combine the first six ingredients. Set aside 1/3 cup juice mixture. Add oil to the remaining juice mixture; pour into a large resealable bag. Add the chicken. Seal bag and turn to coat; refrigerate for at least 4 hours. Cover and refrigerate reserved juice mixture., Coat grill rack with cooking spray before starting the grill. Drain chicken and discard marinade. Grill, covered, over medium heat for 5-7 minutes on each side or until juices run clear, basting occasionally with reserved juice mixture.

1 (12-oz.) jar apple jelly
1 teaspoon ginger
1/2 teaspoon garlic powder
2 tablespoons soy sauce
2 tablespoons honey mustard
4 boneless skinless chicken breast halves

Steps:

  • Heat grill. In small saucepan, combine all glaze ingredients; mix well. Bring to a boil over medium heat. Boil 1 minute, stirring constantly.
  • When ready to grill, lightly brush glaze on one side of each chicken breast half. Place chicken, glaze side down, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Lightly brush glaze over chicken; cook 5 to 8 minutes.
  • Turn chicken; cook an additional 5 to 8 minutes or until fork-tender and juices run clear. Bring any remaining glaze to a boil; serve with chicken.

2 tablespoons butter or margarine
1 clove garlic, chopped
⅓ cup honey
1 tablespoon lemon juice
4 skinless, boneless chicken breast halves

Steps:

  • Preheat a grill for medium heat.
  • Melt butter in a skillet over medium heat. Add the garlic, and cook until fragrant, 1 to 2 minutes. Whisk in honey and lemon juice. Reserve half for basting, and brush the other half onto the chicken breasts.
  • Lightly oil the grill grate, and place chicken on the grill. Cook for 6 to 8 minutes per side, turning frequently. Baste often during the last 5 minutes. Chicken is done when the meat is firm, and juices run clear.

3/4 cup coarse kosher salt
1/3 cup firmly packed light brown sugar
One 4- to 5-pound chicken, cut into 6 to 8 pieces
Freshly ground black pepper
1/2 cup apple cider vinegar
1/4 cup canola oil, plus more for the grate
2 tablespoons Worcestershire sauce
1 tablespoon hot sauce, or to taste

Steps:

  • For the brine and chicken: Combine the salt, brown sugar and 16 cups (1 gallon) cold water in a large plastic container and stir to dissolve. Add the chicken; cover and refrigerate to marinate for 4 to 6 hours.
  • Prepare a charcoal fire using about 6 pounds of charcoal and burn until the coals are completely covered with a thin coating of light gray ash, 20 to 30 minutes. Spread the coals evenly over the grill bottom, position the grill rack above the coals and heat until medium hot (when you can hold your hand 5 inches above the grill surface for no longer than 3 or 4 seconds). Or, for a gas grill, turn on all burners to high, close the lid and heat until very hot, 10 to 15 minutes.
  • For the basting liquid: Whisk together 1/2 cup water, the vinegar, oil, Worcestershire sauce and hot sauce in a medium bowl. Set aside.
  • Drain the chicken well and pat dry; sprinkle with pepper. Apply some oil to the grill grate. Place the chicken on the grill, leaving plenty of space between each piece. Grill until seared, 1 to 2 minutes per side. Reduce the heat to medium or move the chicken to a cooler part of the grill. Continue to grill, turning occasionally and brushing with the basting liquid, until the juices run clear when the meat is pierced, 18 to 20 minutes. Remove the pieces from the grill as they cook and transfer to a warm platter. Serve immediately!

Can be prepared in the oven under a broiler...4-6 inches from broiler - broil 15-20 minutes occasionally basting with glaze. ***For the Chef who asked - it is 1/3 cup apple jelly (not applesauce) that is the first ingredient - it is not showing up in the recipe even though it is there in the "edit tool" -- I tried to zmail you but you are not accepting outside zmails from another chef. ½ teaspoon ground cinnamon

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix apple jelly, honey, mustard, cinnamon, and salt together in a bowl. Brush chicken breasts with glaze.
  • Place glazed chicken breasts on the preheated grill; cook, occasionally brushing chicken with more glaze, until chicken is no longer pink in the center, about 10 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 apple, halved and cored
1/8 teaspoon olive oil (or Pam cooking spray)
1/8 teaspoon salt (just a pinch)
1/8 teaspoon pepper (just a pinch)
1 ounce grated cheddar cheese

Steps:

  • Halve and core the apples, then either brush them with olive oil or spritz with Pam.
  • Dust the halves with salt and pepper, then place cut-side down over direct heat on a hot grill. Cook with the grill covered. After about 3 to 5 minutes, the apples should have pronounced grill marks on their cut sides.
  • Use tongs to flip the apples and reduce the heat under them to low or move to cooler part of grill. Close the grill and cook until the apples are just tender, about another 3 to 5 minutes.
  • To serve, sprinkle grated cheddar cheese over the apples and offer as a side to pork, chicken or steak.
  • Note: if you want a sweet option, sprinkle with cinnamon and/or nutmeg, grill about 3 minutes. Turn over, sprinkle with sugar or brown sugar, raisins and/or coconut, close and cook until tender, about another 3 minutes. Top w/ vanilla or cinnamon ice cream!

1 (6 ounce) can frozen apple juice concentrate, thawed
1/4 cup ketchup
2 tablespoons brown sugar, packed
1 tablespoon apple cider vinegar
1 teaspoon dried thyme
1/8 teaspoon hot pepper sauce
6 boneless skinless chicken breasts

Steps:

  • THE NIGHT BEFORE:
  • In a small saucepan, combine the apple juice concentrate, ketchup, brown sugar, vinegar, thyme and hot pepper sauce. Cook, stirring, over medium heat until the sugar completely dissolves. Remove from the heat and cool to room temperature. Place the chicken in a single layer in a 9 x 13 inch baking dish. Pour half of the cooled ketchup mixture over the chicken turning once to coat both sides. Cover and refrigerate both the chicken and remaining ketchup mixture until the next day.
  • TO COOK:.
  • Grill chicken breasts over medium-high heat until done, basting occasionally with the reserved apple-ketchup mixture.
