8 slices smoked bacon
1 1/2 cups scallions, Leeks work as well
1 tablespoon garlic, finely chopped
1 whole bay leaf
4 -5 cups chopped unripe green tomatoes
1 cup chicken broth
2 cups water
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil

Steps:

  • Heat oil in a large 4 quart pot over medium high heat.
  • Add bacon and cook until browning.
  • Add scallions, garlic and bay leaf until all is tender and cooked through.
  • Add salt, pepper and tomatoes and stir well, then add broth and water.
  • Bring to a simmer and cover partially for 35 minutes.
  • Taste to adjust seasoning if need be.
  • Enjoy!

8 slices bacon, cut into bite-size pieces
1 small red onion, chopped, or more to taste
3 cloves garlic, minced, or more to taste
5 cups chopped green tomatoes
3 cups vegetable broth
½ teaspoon celery salt, or more to taste
1 bay leaf, or more to taste
freshly ground black pepper to taste

Steps:

  • Place bacon in a stock pot over medium-low heat; cook and stir until bacon begins to brown, about 5 minutes. Stir onion and garlic into bacon; cook and stir until onion is tender, about 10 minutes. Add green tomatoes, vegetable broth, celery salt, bay leaf, and black pepper to bacon-onion mixture; bring to a boil. Reduce heat and simmer until tomatoes are tender, about 40 minutes.

I like to garnish soup with croutons-it's a classic combo for a reason. Brioche is a good choice for making croutons because it's so buttery, and the bacon lends a hint of smoky, savory flavor.

Yield Makes about 2 cups croutons

Number Of Ingredients 5

2 cups cubed quick brioche, challah, or other egg-enriched bread, in 1⁄4-inch cubes
1/3 cup finely diced bacon (from about 3 thick slices)
1 tablespoon butter
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350°F. Place the brioche in a mixing bowl. In a cast-iron skillet or other heavy ovenproof skillet, cook the bacon over medium-low heat for about 3 minutes, until most of the fat has rendered but the bacon hasn't gotten too brown or crispy. Turn off the heat, add the butter to the pan, and swirl the pan until the butter is fully melted. Pour the bacon with the fat into the mixing bowl with the brioche, sprinkle with the salt and pepper, and toss to coat evenly. Spread the croutons across a baking sheet.
  • Bake the croutons, stirring every 2 to 3 minutes, until golden brown, 8 to 10 minutes. (Note that brioche will toast up a slightly darker color than some other types of bread because of its sugar and egg content.) The croutons can be made up to 2 hours in advance and rewarmed in the oven just before serving.
