6 cups finely chopped green tomatoes
2 large onions, minced
2 green peppers, seeded,chopped
1 red pepper, seeded chopped
1/4 cup pickling salt
2 cups vinegar
3 cloves garlic
1 1/2 cups brown sugar
1 tablespoon dry mustard
1/2 teaspoon salt
1/2 teaspoon ginger
1 teaspoon whole cloves
4 inches cinnamon sticks
1 teaspoon celery seed

Steps:

  • In a large bowl combine green tomatoes, onions and pickling salt.
  • Cover and let stand overnight.
  • Steriloize 6 1/2 pint jars.
  • Rinse tomatoes & onions well, drain and rinse out excess moisture.
  • In a large saucepan combine vinegar, garlic, brown sugar, mustard, sal t& ginger.
  • Tie cloves, cinnamon stick & celery seed in a square of cheese cloth, add to the pickling liquid.
  • Bring to a boil, add tomatoes, onions,& peppers simmer for 1 hour stirring frequently.
  • Ladle relish into hot sterilized jars to within 1/2" of top, release air bubbles by running a spatula around the inside of the jar, cover with heated snap lid, screw on band.
  • Bring water in a large pot (use the pot & water that you used to sterilize the jars) to a boil, place jars in and water process for 10 minutes.

I found this recipe in a canning book. It look easy, so I tried it. It tastes like the relish in the store. Plus, you can use all those green tomatoes you look at and hate going to waste.

1 quart chopped green tomato
1 large sweet white onion, chopped
1 large green pepper, chopped
2 tablespoons canning salt
1 cup sugar
1 tablespoon prepared mustard
1 teaspoon celery salt
4 whole cloves
1 cup vinegar (5% acidity)

Steps:

  • Combine tomatoes, onion, and pepper in large bowl.
  • Sprinkle salt over vegetables, mix in,and let stand 1 hour.
  • Drain vegetables.
  • Combine drained vegetables, sugar, mustard, and celery salt in a large pot.
  • Tie cloves in cheesecloth and add to mixture.
  • Stir in vinegar and simmer for 20 minutes.
  • Take out spice bag.
  • Pack hot relish into hot jars.
  • Leave 1/4 inch headspace.
  • Place canning lids on jars.
  • Process half pints for 10 minutes in hot water bath.

This is my Aunt Marylin's recipe God rest her soul, she lost a fight with cancer several years ago. She was such a great cook and she would haved this website!!

4 c ground green tomatoes
4 c ground onions
4 c ground cabbage
4 c ground green peppers
2 red peppers ground
4 c cider vinegar
2 c water
6 c sugar
1/2 c salt
1 Tbsp celery seed
2 Tbsp mustard seed
1 1/2 tsp turmeric, ground

Steps:

  • 1. Day one: Grind all vegtables using coarse blade with food processor, put them in a large bowl, then sprinkle the 1/2 cup of salt over the veggies cover with a towel and let sit over night.
  • 2. Day two: mix the other ingredients together in a large pot, rinse and drain the veggies, add the veggies to the pot, mix thoroughly.
  • 3. heat to a simmer, simmer 5 min. remove from heat. divide into 8 pint jars. seal with new flats and rings. let stand a week before use. Enjoy!!!

3 cups grape tomatoes or 3 cups cherry tomatoes, halved
1 cup finely chopped red onion
6 garlic cloves, minced (or 1/2 teaspoon garlic powder)
2 tablespoons snipped fresh oregano or 2 tablespoons parsley
2 tablespoons honey mustard
1 tablespoon water
1/2 teaspoon salt
1/2 teaspoon packed brown sugar
1/4 teaspoon ground black pepper
8 hot dogs (smoked) or 8 cooked bratwursts (smoked)
1 cup red seedless grapes, halved or quartered
8 hot dog buns, split and toasted

Steps:

  • For the tomato relish, fold a 36x18-inch piece of heavy foil in half to make an 18x18-inch square. In a medium bowl combine 2 cups of the tomatoes, the onion, garlic, oregano, mustard, water, salt, brown sugar and pepper. Place mixture in center of the foil. Bring up two opposite edges of the foil; seal with a double fold. Fold the remaining edges to enclose the mixture, leaving space for steam to build.
  • For a charcoal grill, place the foil packet on a grill rack directly over medium coals. Grill for 10 minutes; turn packet. Grill about 10 minutes more or until onion is tender. (For a gas grill, preheat grill. Reduce heat to medium. Place foil packet on grill rack directly over heat. Cover and grill as above.).
  • Meanwhile, place hot dogs on grill rack around foil packet; grill for 5 to 7 minutes or until heated through, turning occasionally.
  • Carefully open rellish packet and stir remaining 1 cut tomato halves and the grapes into hot relish mixture. Place hot dogs in toasted buns; serve tomato relish with the hot dogs.

4 cups coarsely chopped cabbage
12 chopped green bell peppers
10 green tomatoes, chopped
½ cup salt
2 tablespoons mustard seed
1 teaspoon celery seed
1 ½ teaspoons turmeric
6 cups sugar
4 cups white vinegar
2 cups cold water

Steps:

  • Place onions, cabbage, bell peppers, and tomatoes in a food processor, and pulse until finely minced. Drain, and remove contents to a large bowl. Sprinkle with salt, cover, and let stand overnight. Pour contents into a colander; rinse, and drain. Return contents to bowl.
  • In a separate bowl, stir together mustard seed, celery seed, turmeric, sugar, white vinegar, and water. Pour over vegetable mixture, and stir to combine.
  • Pour mixture into a large pot, and bring to a boil over high heat. Boil for 5 to 10 minutes. Store, refrigerated, in sterilized, sealed pint jars.

3 large red bell peppers, chopped (or hot peppers)
5 c finely chopped sweet onions
3 Tbsp pickling salt
3 c white granulated sugar
3 c apple cider vinegar
2 Tbsp mustard seed
1 Tbsp celery seed
1 Tbsp allspice, ground
1 Tbsp turmeric, ground

Steps:

  • 1. Assemble canning equipment and sterilize jars.
  • 2. Mix all vegetables in large bowl, then sprinkle with salt and mix.
  • 3. Let sit for 10 minutes, then drain thoroughly (do not rinse.)
  • 4. Pour into large pot and add remaining ingredients.
  • 5. Bring to a boil, reduce heat until boiling stops, then bring to a second boil.

24 large green tomatoes
3 red bell peppers, halved and seeded
3 green bell peppers, halved and seeded
12 large onions
3 tablespoons celery seed
3 tablespoons mustard seed
1 tablespoon salt
5 cups white sugar
2 cups cider vinegar

Steps:

  • In a grinder or food processor, coarsely grind tomatoes, red bell peppers, green bell peppers, and onions. (You may need to do this in batches.) Line a large colander with cheesecloth, place in sink or in a large bowl, and pour in tomato mixture to drain for 1 hour.
  • In a large, non-aluminum stockpot, combine tomato mixture, celery seed, mustard seed, salt, sugar, and vinegar. Bring to a boil and simmer over low heat 5 minutes, stirring frequently.
  • Sterilize enough jars and lids to hold relish (12 one-pint jars, or 6 one-quart jars). Pack relish into sterilized jars, making sure there are no spaces or air pockets. Fill jars all the way to top. Screw on lids.
  • Place a rack in the bottom of a large stockpot and fill halfway with boiling water. Carefully lower jars into pot using a holder. Leave a 2 inch space between jars. Pour in more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
  • Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid does not move up or down at all). Relish can be stored for up to a year.
