3 egg yolks
1/3 cup white caster sugar
8 ounces mascarpone cheese
1 cup heavy cream
1 teaspoon vanilla extract
Cointreau liqueur or any orange-flavored liqueur
green tea powder
1 -2 cup brewed green tea, cooled
3 egg whites
ladyfinger

Steps:

  • beat the egg yolks and sugar in a bowl set over pan of simmering water, until the mixture is pale yellow. add the mascarpone cheese and beat until smooth and creamy.
  • in a separate bowl, whip the cream. add vanilla and orange liqueur.
  • in yet another bowl, beat the egg whites to stiff peaks.
  • fold the mascarpone mixture into the cream until blended.
  • add egg whites and fold gently until blended. (obv also optional).
  • dip ladyfingers into the brewed green tea, then layer them on the bottom of a serving dish. spread the creamy stuff on top, and repeat layers.
  • refrigerate at least a couple of hours; 24 is nice.
  • dust with powdered green tea just before serving.

I just love the combination of plum liqueur and green tea. Similar recipes make use of either sake or orange liqueur, but my experiment with Choya® was a good one. Before serving, dust with matcha or confectioners' sugar.

½ cup water
¼ cup white sugar
2 tablespoons green tea powder (matcha)
½ cup Japanese plum liqueur (such as Choya®)
6 egg yolks
⅔ cup white sugar
2 (8 ounce) containers mascarpone cheese, softened
2 ¼ teaspoons green tea powder (matcha)
2 cups heavy whipping cream, chilled
2 tablespoons Japanese plum liqueur (such as Choya®)
1 teaspoon vanilla extract
5 egg whites
40 ladyfinger cookies, or more as needed

Steps:

  • Bring water and 1/4 cup sugar in a saucepan to a boil. Remove from heat and stir in 2 tablespoons matcha. Add 1/2 cup plum liqueur. Let matcha syrup steep and cool.
  • Fill another saucepan halfway with water and bring to a boil. Reduce heat to bring water down to a simmer.
  • Place egg yolks and 2/3 cup sugar in a large bowl. Set bowl over simmering water and whisk constantly until the mixture is pale yellow and thick ribbons fall from the whisk, 4 to 5 minutes. Remove from heat and fold in mascarpone cheese until smooth and creamy. Mix in 2 1/4 teaspoons matcha.
  • Whip heavy cream in a chilled glass or metal bowl with an electric mixer until stiff peaks form. Whisk in 2 tablespoons plum liqueur and vanilla extract. Fold in mascarpone mixture until blended and smooth.
  • Beat egg whites in a clean glass, metal, or ceramic bowl until stiff, sharp peaks form. Fold 1/3 of the egg whites into the mascarpone cream. Repeat twice more, folding gently until egg whites are incorporated.
  • Dip ladyfingers in matcha syrup one at a time until just soaked. Arrange a layer of ladyfingers on the bottom of a 6-quart container. Spread 1/2 of the mascarpone cream on top. Repeat with remaining soaked ladyfingers and mascarpone cream.
  • Cover tiramisu with plastic wrap and refrigerate until flavors combine, at least 4 hours.

9 ounces mascarpone cheese
3 ounces sugar
4 egg yolks
8 1/2 ounces whipped cream
4 ounces water
3 ounces syrup
1/2 ounce matcha green tea powder
1/2 ounce Grand Marnier

Steps:

  • Knead the mascarpone cheese until it becomes creamy.
  • Beat sugar and yolk until it becomes fluffy.
  • At first, add 2 tablespoons of (2) into (1) then later, the rest of (2) also add into (1).
  • Whip cream until foamy consistency.
  • Combine (3) and (4).
  • Pour (5) into the mold and put on the green tea cakes which are already cut into 1/4 inch and cover with syrup.
  • After that pour the rest of the syrup into it and repeat the same.
  • Finally, strain green tea powder with powder sugar for garnish.

1 ⅛ cups finely crushed graham cracker crumbs
3 ½ tablespoons unsalted butter, melted
7 ounces cream cheese, at room temperature
6 tablespoons white sugar
1 teaspoon white sugar
7 ounces mascarpone cheese
3 tablespoons matcha green tea powder, plus more for dusting
1 cup heavy whipping cream
1 tablespoon unflavored gelatin
3 tablespoons warm water
1 teaspoon confectioners' sugar for dusting
3 strawberries, sliced

Steps:

  • Stir graham cracker crumbs and melted butter together in a bowl until moistened; press crumb mixture evenly into the bottom of a 7-inch round springform pan. Place pan in refrigerator until cold, about 20 minutes.
  • Beat cream cheese and 6 tablespoons plus 1 teaspoon sugar together in a bowl with an electric mixer until smooth; beat in mascarpone cheese. Stir 3 tablespoons green tea powder into cheese mixture.
  • Beat cream in a chilled glass or metal bowl with an electric mixer until soft peaks form. Fold whipped cream into cream cheese mixture.
  • Stir gelatin into warm water in a small bowl until dissolved. Stir gelatin mixture into cream cheese mixture; pour mixture over refrigerated graham cracker crust. Chill in the refrigerator until firm, at least 4 hours.
  • Dust top of tiramisu with green tea powder and confectioners' sugar; decorate with sliced strawberries.
