MATCHA GREEN TEA CAKE WITH VANILLA HONEY CREAM CHEESE FROSTING.
I want to say it's all healthy and good for you, with that matcha green tea, but ahh that'd be a lie. There is butter, sugar and so much vanilla, but it's so good.

Steps:
- Preheat the oven to 350 degrees F. Grease two 8-inch round cake pans. Line with parchment paper, then butter/spray with cooking spray.
- In a large bowl, mix together the flour, brown sugar, baking powder, baking soda and salt.
- Whisk together the milk and oil, and add to the dry ingredients. Beat for 2 minutes on medium speed. Add the matcha powder, vanilla extract, almond extract and eggs and beat again for 2 minutes on medium speed. Now slowly pour in the hot water and beat until smooth. Divide the batter evenly among the prepared pans.
- Bake 30 to 35 minutes, until the tops are just set and no longer wiggly in the center. Remove and let cool in the pan for 15 minutes, then grab 2 large flat plates, line them with wax or parchment paper and invert the cakes onto the plates. Cover and let the cakes cool completely before frosting.
- To make the frosting, add the cream cheese and butter to a large mixing bowl. Using and electric mixer beat until the mixture is light and fluffy, about 2 minutes. Add the honey, powdered sugar and vanilla. Beat another 2-4 minutes or until the frosting is light and fluffy.
- To assemble, place 1 layer, flat side up, on a plate or cake stand. With a knife or offset spatula, spread the top with frosting. Place the second layer on top, rounded side up, and spread the frosting evenly on the top. If desired, you may also frost the sides. I prefer to either leave the sides unfrosted or lightly frosted so that pretty green color shines through! Decorate with toasted coconut and milk chocolate eggs if desired.

MATCHA GREEN TEA FROSTING/ICING
I love a good buttercream frosting made with real ingredients. I love matcha/green tea. How could I NOT combine the two?! The kind of matcha I buy comes in 5g packets, so I would use 5 packets to get 25g of powder. This is standard batch that makes enough to frost about 24-30 normal sized cupcakes; 10-15 Texas Muffin sized ones.

- Leave the butter out to soften for at least 4-6 hours. It must be very soft and squishy in order for this to work.
- Put the butter in the bottom of a bowl, with about 2 cups of confetctioners sugar. Mix with an electric beater.
- Add the matcha powder, and beat again.
- Add more confectioners sugar and a little milk (dairy or otherwise) to loosen up the frosting a little bit and make it spreadable.
- Note that refridgerating it will cause it to set!

GREEN TEA LAYER CAKE
This is a light and moist cake that is not too sweet and has a refreshing green tea fragrance. The frosting uses cream cheese but has enough sweetness to mask the sour taste. The matcha (green tea) powder gives it a delicate green hue too. This cake can also be baked as a sheet cake in a 9x 13 inch pan or as 2 separate round cakes in two 8-inch round pans. Adjust baking time accordingly.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 8-inch round pans. Sift together the all-purpose flour, cake flour, baking soda, salt, and green tea powder; set aside.
- In a large bowl, beat together sugar, oil, and eggs until smooth. Stir in 1 1/2 teaspoons vanilla. Beat in the flour mixture alternately with the yogurt, mixing just until incorporated. Pour batter into prepared pans.

Place the other layer of cake on top, and spread frosting to cover the top and sides of cake. Dust with green tea powder if desired. Serve cold or at room temperature.

- Sift powdered sugar into a bowl or onto parchment paper.
- Beat butter and cheese at medium speed until creamy.
