7up Lime Jello Salad image

Make this easy 7UP Lime Jello Salad for everything from summer picnics to holiday gatherings. It makes a great side dish or dessert. Use sugar free pudding and diet soda if you'd like to lower the calories.

Number Of Ingredients 6

2 cups water
6 ounces lime Jello ((6 ounces))
6 ounces cream cheese ((softened))
2 cups 7up soda
1 package Dream Whip ((prepared according to package directions))
8 ounces crushed pineapple, drained ((1 small can))

Steps:

  • Heat the water to boiling in the microwave or on the stovetop.
  • Dissolve the jello in the boiling water. Stir well.
  • Add the softened cream cheese to the hot Jello. Use a hand mixer to mix until the cream cheese has melted in.
  • Add the 7up and stir.
  • Chill for 60-90 minutes or until partially set.
  • Prepare Dream Whip according to the package directions.
  • Mix the Dream Whip into the Jello.
  • Stir in the drained pineapple.
  • Pour into a 3 quart baking dish and chill until firm (at least 3 hours, depending on pan size and depth).
  • Top with whipped cream and a cherry when serving.

Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Number Of Ingredients 7

1 cup crushed pineapple (drained with juice reserved)
1 cup water (more or less depending on what's needed, see instructions below)
2 packages lime jello (3 oz each)
1 cup mayo
1 cup evaporated milk (canned)
1 cup small curd cottage cheese
1/2 cup walnuts (chopped)

Steps:

  • In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
  • Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
  • In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
  • Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).

This is a must-have for our holiday dinners. My kids and grandkids call this the green stuff.

1/4 lb marshmallows (16 large)
1 c milk
1 6-oz pkg lime jello
6 oz cream cheese
1 20-oz can(s) crushed pineapple
1 c cool whip lite
2/3 c mayonnaise

Steps:

  • 1. Melt the marshmallows in milk in medium saucepan over medium heat. Stir frequently.
  • 2. Pour the milk and marshmallow mixture over lime jello in a large bowl. Stir until dissolved. Stir in cream cheese with beater. Add undrained pineapple. Mix well.
  • 3. Cool in the refrigerator for several hours or overnight.
  • 4. Blend mayonnaise and cool whip into the jello mixture.

This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

1 cup boiling water
1 (6 ounce) package lime flavored Jell-O® mix
1 (20 ounce) can crushed pineapple, drained with juice reserved
1 (8 ounce) package cream cheese, softened
2 cups heavy cream
1 cup chopped pecans

Steps:

  • In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
  • Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
  • In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

This recipe has been in our family forever. It can be made in many different variations. Cottage cheese instead of or in addition to cream cheese. Crushed pears or mandarin oranges in place of pineapple. The amount of ingredients seem to not matter much because I often forget how much jello or cream cheese, etc to use but it always tastes great. The only word of caution is NEVER use fresh pineapple in jello because it will not gel.

1 cup ice cube (optional)
1 (5 ounce) package Jello gelatin
1 (8 ounce) container Cool Whip
1 (10 ounce) can crushed pineapple, drained
1 (8 ounce) cream cheese, softened

Steps:

  • Dissolve jello in hot water. If in a hurry add ice cubes to set a litte faster.
  • Mix cream cheese and pineapple in large bowl.
  • Add jello.
  • Beat until blended.
  • Add Cool Whip or any whipped topping and beat for 2 minutes or well blended.
  • Pour into large glass pan or bowl and chill at least four hours. I've been known to use the freezer when in a hurry and it works out fine.

1 (12 ounce) container Cool Whip, thawed
1 cup mini marshmallows (colored)
1 (3 ounce) package lime Jell-O gelatin
3 (11 ounce) cans mandarin orange segments (sometimes I use 4)
1 (8 ounce) can pineapple tidbits

Steps:

  • Blend cottage cheese, and lime jello together, then fold in Cool Whip until well mixed.
  • Fold in the 1 cup of mini marshmallows. (I use about 3/4 cup).
  • Drain fruit and fold into mixture last.
  • Refrigerate overnight for best flavor.
