GREEN GARLIC AND HAM SCRAMBLED EGGS WITH CHEESE
I recently was given some stalks of green garlic. I had no idea what to do with them, so I started looking for recipes and found this delicious egg recipe. There are endless variations but the key ingredients are the same.

Steps:
- Melt the butter in a skillet over medium heat. Cook the onion, garlic scapes, and ham in the melted butter until the onion is tender, about 5 minutes.
- Beat the eggs, milk, salt, and pepper together in a small bowl; pour into the skillet and cook, stirring continually, until the eggs have nearly set, but are still slightly moist. Add about half the Cheddar cheese; cook and stir until the eggs are completely cooked, about 5 minutes. Top with the remaining Cheddar cheese to serve.

CREAMY SCRAMBLED EGGS WITH SMOKED TROUT AND GREEN ONIONS
Steps:
- Whisk eggs in large bowl to blend. Add trout, cream cheese, green onions, and chopped dill. Season lightly with salt and generously with pepper; stir to mix.
- Melt butter in large nonstick skillet over medium heat. Add egg mixture and stir slowly until eggs just hold together and are cooked through but still moist, about 4 minutes. Divide egg mixture among 4 plates. Garnish with dill sprigs, if desired, and serve.
GREEN ONION SCRAMBLED EGGS
Steps:
- In a large skillet, saute onions in butter for 2 minutes. In a large bowl, beat the eggs; add cream cheese and seasoned salt. Pour into the skillet. As eggs set, gently move a spatula across bottom and sides of pan, letting uncooked portion flow underneath. Continue cooking and stirring until the eggs are completely set.

Breakfast for one or double it. Tastes great with leftover ham. The green of the spinach is a nice contrast. Stir fry some red peppers and mushrooms to have on the side. Wholewheat toast Mmmm.

- Gradually mix the milk into the flour, whisk until smooth.
- add sour cream (cottage cheese), eggs, thyme, salt& pepper.
- Whisk until very well blended.
- Stir in the cheese and spinach.
- Heat skillet, spray with oil.
- Over medium heat pour in the egg mixture, allow to firm on the bottom, with a spatula disturb the eggs and flip so you continually get the uncooked egg on the bottom.
- Do not over cook the eggs.

- Cut the beans in pieces, about 2 cm each, and wash them.
- Heat the olive oil in a large pan, add the onion and fry it until slightly browned.
- Add the beans, fry them for a few minutes.
- Add broth,chopped tomatoes and garlic, salt and pepper to taste and bring to a boil.
- Cover the pan and let simmer for about 15 minutes, until the beans are tender and done.
- Check for seasoning.
- Crack the eggs directly into the pan and stir well.
- Cook for a few more minutes, until the egg is done.

SCRAMBLED EGGS WITH SMOKED SALMON AND GREEN PEPPERS
I have made this many times. Thanks to a wonderful chef on Zaar I now add baking powder to my scrambled eggs to make them light and fluffy. There are no other changes. I was raised on Smoked Salmon (not kippered) and it is great with eggs and so is green peppers.

Steps:
- In a medium frying pan add oil and heat. Then add green pepper. Saute until slightly soft.
- In mixing bowl, add eggs,milk,baking powder,salt, pepper. Mix well.
- Add mixture to sauted green peppers, turn heat on medium heat to low,
- Stir to turn over and break apart, add smoked salmon and gently mix.
- Do not overcook, you want the scrambled eggs to be soft and fluffy, not hard. The amount of green pepper pieces and smoked salmon pieces can be adjusted.
- Note: Sometimes I add a bay leaf to the oil while the oil is heating up. Then remove to use for another dish.

- Heat the oil in a heavy pan, then add the onion and sweat until it is softened (about 2 minutes).
- Add the garlic and chilis, and cook until fragrant.
- Add the lentils, allspice, honey, lemon juice and zest, and stock. Season with salt and pepper, then bring to a boil.
- Lower the heat, and simmer for about 45 minutes, until the lentils are very tender.
- Remove from the heat and add the cilantro leaves. Let rest, uncovered, for 10 minutes.
- Use a blender or food processor or immersion blender to puree the soup.
- Taste, and add salt or pepper as needed. If the soup is too thick, add a little more stock or water to thin it.
- Gently combine the eggs, saffron, cream and salt and pepper to taste.
- Melt the butter in a skillet over low heat, add the eggs, and cook until they are very softly scrambled.
- To serve, bring the soup back to a boil, then pour into serving bowls. Top with a spoonful of the scrambled eggs, and if desired, garnish with a few cilantro leaves and a drizzle of extra virgin olive oil.
