- Preheat the oven to 375 degrees F (190 degrees C).
- Heat olive oil in a saute pan over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Add garlic and heat until fragrant, about 2 minutes. Remove from heat and let cool.
- Combine chicken, onion mixture, cheese blend, cream cheese, salsa verde, olives, cilantro, and jalapenos in a large bowl for the filling. Mix well.
- Melt butter in a saucepan over medium heat. Stir in flour, then chicken broth. Cook until sauce starts to thicken, 6 to 8 minutes. Stir in sour cream and salsa verde; cook until heated through. Spread a spoonful of sauce over the bottoms of two 9x11-inch casserole dishes.
- Wrap a tortilla in a damp paper towel and microwave for about 30 seconds. Fill with the chicken mixture, roll up, and place seam-side down into a baking dish. Repeat with remaining tortillas until each dish holds 8 enchiladas.
- Spoon remaining sauce over the enchiladas. Sprinkle cheese on top.
- Bake in the preheated oven until heated through, about 20 minutes.

- Heat 2 tablespoons of oil in a skillet over medium-high heat. Fry tortillas (1 at a time) for 5 seconds on each side to soften and make them pliable. Add more oil to pan as needed. Drain between layers of paper towel and keep warm.

- Preheat oven to 350 degrees. Grease a 9 x 13 inch pan using non-stick cooking spray.
- Mix cooked chicken, chili powder (optional) and 1 cup of cheese together. Roll up in tortillas and place in pan.
- In a medium sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
- Stir in sour cream, chilies, cilantro, onion powder, and garlic powder, and pepper. Make sure that you don't bring this to a boil- you don't want to have curdled sour cream!
- Pour over enchiladas and top with remaining cheese.
- Bake 20-22 minutes and then place under high broil for 3 min to brown the cheese.

- Bring first 4 ingredients to boil in large skillet. Reduce heat to medium-low, cover, and simmer until tomatillos are soft, about 15 minutes. Transfer mixture to blender; add 2 cups onions, green chilies, and spinach; puree. Season sauce with salt and pepper. Return sauce to skillet.
- Preheat oven to 350°F. Lightly oil 13x9x2-inch glass baking dish. Dip 1 tortilla into sauce. Place tortilla on plate. - I HAVE TWO WAYS --
- **********The First way**********.
- Preheat oven to 350.
- Shred chicken into a medium sized bowl (This is probably my least favorite thing to do).
- Add Mexican seasoning, salt and pepper, basil, and green chiles to shredded chicken.
- Place oil in a large skillet on medium-high heat.
- Place 3 tortillas on a paper towel, place in microwave for 20 sec.
- Immediately, start putting the chicken mixture into the tortilla, roll up, place in oil.
- Flip over when one side is light brown.
- Remove from skillet, tilt the rolled tortilla to drain excess oil onto paper towel, place in large pan.
- Repeat process until all the chicken is gone.
- Empty the entire Green Sauce on top of the rolled tortillas.
- Sprinkle cheese on top. Cover entire pan. (I like mine SUPER cheesy!).
- Lightly season with mexican seasoning.
- Bake for 20-30 minutes. Cheese should be bubbling and lightly browned.
- *******The Second Way*******.
- This method entirely omits the oil and frying.
- Grease the bottom of the baking pan with Pam.
- Place 8 corn tortillas on the bottom of the pan.
- Place half of the chicken mixture on top of that.
- Pour between 1/4 to 1/2 of the green sauce can onto the mixture.
- Place 8 more tortillas on top.
- Place remaining chicken on top of that.
- Pour rest of the green sauce.
- Cover with cheese and season with Mexican seasoning.
- Bake for 20-30 minutes. Cheese should be bubbling and lightly browned.

I make this or a version of this every single week-so easy! Sometimes I make them with all cheese, sometime with ground beef seasoned with taco seasoning and use a can of red sauce instead of green. The possibilities are endless!!!!!

- 1. Preheat oven to 350 degrees. Spray a 9x13-inch baking dish with nonstick cooking spray. In a large skillet on medium low heat, add enchilada sauce and warm.
- 2. Dip a tortilla into sauce and shake off and place in prepared baking dish. Add a heaping amount of shredded cooked chicken and sprinkle with about 1 Tablespoon or so of shredded cheese. Roll and place seamside down in pan. Continue with the other 5 tortillas, using all of the chicken but reserving some cheese for top.
- 3. Pour the remaining sauce over top of enchiladas and sprinkle with remaining cheese. That's it! Bake for appx. 30 minutes until bubbly and hot. Serve with a big heaping spoonful of sour cream and sliced avocado, if desired. Makes 6 very large enchiladas. I eat one; my husband eats 2; some may eat 3. May serve 2, 3, 4 or 6!
- 4. *Note - To make this very easy, you can substitute shredded rotissiere chicken. *2nd Note - Sometimes I add a splash of heavy cream to the sauce to make it a little creamier.

- Put chicken on to boil in enough water to cover chicken.
- Mix the SazonGoya con Azafran seasoning package into the chicken water.
- Boil chicken about 40 minutes till falling off the bone.
- De bone chicken saving all broth for later.
- Chop chicken into bite size pieces.
- Mix oil and flour together and set aside.
- Chop onion and saute in small amount of oil about a tsp till translucent.
- Add in oil and flour mixture stirring constantly for about 4 minutes till flour not raw.
- Add in Chicken broth about a cup at a time should have a nice sauce consistency. Add in the two cans of green chilis and the sour cream.
- Stir to combine.
- Season with Chili Sauce and Cumin.
- Set aside.
- Fry corn tortillas in small amount of oil and set aside,.
- Pour 1/2 on enchilada sauce into 12 x 9 large pyrex cooking dish.
- Lay tortilla flat put in small amount of cheese and chicken and roll.
- Place in pan seam side down.
- Repeat for all 14 tortillas.
- Cover with rest of sauce and sprinkle cheese on top.
- Cover with foil.
- Bake in 350 oven for 40 minutes.

CHORIZO & EGG ENCHILADAS WITH A GREEN CHILE SAUCE
Breakfast? Lunch? or Dinner? I love to serve this any time of the day. This a great brunch which can be put together the night before and then cooked that morning. Or make breakfast for dinner. This is definitely hearty enough for dinner. I often serve this with my spicy black beans and a tomato avocado salad, or for breakfast ... serve with a nice fresh fruit salad and some pan fried potatoes. And don't forget the traditional condiments, sour cream for me, but you can add olives or anything else you want. The green chili sauce for me is what makes this dish ... Yes, you can make your own, and I often do - it is wonderful. But, for this dish, I often just buy a jar at the store. There are some descent brands out there and it works just fine for this. Also you can get some very nice brands at your local Ethnic markets. And, don't forget all your favorite garnishes. When I make this for dinner, I set out the garnishes just like a taco bar so everyone can just help themselves. Also if you serve this with black beans or even diced potatoes, the garnishes are great on those as well. It is just something fun and different. One NOTE: You can make this the night before and refrigerate and cook it the next morning. The only thing I did was to make sure I put a layer of plastic wrap and then the foil to male sure they didn't dry out.

- Chorizo -- To a large sauce pan, add 1 teaspoon olive oil and bring to medium heat. Add the chorizo and saute until golden brown breaking up the chorizo as it cooks. Cook until golden brown and remove to a plate lined with a paper towel to drain.
- Eggs -- Now in the same pan, remove most of the drippings from the chorizo, but I do keep just a little - 1 teaspoon, just for a little flavor. Then I add in the butter, onions, garlic, red pepper, jalapeno and cook until tender and soft. No need to brown them, you just want them soft. Then add in the eggs, salt, pepper and cook until you get a soft scramble. Remember -- they are going to be baked so don't over cook them. Right at the end, toss in the scallions and mix to combine.
- Tortillas -- I wrap 5 at a time in a damp paper towel and microwave for just 30 seconds until lightly warm which makes them plyable. You can also wrap in foil and use the oven if you prefer.
- Filling -- Add the chorizo into the egg mixture and put a heaping spoon into each tortilla. Take 1 1/2 cups of the cheese and divide among the 10 tortillas. Fold over from one edge, tuck the sides in and finish rolling.
- Casserole -- In a 13x9" pan, spray with Pam or a non stick spray. Add 1 can or approximately 10 oz of the enchilada or chile sauce in the casserole dish and place the rolled enchiladas seam side down. Top with the remaining sauce and cheese.
- Bake -- In a 350 degree oven for 15-20 minutes covered with foil until the sauce is bubbly and the cheese is melted. Remember, everything is cooked. I bake mine on the middle shelf.
- Serve -- I love to squeeze fresh lime over the top and then serve family style and let everyone help themselves to the garnishes. Anything goes! This is just a wonderful brunch, lunch or dinner. Recipe #389419, are great with this dish for dinner, but so is rice, salad, or just about anything. Have fun and ENJOY!

CHICKEN ENCHILADAS WITH GREEN SAUCE AND LONG-GRAIN RICE

Steps:
- Preheat oven to 350 degrees F.
- In a large skillet heat 2 tablespoons olive oil over medium heat, add the sliced onion and minced garlic, saute for about 2 minutes. Then add the chicken slices and cook until chicken is a nice golden brown. Turn the heat up a touch and add the bell pepper slices and dried chili flakes. Once chicken is no longer pink remove from the heat and place the mixture into a bowl.
- In a small skillet add 1 cup oil. When oil is warm submerge a tortilla for 10 to 15 seconds or until soft. This will soften them and make rolling a lot easier. Drain on paper towels and repeat this process until all tortillas have been softened. Pour 1 cup of Green Sauce on bottom of the baking dish to cover. Divide the chicken mixture evenly among the tortillas, roll them up. Place seam side down on top of the sauce in the baking dish. Pour the remaining green sauce over them and spread the cheese mix evenly over the top. Bake for about 20 minutes until golden brown. Remove from the oven and serve with long-grain rice.
- For the Green Sauce:
- Pulse all ingredients in a food processor until a nice salsa consistency is reached.
- For the Rice: Pour 3 cups of hot water in a large saucepan and bring to a boil. Rinse the rice well in a bowl under cold water and drain. This will remove surface starch and will be less sticky. Place the rinsed and drained rice into the saucepan, cover and cook until al dente, about 10 to 15 minutes. Add fresh cilantro and lime juice and serve.
FISH ENCHILADAS WITH CREAMY GREEN CHILE SAUCE
Steps:
- Preheat oven to 350° F. Spray a 13×9 baking pan with cooking spray. Heat a medium skillet over medium-high heat and add olive oil. Swirl to coat the pan. Add garlic and saute about two minutes, until slightly golden, then turn the heat to low and stir in cumin. Add the fish and tomato and heat through. Turn off the heat and add the lime juice, cilantro and salt and pepper to taste. Stir. Mix the green chile sauce and sour cream in a small bowl. Place about two tablespoons of fish mixture in tortillas and roll up, then place in casserole seam side down. (I find the tortillas more pliable and easier to work with if I wrap a stack of them in a damp kitchen towel and microwave them for 45 seconds.) After all the tortillas are filled and rolled, pour the green chile sauce evenly over them and sprinkle cheese on top. Cover and bake for 30 minutes until sauce is bubbly and cheese is melted. Sprinkle with reserved cilantro and serve. Preferably with margaritas.
