This is from Vegetarian Times. I think it's supposed to be like guacamole. They say to spoon it on soy burgers, refried beans or tomatoes. For the best appearance, do not make more than 2 hours in advance.

Number Of Ingredients 7

1 cup frozen green pea (no need to thaw)
1/4 cup plain nonfat yogurt
2 teaspoons lime juice
1 garlic clove, minced
1/8 teaspoon ground cumin
2 tablespoons salsa
salt

Steps:

  • In a food processor, combine peas, yogurt, lime juice, garlic and cumin.
  • Process, but stop before mixture is completely smooth.
  • Transfer to a bowl and stir in salsa and salt to taste.

1 cup organic frozen green peas defrosted
½ cup raw almonds soaked and dehydrated
1 tsp fresh grated ginger
3 Tbsp filtered water or more for desired consistency
3 tsp fresh lime juice (1- 2 limes)
1/3 cup fresh cilantro / coriander
1/4 tsp fine Celtic sea salt
freshly ground pepper to taste

Steps:

  • 1. Put the almonds into your food processor until rustically chopped. 2. Mix in the remaining ingredients until you get a nice thick consistency. You might to add a bit more water. I keep it pretty chunky and rough. 3. Add in more lime juice, ginger and seasoning to taste. I like mine with quite a bit of kick so I tend to be a bit more heavy handed with the ginger, lime juice and sea salt. 4. Slather on crackers, serve with veggies chips, or top raw tacos. YUM!

The second this dip hit my lips, it was love at first bite - I immediately became intoxicated with the unique zesty flavor and crunchy texture. This dip epitomizes the "blend and chow in under 5 minutes" philosophy that I am so fond of. It is dead easy, bursting with flavor, and incredibly versatile. Another added bonus is that the flavor mix is different from your hog standard store bought dips, and makes a unique addition to the nibble plate at your next dinner. This is fantastic slathered on rice cakes, tortilla chips, toasts, raw tacos or veggie sticks. I have been whipping up this dip to rave reviews for over ten years. I hope this will become a staple in your "delectable dip" repertoire, just as it has in mine.

ROAST BEEF FRENCH DIP WITH GREEN PEA PESTO



Roast Beef French Dip with Green Pea Pesto image

1 cup fresh basil leaves (about 20)
1 cup defrosted frozen green peas
1/4 cup grated Parmesan
About 1/4 cup fresh mint leaves
About 1/4 cup fresh tarragon leaves
1 clove garlic, pasted
1 1/2 to 2 pounds beef eye of round roast
Kosher salt and freshly ground black pepper
3 tablespoons chopped fresh rosemary
2 tablespoons plus 1/2 cup EVOO
2 cups beef stock

Steps:

  • Two 3-inch wide long loaves French crusty bread (8 inches of bread per sandwich), split
  • For the pesto: In a food processor, combine the basil, peas, Parm, mint, tarragon, garlic and about 1/2 cup EVOO. Season with salt and pepper and process to almost smooth. Transfer to a small container until ready to use. Or refrigerate and bring to room temperature when ready to serve.
  • For the beef: Bring the roast to room temperature. Sprinkle the meat with the salt, pepper and rosemary.
  • Preheat the oven to 475 degrees F.
  • Heat 2 tablespoons EVOO in a Dutch oven or large cast-iron skillet over medium-high heat. Brown the meat evenly, 5 minutes. Then transfer to the oven and roast 30 minutes, or until the internal temperature registers 120 degrees F on a meat thermometer.
  • Transfer the roast to a cutting board and cover with foil, 30 minutes. Wrap and store if not serving right away.
  • To serve, very thinly slice the meat. Heat the stock to warm but not boiling. Quickly dip the meat in the stock and place on the French bread. Top with the green pea pesto and set the bun top in place.

GREEN PEA HUMMUS DIP

Use the hummus as part of a main meal served with grilled fish or chicken and salad. Alternatively serve with crudites or toasted pita bread.

1 lb frozen peas
3 garlic cloves, crushed
3 tablespoons tahini
1 lemon, juice of
1 teaspoon ground cumin
1 tablespoon olive oil
chili powder
salt and black pepper

Steps:

  • Add the peas to a pan of boiling water and simmer for 3 minutes.
  • Drain the peas and put in a food processor along with all the other ingredients; mix well until a paste is formed.
  • Season with sea salt and black pepper according to taste.
  • Serve the green pea hummus in a dipping bowl, form a small hole in the centre of the mixture and add a tablespoon of olive oil and lightly dust with chili powder.
